It's trying to install the documentation for NeXT_AppleTalk. Where else?

Let it put the Docs there so the install will work. Then you can decide whether you want to leave it or not. It's only 99 KB or so, and all in the directory /NextLibrary/Documentation/AppleTalk. I have no idea whether the stuff is in /NextLibrary/Documentation on the CD, but you can certainly check and see.
