- An apple pudding from the Mid West.

- Graham Cracker Pudding

- 6 apples, medium 3 T butter
- 12 graham crackers 3 T lemon juice
- 1/2 c brown sugar or maple syrup 1 c water
- 1 c walnuts, chopped 1/4 t nutmeg

- Crush graham crackers to make fine crumbs. Mix crumbs with brown sugar and
- chopped walnuts; set aside.

- Peel, core and slice apples. Arrange in buttered 8-inch baking dish in
- alternate layers with crumb mixture. Dot top with butter and pour lemon juice
- and water over all. Sprinkle with nutmeg. Cover and bake in slow oven at 350
- degrees for about 30 minutes, until apples are cooked to a jelly.

- Serve hot or cold with cream or whipped cream.

- Spicy Fruit Muffins

- 2 c flour 2/3 c brown sugar or maple syrup
- 3 t baking powder 1/2 c chopped walnuts
- 1 tsp salt 2 eggs, beaten
- 1/8 tsp cloves 2/3 c apple juice
- 1/4 tsp nutmeg 1/4 c butter, melted
- 1 cup shredded, pared apple 1 c bran flakes

- Sift together flour, baking powder, salt and spices. Stir in apple, brown
- sugar and nuts. In a separate bowl, combine eggs, juice and butter. Stir into
- apple mixture just until blended. Fold in bran flakes. Pour into oiled muffin
- pans, filling each cup about 2/3 full. Bake at 400 degrees for 15-20 minutes.

- Grandma Dena's Very Chocolate Pudding

- 2 c milk 1/2 t salt
- 2 squares unsweetened chocolate 2 eggs, separated
- 1 1/2 T cornstarch 1/4 c sugar
- 1/4 c sugar 1 t vanilla extract

- Scald milk and chocolate in the top of a double boiler, stirring frequently to
- make it smooth. In a bowl, mix together cornstarch, sugar and salt. Slowly
- add chocolate mixture while stirring constantly. Return mixture to double
- boiler. Cook while continuing to stir until mixture thickens, then cover and
- cook 25 minutes stirring occasionally to keep smooth.

- Beat egg yolks with sugar. Pour chocolate mixture over them while beating
- constantly. Return to double boiler and cook 1 minute more. Let cool. Add
- vanilla and beat well. Beat egg whites until stiff and fold into chocolate
- mixture. Turn into individual bowls and chill thoroughly before serving.

- For Chocolate Pie, pour into 8-inch baked pie shell and chill.

- Custard Pie

- 2 eggs 1/2 t vanilla
- 1/3 c sugar 1 pie shell, unbaked
- 1/2 t salt 1/4 t cinnamon
- 2 c whole milk, scalded

- Beat eggs slightly. Add sugar and salt. Slowly stir in hot scalded milk. Add
- vanilla. Strain mixture into unbaked 8-inch pastry shell. Sprinkle top with
- cinnamon.

- Bake on lower shelf of hot (425 degree) oven for 25-30 minutes, or until
- custard is firm and knife blade comes out clean. Let cool at least 15 minutes
- before cutting. Serve warm or cold.

- This is a very moist, rich cake that you can serve frosted or unfrosted. It's
- great for packed lunches because it holds together so well.

- Chocolate Pudding Cake

- 2 oz unsweetened chocolate, melted 1/2 t salt
- 1 c sugar 1/2 t vanilla
- 1 1/4 c flour 1 1/4 c water
- 1/4 c salad oil 1 pkg (4 oz) instant chocolate
- 3/4 t baking soda pudding mix

- In a medium bowl, beat together chocolate, sugar, flour, oil, baking soda,
- salt, vanilla and water. Beat 2 minutes. Add instant pudding mix and beat
- only until well blended. Pour into lightly oiled 7 x 12-inch baking dish, and
- bake at 350 degrees for about 30-35 minutes. Let cool and frost, if desired.

- Chocolate Buttercream Frosting

- 1 square (1 oz) unsweetened chocolate, 2 c powdered sugar, sifted
- melted and cooled 3 T milk (as needed)
- 4 T butter, softened 1/2 t vanilla extract

- Beat chocolate and butter together until smooth. Continue beating and add 1 c
- sugar followed by 1 T milk, followed by more sugar and milk, until all sugar is
- blended in. Use only enough milk to make it good consistency for spreading.
- Beat in vanilla. Spread on cooled cake.

- Makes about 1 1/2 cups frosting

- Grandma's Spice Cake

- 3/4 c butter or shortening 1/4 t allspice
- 1 c brown sugar 1/4 t cinnamon
- 1 egg 2 c flour
- 1/2 c raisins 1 t baking soda
- 1/4 t salt 1 c sour milk
- 1/4 t cloves 2 t baking powder
- 1/4 t nutmeg

- Cream together butter, brown sugar and egg until light and fluffy. Stir in
- raisins, salt and spices. Add half the flour. Blend in baking soda and milk.
- Stir in remaining flour and baking powder.

- Pour batter into buttered 8-inch round layer pans or 7 x 12-inch baking dish.
- Bake in a moderate oven at 375 degrees for 25 minutes or until top springs back
- when touched. May be served plain or frosted; warm or cooled.

- Prune Coffee Cake

- 1 c prunes 1/2 c milk
- 2 c flour 1/3 c butter or shortening
- 3/4 c sugar 1 t cinnamon
- 3 t baking powder 2 T brown sugar
- 1/2 t salt 3 T butter, melted
- 1 egg

- Soak prunes in just enough warm water to cover; set aside.

- Mix and sift all dry ingredients. In a separate bowl, beat egg until light and
- fluffy. Stir in milk and melted butter. Gradually add this liquid to flour
- mixture and combine thoroughly. Turn into lightly oiled 8-inch square baking
- dish.

- Cut soaked prunes into pieces and press down into dough. Combine cinnamon,
- brown sugar and melted butter. Spread over prunes.

- Bake at 350 degrees for 30-40 minutes.
