Day 132 - 07 Jun 95 - Page 24

       A. That is entirely what happens, and that may change
almost from year to year. I can remember having: "Let us
look at all our food shops" campaign. Similarly, local
authorities are now expected to conduct risk rating of
premises so that they concentrate their inspection time on
those premises which are perceived to have the greatest
risk either for food safety or health and safety. They
have tried to organise their inspection to target major
things of this, and to deal with the points that are being
       suggested.

MR. MORRIS: Do you know in your discussions with the Company,
McDonald's, your engagement by the Company soon after Jill
Barnes was appointed and before the Health and Safety
Executive report, we have heard from Mrs. Barnes -- this is
a long question -- that there were a substantial number of
Environmental Health Officers making various criticisms and
       suggestions to local McDonald's ---
       A. Yes.

  Q. -- stores ---
       A. Yes.

  Q. -- around the country, and this is one of the reasons that
       the HSE approach ----
       A. They wanted to look at the central systems, as
       I understand it.

  Q. -- yes, was taken up by them and also agreed to by
McDonald's. Do you know, do you have information, about
what those Environmental Health Officers were saying and
       proposing, criticising?
       A. Not specifically, no. I mean, from time to time issues
have been -- I have been asked for my opinion on various
issues. I cannot be specific about them. Normally, they
would be dealt with by one of the regional safety advisers,
as has been the one that you highlighted for me there.

  Q. But were you asked before the HSE investigation took place
to look at what the EHOs were saying and doing around the
country because obviously McDonald's must have that
       information somewhere?
       A. No. I was not specifically asked to do that. They
would only do that if they felt there was a problem, if
there was something that they could not cope with, if they
felt there was a need to reorganise or whatever.

  Q. Before the HSE report came out, or the investigation took
place, going on from what Mrs. Barnes said, did she talk to
you about this fact, of the regular contact they were
       having with the EHOs?
       A. Yes, she did.

  Q. She did?
       A. Yes.

MR. JUSTICE BELL: What are you trying to get at? Why not put
it straight to Mr. Purslow if you have a particular point
       on it?
