- Hmmm, come to think of it, my ex-supervisor's (she moved- nothing bad) husband
- started working on a GC/MS method at Patomac Spice Company to test the freshness
- of spices and related products. He told me that he had tartar sauce that had
- sat open for varied amounts of time, found what componet of taste went nasty and
- hpw much, so they could toss potentially bad batches, or have batches tested
- once shipped so when they get to the restraunt end someone won't say, "hmm,
- guess this is how it's supposed to taste- serve it up" quick and dirty (and yes,
- this goes beyond "why doesn't someone just taste it and find out?- they had
- some differeing taste-ers nationwide checking stuff and not agreeing. Now, it's
- all just numbers- no opinions. if there's x amount of nasty junk according to
- the assay, they won;t ship it and EVERYONE on the receiving end is happy)
