and the allegations that were being made.

  Q. You did not have that knowledge at your fingertips already?
       A. Yes, but, as you will understand, and my record will
prove that, you can never, and I always have and it has
always been my mission to improve myself every single day
of my life, you can never know enough about food safety.
You can never know enough about the welfare of animals.
You can never know enough about quality. That is why
I have to use the consultant. That is why I used the
resources that were available for me. It would be
reluctant or it would be negligence on my part if I do not
       do that.

MR. JUSTICE BELL: Do you remember asking when you set about
drafting a form or before you did whether anything similar
had been done in the past or whether there was any existing
       form you could see?
       A. Yes, I do. I do remember them and there were some
records provided by me by Mr. Paul Simmonds when I asked
him more information about the welfare of animals. I did
see seem some of those documents that provided our policy,
and I was really after the policy and the concept and
interpretation in the different countries. So, I do recall
seeing some of those documents. I do happen to see some of
the -- I do happen to have some of those documents with me
in my briefcase, if you need to see them. It is one of
them that relates our position about the welfare of animals
       and the code of practice.

MR. RAMPTON: My Lord, I did not know that. May I have
permission to extract those documents from Dr. Gomez
       Gonzalez at the adjournment?

MR. JUSTICE BELL: It is up to Ms. Steel because it is her
cross-examination. Would you like to see those now?

MS. STEEL: Can I ask, the policy that you have in your
briefcase, is that the new policy that was introduced this
       year?
       A. I do not recall the date, to be honest. I do not even
know if it has a date.

MR. JUSTICE BELL: Let us take it in stages. My question,
although it may or may not have produced something useful
along another route, was whether, if we look at "Meat
Slaughter Practices", the form we have, when you set about
drawing that up, taking into account the Humane Slaughter
Act, the consultations you made, and so on, did you say to
Mr. Simmonds or anyone else: "I think we ought to have
something like this. Have we had anything like it before?"
       A. Like that?

  Q. Do you see what I am asking?
       A. OK. Similar to that type of form?

  Q. Yes.
       A. I do not know.

  Q. Or any system by which information was marshalled from
