     7        you studied?
     8        A.  If you say "studied", do you mean in terms of
     9        laboratory work?

    12        in those terms you do not consider you have studied that.
    13        Which ones do you consider that you have studied?
    14        A.  I just know in general terms something about the
    15        epidemiology of the food poisoning organisms.

    18        E.coli and salmonella?
    19        A.  About various diseases including those, yes.

    21   Q.   Sorry.  Can you explain -- I am confused by what you have
    22        said -- what exactly is your area of expertise?
    23        A.  Environmental Health.

    25   Q.   So what does that encompass?  What does that have to do or
    26        what does that exactly include?
    27        A.  In this particular, relevant to this particular case,
    28        food hygiene, transmission of disease.

    31        different types of bacteria or, certainly, the ones that
    32        are fairly common?
    33        A.  Well, obviously, it is necessary to know about them
    34        but there is far too much to know everything in detail.

    37        to -- sorry, actually before I go on to that, would it be
    38        right to say that about 50 per cent of raw chickens in the
    39        UK are contaminated by Campylobacter?
    40        A.  I have no idea.
