- INGREDIENTS ------------------------------------------------------------

- 1 Tbsp Gelatine
- 1/4 cup Milk - cold
- 2 ea Egg yolks - beaten
- 1 ea Lemon - grated rind of
- 1 ea Baked pie shell
- 1 cup Cocoanut
- 2/3 cup Sugar
- 1/2 tsp Salt
- 1 cup Milk - scalded
- 1/2 cup Orange juice
- 2 ea Egg whites - beaten stiff
- 2 ea Oranges - grated rind of

- DIRECTIONS ------------------------------------------------------------

- Soften gelatine in cold milk, beat egg yolks, add sugar and salt
- gradually. Pour hot milk slowly over egg yolks, cook over hot water 5
- minutes. Remove from fire, pour over gelatine, and stir until
- dissolved. Chill until thick, add fruit juices and rind, mix well.
- Fold in beaten egg whites and chill. Pour into cooled baked pie shell.
- Run orange rind and cocoanut together and sprinkle on top of pie.
