- A major cooling mechanism is radiative transfer. I believe that the
- rate of radiative cooling is proportional to some high power (like
- the fourth) of the temperature difference between the coffee and the
- ambient temperature of the room (this is why radiation dominates
- your experience of a warm object if the temperature difference is
- high). Of course, I've never studied coffee dynamics - so its main
- cooling mechanism may be convection or conduction. It these latter
- are sufficiently greater than the heat loss by radiation, then your
- comments of the heat conduction/capacity of coffee vs. coffee with
- cream may be valid.
