     2   Q.   -- per week.  The largest one is those that work between
     3        one and 10 hours, 32 per cent, which is a third of all
     4        staff.  From your experience, are a lot of people called in
     5        especially for Saturdays at McDonald's stores?  Saturday is
     6        a big day in the stores' sales?
     7        A.  Saturday is often one of the busiest days, yes.

     9   Q.   It is the busiest day?
    10        A.  Not in absolutely every restaurant but in lots, yes.

    12   Q.   In most?  It is not a trick question.
    13        A.  Yes, probably, yes.

    15   MR. JUSTICE BELL:  If it is in an office area it might very well
    16        not be, but if it is the average high street then you would
    17        expect it to be the busiest day, would you?
    18        A.  Yes.

    20   MR. MORRIS:  When you were at Croydon, do you remember, that is
    21        a busy high street store, yes ---
    22        A.  Yes.

    24   Q.   -- with a large turnover.  Do you remember which the
    25        scheduling for Saturdays was compared to other days?
    26        A.  Obviously, this was more than 15 years ago, but I think
    27        more people were scheduled on Saturdays, if that is
    28        helpful.  I would say that is probably right.

    30   MR. JUSTICE BELL:  May I just ask a question?  What is the
    31        shortest period of time that any significant number of
    32        people come in to?  I mean, do they come in for as short as
    33        two hours or if they came in just to do an evening, would
    34        that be at least four hours, for instance?
    35        A.  The minimum would normally be three or four hours.  The
    36        more standard shift is four hours, but if they are called
    37        in unexpectedly, it would be three hours, not less.

    39   Q.   So the minimum would normally be four hours, would it?
    40        A.  Yes.

    42   Q.   So that one-third it looks probably working either one or
    43        two days a week?
    44        A.  Yes.

    46   MR. MORRIS:  But when people come in on a Saturday, they largely
    47        do a full shift on Saturday?  Saturday is like the big day;
    48        you have a lot of people; people working the whole shift in
    49        order to make sure it is all covered?
    50        A.  I would say a common shift is five or six hours on a 
    51        Saturday.  There are also people who would work eight 
    52        hours.

    54   Q.   I make no secret of the fact that I was speaking to some of
    55        our witnesses last night, ex-managers and stuff, and it is
    56        about this incredible 32 per cent -- it is not incredible,
    57        it is just an unusual -- it sort of sticks out like a sore
    58        thumb.
