Prepare the glaze by mixing together the Japanese soy sauce and the ginger in a large bowl. If using fish, bone and slice into fillets. Cut the fillets into 3/4 inch cubes. If using beef it may be left whole or cut into strips. Place the meat in the glaze, coating the pieces evenly. Marinate them for at least 30 minutes.
