- I%1 1/2, lb, whiting fillets
- I%3, lb, spinach, fresh
- I%1/2, cup, olive oil
- I%2, medium, cloves garlic, crushed
- I%1, large, onion, chopped
- I%2, T, parsley
- I%1/8, tsp, bay leaf
- I%1/8, tsp, thyme
- I%1, tsp, salt
- I%1, tsp, black pepper
- I%3/4, cup, bread crumbs
- I%1, large, lemon, wedged

- R% Wash spinach and remove the stems. Heat three tablespoons of olive
- R%oil in a saucepan and add spinach. Cook just until the spinach is
- R%limp. Drain spinach and chop finely.
- R% Add the garlic to the spinach and mix well.
- R% In a frying pan, heat three tablespoons of olive oil and saute the
- R%onion with the parsley, bay leaf, thyme, 1/4 tsp salt, and 1/4 tsp
- R%pepper.
- R% Add the spinach and mix well.
- R% Put a little more than half of the spinach mixture in the bottom of
- R%a large rectangular baking dish.
- R% Season the whiting fillets with the remaining salt and pepper.
- R% Add at least a tablespoon of the spinach mixture to each of the
- R%fillets and roll up tightly securing with a toothpick (if you have
- R%any spinach left just add it to what's in the baking dish).
- R% Place rolled up fillets in rows on the bed of spinach.
- R% Sprinkle with bread crumbs and the remaining two tablespoons of
- R%olive oil.
- R% Bake in a moderate oven at 375 degrees for 30 minutes.
