Day 105 - 16 Mar 95 - Page 22

round coming from anywhere into the slaughterhouse but they
       do not.

  Q. Should the doors be kept closed then when there is not
actually physically someone going through them?
       A. That would help. It is not crucial, but I am saying
that for the hide room there is not a door, there is a
small opening which people could squeeze through but, in
fact, a trolley squeezes through it. Into the gut room,
the only access is from the outside, and in the fat room,
as I recall, there is a door into the fat room from the
slaughter area. It provides access if people used it, but
in the fat room no employees are, in fact, in there
because fat is taken off in the gut room and stored in the
       fat room.

  Q. Are you aware that MAFF, whilst being concerned about the
lack of chilled detained in condemned rooms, were also
concerned about other matters to do with the operation of
       the abattoir?
       A. Not directly. I was not consulted in relation to
discussions with MAFF, which tends to be a separate and
time consuming issue, and raises correspondence of
considerable volume. Thus, in general terms, I would
expect a whole list of requirements to be being worked on
at any particular time, but I have no direct knowledge of
the discussions with MAFF. That would be a separate issue
if a company chose to involve me in that.

  Q. You heard of a few bits and pieces did you -----
       A. Not even that, because I work on the assumption that
there are many bits and pieces at this stage in the
industry's history in discussions with MAFF.

  Q. Have you heard about the problems with over-crowding in the
       lairage?
       A. No, that has not been put to me. I have examined the
lairage myself, but it has not been put to me that MAFF
have worried about over-crowding. I am not saying they
have not said that; I am saying I have not been consulted.

  Q. I understand. Going on to the documents, in general, you
       have seen this file, yes?
       A. The file we have in front of us?

MR. JUSTICE BELL: It is the Jarrett bundle?
       A. Yes.

MR. MORRIS: Were these all the documents that were relevant
that you saw, or that you have seen, at Jarretts or are
       these a selection of them?
       A. As I understand it, Jarretts provided on request a
selection of the documents to demonstrate the sort of
controls they carry out. I have had closer inspection.

MR. JUSTICE BELL: Just pause a moment.

MR. MORRIS: This will go fairly slowly. I notice on documents
       H and I ---
       A. Yes, I have that.
