1 we have 1,000 pieces of meat come in and within the day we
2 sell 500 sandwiches that bear that piece of meat, then we
3 should have 500 left in the stock room. Any difference is
4 waste that has been thrown away. So, within that there
5 will be a piece of meat that is dropped on the floor and
6 put in the bin, and we would account for that, count it up
7 in the waste, or the discrepancy between it would be if
8 someone had taken something.

11 A. Yes, so we need to monitor the two just for obvious
12 business control.

15 something is in the bin, it is not missing, is it? It is

19 it is missing in that you have got 2,000 beef patties come
20 in, you have got 1720 of them gone into Big Macs and so on,
21 two of them in each Big Mac and one in an ordinary burger

46 that are unaccounted for or the ones that are in the bin?
47 A. The ones that are unaccounted for are the missing ones,
48 but you have to count the ones in the bin to work out if
49 they are missing. You have two sets of hard figures. One
50 is what came into the restaurant, the second is what you
51 sold. You take one away from the other and leaves you with
52 that which you have used.
