Ingredients |

1-2 level
teaspoons cornflour parsley
or thyme
sprigs to garnish 75g (3oz) button
mushrooms, sliced 150 ml (¼ pint) beef
stock 150 ml (¼ pint) red
wine 1 shallot or small onion,
finely chopped 1 clove
garlic, crushed 2 tablespoons freshly chopped thyme
or parsley 2 x 150 g (5 oz) Traditional Sirloin or Fillet
Steaks salt
and freshly ground black pepper 2 tablespoons olive
oil

Instructions |

Season the steaks
and place under a preheated hot grill for 3-4 minutes each side
(according to taste).
Heat the oil in a small pan and
gently fry the shallot or onion, garlic and thyme or parsley and
mushrooms for 2-3 minutes.
Add the stock and wine,
bring to the boil and simmer for 1-2 minutes.
Blend the
cornflour with a little water and stir into the sauce. Cook
for a further 1-2 minutes, stirring continually. Add seasoning
to taste.
Arrange the steaks on a warm dish and spoon
over the sauce. Garnish with parsley or thyme. Serve
immediately with a green salad or vegetables.
