- 1/4 c honey 1 3/4 c whole wheat pastry flour
- 1/4 c pure maple syrup 1/4 tsp nutmeg
- 2 eggs 1/2 c walnuts (optional)
- 1/2 c milk 1/2 c raisins (optional)
- 1 T molasses 1/2 c carob chips (optional)

- Cream together butter, honey, syrup, eggs, milk and molasses. Combine dry
- ingredients; stir into wet. Form dough into cookies and space on oiled cookie
- sheets. Bake at 350 degrees for 7-10 minutes. Tops will be brown when done.

- 1/4 c butter 1 c wheat germ
- 1/4 c molasses 1/2 c powdered dry milk
- 3/4 c honey 1/2 tsp baking powder
- 2 eggs 1 pinch salt
- 2 T vanilla 1/2 c chopped nuts

- Melt butter, molasses and honey together. Remove from heat. Add eggs and
- vanilla. Stir in the remaining ingredients until just moistened. Spread mix
- in oiled 8-inch square pan, and bake at 350 degrees, 25-30 minutes. Cool and
- cut into 2-inch squares.

- 3 eggs 1 T vanilla
- 1/4 c honey 1/4 c butter, melted
- 1/2 c pure maple syrup 2 c whole pecans
- 2 T molasses 1/4 tsp nutmeg
- 1 pinch salt 1 whole wheat pie crust bottom

- Beat eggs. Stir in honey, maple syrup, molasses, salt, vanilla and butter.
- Place pecans in 9-inch unbaked pie shell in layers, and sprinkle nutmeg on top.
- Pour liquid mixture over nuts. Bake at 350 degrees for 30-45 minutes. Nuts
- will rise to top and form crusty layer.

- Whole Wheat Double Pie Crust

- 3/4 c whole wheat pastry flour 1/2 c butter
- 3/4 c unbleached white flour 1/4 c apple juice

- Using knives, cut together flour and butter until butter is small marble-sized.
- Make a well, and quickly pour and cut in the juice.
-
- Move the dough to a floured surface and gently knead together for two minutes.
- Separate into two balls for the top and bottom crusts. Roll out with floured
- rolling pin. Place one on bottom and sides of 8 or 9-inch pie plate. Add pie
- filling and cover with top dough. Seal edges and prick top crust with fork so
- pie can breathe while cooking.

- Bake at 350 degrees, 35-60 minutes, depending on filling. Top crust will be
- browned and possibly bubbling at the fork holes when finished.

- Use one-half of this recipe for a one-crust pie.

- European Sour Cream Apple Pie

- CRUST: FILLING:
- 2/3 c butter 2 lbs green apples
- 1/4 c pure maple syrup
- 1/2 c cream cheese TOPPING:
- 1 egg 1/2 c sour cream
- 1 T orange rind 1/4 c pure maple syrup
- 1 tsp vanilla 2 T lemon juice
- 2 1/4 c unbleached flour 1/4 t nutmeg
- 1/2 tsp baking powder

- For the crust, blend together butter, maple syrup, cream cheese, egg, orange
- rind and vanilla. Add flour and baking powder. Roll out crust on a floured
- surface with a floured rolling pin. This dough is soft. Roll to 1/3-inch
- thickness. Fit or pat the dough into 7-inch pie plate.

- Cut apples into 1/8-inch slices and arrange in a circular pattern on dough in
- pie plate. Refrigerate 1/2 hour.

- Combine sour cream, maple syrup and lemon juice. Spoon over chilled apples.
- Sprinkle nutmeg on top. Bake at 350 degrees for 30 minutes.

- Lemon Meringue Pie

- FILLING: 1 pie crust bottom
- 5 T cornstarch
- 1 c sugar MERINGUE:
- 2 lemon rinds, grated 3 egg whites
- 1/2 c lemon juice 6 T sugar
- 1 T butter
- 3 egg yolks, well beaten
- 1 1/2 c boiling water

- Combine cornstarch and sugar in top of double boiler. Add grated lemon rind,
- lemon juice, butter and beaten egg yolks; mix well. Slowly add the boiling
- water. Cook on top of double boiler over hot water until thick. Let cool.
- Bake a 9-inch empty pie shell 10 minutes at 350 degrees. Let cool.

- Pour cooled lemon mixture into cooled pie crust.

- To make meringue, beat the egg whites until almost stiff. Add sugar a
- tablespoonful at a time while continuing to beat until stiff. Spread meringue
- on top of pie.

- Bake in slow oven at 300 degrees for 30 minutes. Tips of meringue will brown.

