Day 094 - 01 Mar 95 - Page 66

Q. For 15 seconds?
A. Yes.

Q. So, is that the temperature that McDonald's cook them at
now?
A. That is correct.

Q. That is the law in America, is it?
A. It is that is correct.

MR. MORRIS: So you cook your burgers at 155 degrees Fahrenheit
for 15 seconds?
A. For a longer period of time.

Q. Yes. Your actual timings are what?
A. It exceeds that.

Q. The cooking time.
A. The length?

Q. Well, I mean, we have gone into this in this country in
detail.

MR. JUSTICE BELL: Do you know whether McDonald's has a
specified time for cooking -- do you have 10 to a pound and
quarter pounders in the States the same as this country?
That is universal, is it?
A. It is very close, yes.

Q. Is there a recommended minimum temperature for the minimum
time for cooking that you know?

MR. MORRIS: For the 10 to a pound?
A. For any burger it is the same. It is 155 degrees. We
exceed at some point during the cooking of the patty, a
short period of time it exceeds, highly exceeds that
temperature.

MR. JUSTICE BELL: But do you know what they are? If you do not
then say so?
A. OK. In this country I do not.

Q. Not in this country, the UK. All I am enquiring about is
whether you know of a McDonald's standard to cook the 10 to
a pound patties for a minimum of X seconds at a minimum of
X degrees Fahrenheit?
A. We do. Our specifications require that we cook the
quarter pounder to a 155 degrees after. After one minute
from that is taken from the grill.

Q. But you cook it at that temperature for one minute?
A. No, sir. I guess I did not explain myself very well.
We cook it to a -- the way we check the temperature is one
minute after we take it from the grill. One minute 50
seconds later we check the temperature. That temperature
should be 155 degrees.

MR. MORRIS: This is the quarter pounder. Is that the same for
the 10-1 or is it different?
