     3        but I do not think it is relevant to go any further than
     4        that, not looking at this for, I do not know, the umpteenth
     5        time.

     7   MR. MORRIS:  Is it fair say then compared to the average wage in
     8        industry?
     9        A.  Our industry?

    12        A.  I do not know what the average wage in industry is.  In
    13        our industry our people are well paid.

    15   Q.   Let us say for the sake of argument the average pay in
    16        industry is something like £250.  We can hear evidence on
    17        that at a later stage. It may be £300.  I do not know.
    18        Assuming it was, would you say that workers in
    19        catering -----

    21   MR. JUSTICE BELL:  Do not assume anything they know.  Do you
    22        think the catering industry is poorly paid for the person
    23        in a relatively modest job.

    26        A.  I do not know what other industries are paying.  I do
    27        not consider our workers are poorly paid.

    30        comparison with the industry from which I thought you meant
    31        the catering industry?
