Executor is a very nice trick (emulates a 68LC040 in software), and it'll run in Linux and on NextStep as well as DOS (and under OS/2 VDMs as well). There are a large number of newer programs it doesn't run, since it was developed completely independently from APple's ROMs, and since its System 7.x support is very limited yet, but I've been able to run a fairly large number of programs here. An informal list is as follows (I don't make any guarantees that they work completely, but I've played with all of these to some extent over the past several months): Utilities: BBEdit Lite 3.0, Easy Errors 1.1, MacDOS 3.0, TexEdit 2.7.2, Speedometer 1.0, Speedometer 3.2.3, Stop The Madness 0.851, MacBreadBoard 1.1 Demo, Stuffit Expander 3.5.2, Globe 1.2, BinHex 5.0, NIH Image 1.55, LC Anim 1.5, NSCA Paledit 1.1, Desktop Textures Vol 1, Compact Pro 1.5, Disk Directory 0.9 Games: Backgammon Freeware, Hexmines, Risk, Monopoly 4.03a, Stratego 0.95, Shatterball 0.27, Glypha III 1.0.1 (with sound!), Lemmings Demo (with sound!), Darkwood 2.5, Danger Swamps (original), Brickles Plus 3.0, Mine 1.0, 1000 Miles, MacYahtzee, Lazilife 2.0c, Phraze Craze, MacGolf 1.0, Test of Minds, Reversi, Missle Command, MacPong IIa, Ingemar's Skiing Game 9.9u, Star Roids 7.0, PacMan, Minesweeper 1.3, Eric's Ultimate Solitaire, Shufflepuck. Works pretty well for me as a 1024x768x256 game platform, which is all I really use Executor for at this point in time. But others here do real work with it. Executor's requirements are somewhat user-configurable through the use of command-line switches, and it might depend to some extent on the version you're using (NextStep, Linux, DOS) and other factors.
