On the second menu, the Key button allows you to choose a key signature- all seven major and seven minor keys, in addition to C will display- just click on the one you want. The upper keys are major, the lower are minor. The position from the left indication the number of sharps or flats used for that key (leftmost is 1, rightmost is 7). The Bend button is used to insert a new note following the current note that will bend up a half step. The Capo button is used to transpose songs to different keys.
