Day 203 - 12 Jan 96 - Page 39

he does not have any such documentation, and nor do I. How
long was that documentation like that kept for? How long
did you keep it at Tolgate?
       A. We kept all of it. I was the Manager there four
months, so we would have kept it for at least, you know,
for the four months and beyond. I think the responsibility
is to keep it for years.

  Q. For years?
       A. For years, six years.

  Q. And that would be the manager's responsibility, would it?
       A. Yes.

  Q. To keep clock card files and adjustments audits reports?
       A. I mean, I am not sure on the breakdown, but -----

MS. STEEL: Did you ever check that the Managers were keeping
the clock card files and adjustment audit reports?
       A. In the Colchester High Street restaurant?

  Q. Yes.
       A. Yes.

  Q. You did?
       A. Yes.

  Q. And were they keeping them?
       A. No. I have already answered that.

  Q. Sorry?
       A. I said that I tried to instigate a decent system of
recording of clock card files in the restaurant and tried
to clarify with Ray where the responsibility lay, such that
the restaurant Manager, the shift Manager the night before
would ensure that they were put into the computer paper
folders and then the morning-after Manager would sign those
to verify that they were correct; and then the Store
Manager was supposed to -- I asked Ray after this incident
to sign all of them every week, take them and go through
them once a week and sign them all. That is my memory of
the situation. The administration of things like that in
the Colchester High Street restaurant was terrible.

  Q. Did you ever look in the loft at the Colchester store?
       A. I may have done. I may have gone up there on occasion.
I recall having gone up there to inventory paper stock
and to look at some equipment on a couple of occasions; and
of course I told Ray that I wanted him to get everything
out of the roof that was up there and get the stock booked
properly. But in terms of clock cards, I do not remember
having looked at any clock cards in the roof.

  Q. So, you do not know whether or not there were clock cards
       kept up there?
       A. No. I do not recall.

  Q. Or above the freezer room?
       A. No, I do not recall.
