Day 151 - 10 Jul 95 - Page 36
full-time?
A. I think, if my recollection is correct, we probably had
a slightly higher number of part-timers in Leicester, given
the fact that most restaurants can staff themselves with a
core number of full-timers, say 15 or so, and the busier
the restaurant is it is usually proportionately busier on
the evenings or weekends. So, therefore, perhaps the
busier the restaurant is, certainly in my experience, you
would perhaps find a slightly larger ratio of part-time,
certainly in terms of the part-time to evening.

Q. But Colchester would be fairly typical?
A. I think it was fairly typical, certainly.

Q. The ratio nationally is 20 per cent, 80 per cent.
A. OK. Sorry, that is now?

MR. JUSTICE BELL: Have we had evidence as to what it was at the
time?

MR. MORRIS: Do you know whether the ratio of full-time and
part-timers changed significantly over the last 10 years?
A. I have no knowledge of that.

Q. Has it remained roughly the same pattern?
A. I cannot say that, either.

Q. You do not know what is going on, then?
A. I do not know back in 1986, when I was a supervisor for
two restaurants, how that panned out in a group of 100.
I do not think I would be expected to know that.

Q. You are not aware of any development in the last 10 years
on that important operational matter of the ratio of
part-time and full-time staff?
A. I have never had it put as an important operational
ratio.

MR. JUSTICE BELL: I thought it was, because I thought it suited
the whole McDonald's system to have a large proportion of
part-time workers. That is why the 80 per cent has been
justified to me in the past.
A. But in terms of what it was at, say, Leicester, at 70
to 80 now, I have not been made aware that it was a
significant movement towards that additional 10 per cent.
I am aware that part-timers, certainly -----

MR. MORRIS: What I mean is, the position nationally or
throughout your region you have been responsible for. Are
you just unaware of whether the situation generally has
been roughly the same on the full-time/part-time ratio?
A. As I said before, my sort of main expertise in terms of
that is purely in the operation side of the business. As
regards the full to part-time percentages, I am certainly
aware of a ratio, which, as a manager, I think and recall
was about 70:30.

Q. At Leicester?
A. At Leicester.