- Strawberry Jewels

- 1 c butter 1 c whole wheat pastry flour
- 2 pkgs (3 oz each) cream cheese, softened 1 c rolled oats
- 2 t vanilla 1 jar strawberry preserves or jam

- Cream together butter and cream cheese. Blend in vanilla. Add flour and stir
- in oats. Chill dough overnight.

- Roll out dough on lightly floured board to 1/4-inch thickness. Cut with 2-inch
- round cutter. Place on ungreased cookie sheets. Make an indentation on each
- cookie in its center with your thumb. Fill indentation on each cookie with a
- teaspoon of strawberry preserves.

- Bake at 350 degrees about 20 minutes or until golden brown.

- pour over apples. Sprinkle nutmeg on top. In a bowl, cut together honey,
- flour and butter. Spread over top of apples. Bake uncovered at 350 degrees
- for 30 minutes. Serve warm.

- Emily's Carrot Cake

- 2 c whole wheat pastry flour 1 c sunflower oil
- 2 tsp baking powder 4 eggs
- 1 1/2 tsp soda 2 c grated carrots
- 2 tsp nutmeg 1/2 c diced pineapple
- 1 pinch salt 1 T vanilla
- 1/2 c maple syrup 1 c nuts chopped
- 1/2 c honey 1 1/4 c Cream Cheese Frosting

- Combine dry ingredients; set aside. Combine syrup, honey, oil, eggs, carrots,
- pineapple, vanilla and nuts. In three additions, add dry ingredients to carrot
- mixture, mixing after each. Pour into 5 x 9-inch loaf pans or a 9 x 13-inch
- baking dish. Bake at 350 degrees for 35-40 minutes.

- Rum Almond Cake

- CAKE: FROSTING:
- 1 c carob chips 1/2 c carob chips
- 1 c butter 2 T rum
- 1/2 c rum 5 T butter
- 1/2 c honey 1/2 c sliced almonds
- 2 T maple syrup
- 1 T molasses
- 3 eggs
- 1/3 c chopped almonds
- 2 c whole wheat pastry flour
- 2 tsp baking powder

- Prepare cake batter by melting half the carob chips with the butter. Cream the
- melted mixture together with remaining chips, rum, butter, honey, maple syrup,
- molasses and eggs. Stir in almonds and flour. Beat in baking powder until
- well-mixed. Pour into an oiled 8-inch square cake pan. Bake at 325 degrees
- for 25 minutes. Cool before frosting.

- For the frosting, melt half the carob chips with half the butter. Blend in
- rum, remaining butter and remaining chips. Spread immediately onto cooled
- cake. The frosting will be a light brown with chips. Garnish with sliced
- almonds.

- 2 ounces Kahlua or other coffee liqueur 4 c hot coffee, organically grown
- 2 ounces Irish Whiskey 1/4 c whipping cream, whipped

- Pour one-half ounce coffee liqueur in each cup. Add one-half ounce Irish
- Whiskey to each cup. Pour in steaming freshly-brewed hot coffee and stir.
- Gently spoon two heaping tablespoonsful of whipped cream on top of each. Serve
- HOT.

- 1/2 c butter 1/2 tsp grated lemon rind
- 2 T molasses 1 t almond extract
- 2 eggs 1/2 c Amaretto
- 1 c ground toasted almonds 2 c whole wheat pastry flour

- Cream together butter and molasses. Add eggs, ground almonds, lemon rind and
- almond extract; mix well. Stir in Amaretto alternately with flour. Drop by

- Place sliced pears in 8-inch square baking dish; sprinkle with lemon juice. In
- a bowl, cut together the flour, honey and butter. Make a well in the flour
- mixture, add the egg and vanilla, and mix until mixture is crumbly. Sprinkle
- the crumb mix over the pears. Bake at 350 degrees for 30 minutes. Serve warm
- or cold.

- over low heat just until heated through; do NOT boil. Remove from heat and add
- brandy. Spoon warm topping over individual servings of ice cream.

- BATTER: FILLING:
- 2 1/4 c sugar 1 jar marshmallow fluff
- 1 c butter
- 4 eggs FROSTING:
- 1 c flour 6 T butter, softened
- 1 3/4 c cocoa 3 T milk
- 1/2 tsp salt 2 T cocoa
- 1 tsp baking powder 1 2/3 c powdered sugar
- 2 tsp vanilla

- Blend sugar, butter, eggs, flour, cocoa, salt, baking powder and vanilla. Pour
- into oiled 9 x 13-inch pan and bake at 325 degrees for 30 minutes. Cover top
- of cake with marshmallow fluff, and bake for 10 more minutes. Allow cake to
- cool.

