Day 072 - 12 Jan 95 - Page 65

       time?
       A. Yes.

MS. STEEL: Can Mr. Rampton avoid asking leading questions?

MR. RAMPTON: No, I am only rephrasing what he has already told
us. (To the witness): How many times do you think that
that has happened, not that somebody has grabbed a whole
lot so there is nothing you can do about it, but that
somebody has failed to spot that you have been running out
while you have been in charge?
       A. I would say approximately it would have happened three
or four times in a year.

  Q. When you have run out how quickly do you get replacements?
       A. If we can get them from other restaurants we can have
       them the same day.

  Q. If you have to get them from Finchley, what then?
       A. From our suppliers, they come from -----

  Q. They come direct from the suppliers?
       A. Yes -- up to two days.

  Q. Finally, on this sheet, Mr. Stump, you see at the bottom of
the page there is a date, October 1993. Do you see that in
brackets at the bottom of the page?
       A. Yes.

  Q. When you first arrived in the Chelsea restaurant on 1st
June 1993, was there a similar thing in place or not, a
       similar document?
       A. There was the previous version of the observation check
list. There have always been observation check lists since
I joined the company. It was just an earlier version of
       the observation check list.

  Q. You may have answered this in cross-examination, I cannot
remember. That is why I ask it again. See item 14, trash
walk carried out at least every 30 minutes following the
trash walk map. Has that or something like it appeared in
previous versions that you have seen or not?
       A. On the observation check list?

  Q. Yes.
       A. I cannot be sure whether it was on the observation
check list, but I know from my training as a manager I was
taught this about the trash walk, and I am not sure where
       the information was contained.

  Q. I understand. We will try to find some other person who
can. Then can you turn over the page at the back of the
document at question 4. What sort of answer would you
expect to get in order that the person should get a tick in
       answer to that question?
       A. I think they have to describe the fact that all rubbish
is collected, not just McDonald's rubbish; also that it
follows a set, a set area, and it also asks them about the
frequency of the trash walk, how often they happen.
I think that is the three main points.
