- My 3-year old walnut Chicago 8" chef knife is showing its age and I'm
- looking for a replacement. I like my current knife's balance, weight,
- and width. My complaints are:
-
- - the angular joint between the handle and blade is uncomfortable
- - the wooden handle deteriorates over time
- - the blade chips easily
-
- Any coments on the following topics or any recommendations for knife
- purchase are welcome.
-
- - comparison between the metropolitan and walnut handles on the Chicago
- - comments on the Henckel's tapered joint between handle and blade
- - comparison between the Henckel 4-star and professional models
- - comparison between the Chicago and Henckel brands
- - should I be looking at other models?