- To make the frosting, mix soft butter with milk. Add cocoa and powdered sugar;
- beat until smooth. Frost cooled cake. Cut into squares.

- 18 c unbleached white flour 9 eggs
- 6 c sugar 4 T vanilla
- 7 T baking powder 2 1/4 c milk
- 3 T salt 1 1/2 c raisins, blueberries or
- 3 c butter boysenberries

- In a very large bowl, combine all the ingredients, mixing thoroughly. This is
- a heavy dough. Roll out to 1/2-inch thick. Cut the dough with a 4-inch round
- cutter. Place scones on lightly oiled cookie sheet.

- Bake at 350 degrees, 15-20 minutes. Tops are a golden brown when done. Serve
- warm with real butter, Lemon Curd, or Mock Devonshire Cream.

- 1 c chocolate chips 1 c unbleached white flour
- 1 c dark brown sugar, packed 1 tsp baking powder
- 1/3 c sunflower oil 1/4 tsp salt

- 1 1/2 tsp vanilla powdered sugar

- Melt chocolate. Combine with sugar and oil. Add the eggs one at a time,
- beating well. Stir in vanilla. In a separate bowl, combine flour, baking
- powder and salt. Add to chocolate mixture, stirring until blended. Add nuts.
- Chill overnight. Drop by teaspoonsful into bowl of powdered sugar, and roll
- until balls are coated with powdered sugar. Place on oiled cookie sheet. Bake
- at 350 degrees 10-12 minutes. Cool on rack.

- Peach Fruitcake

- 2 1/2 c whole wheat pastry flour 1 c chopped walnuts
- 1 1/4 c brown sugar, packed 1 1/2 c raisins
- 1 tsp baking soda 1 can (16 oz) peaches, drained, chopped
- 1 tsp cinnamon 1 can (14 oz) sweetened condensed milk
- 1/2 t ground cloves 1 can (10 oz) mincemeat
- 16 ounces mixed candied fruits 1/4 c apricot or peach brandy
- 8 ounces candied cherries

- In a large mixing bowl, combine flour, brown sugar, baking soda, cinnamon, and
- cloves. Stir in candied fruits, nuts and raisins. Add peaches, milk,
- mincemeat and brandy; mix well. Pour into oiled 5 x 9-inch loaf pans. Bake at
- 300 degrees for 2 hours or until done. Cool completely before removing from
- pans. Wrap in brandy-soaked cheesecloth; then wrap in aluminum foil.

- Grandma's Peach Pie

- 6 T butter, melted 1 graham cracker crust
- 1/3 c + 2 T butter 6 peaches, sliced
- 1 1/4 c sugar cinnamon

- Mix the melted butter, butter and sugar. Sprinkle half of the mixture in a 9-
- inch unbaked graham crust. Arrange sliced fresh peaches in the pie shell until
- crust is well-filled. Spread rest of sugar mixture on top of peaches.
- Sprinkle with cinnamon. Bake at 400 degrees until bubbly, about 20-30 minutes.

- Hot Fudge Sauce

- 2/3 c unsweetened cocoa 1 c granulated sugar, superfine
- 6 T butter or regular
- 1/2 c boiling water 2 T corn syrup

- In a saucepan, combine cocoa, butter and water. Heat for 3 minutes over medium
- heat, stirring constantly. If using regular granulated sugar, blend it in a
- blender for about 40 seconds to make it superfine. Add sugar and corn syrup to
- chocolate in saucepan. Simmer only 3-4 minutes, until thick. Serve over ice
- cream. It's even better reheated!

- Cherry Cream Cheese Pie

- 1 pkg (8 oz) cream cheese, softened 1 can (16 oz) red tart cherries,
- 1 1/3 c sweetened condensed milk pitted, chilled
- 1/4 c lemon juice 2 T sugar
- 1 tsp vanilla 2 tsp cornstarch
- 1 graham cracker crust, baked

- Whip cream cheese. Continue whipping while adding condensed milk; whip until
- smooth. Beat in lemon juice and vanilla. Turn into 9-inch baked graham
- cracker crust. Chill.

- Meanwhile, drain cherries and save the juice. In a saucepan, combine cherry
- juice, sugar and cornstarch. Cook until clear. Remove from heat and stir in
- drained cherries. Carefully spoon cherry mixture on top of chilled pie.
- Chill one hour more before serving.
