9 MR. JUSTICE BELL: Just tell me what you think it is getting

12 MR. MORRIS: You can put the question. It strikes me that if
13 something is already well known, representative, you would
14 not have to quote many studies; is that correct?
15 A. That is right.

17 Q. But if a study concluded something that was not
18 representative of what you felt the general view was,
19 would that be of significance?
20 A. We are talking in abstract terms and I cannot
21 really----

23 MR. MORRIS: Maybe we will leave it.
24 A. I think the point I would like to make about this, a
25 general point about studies too, is that they do not
26 provide total conclusive proof because that is a council
27 of perfection. Just one degree less than total conclusive
28 proof gives those people who do not want to see our diets
29 changed for any particular reason, for economic reasons,
30 or whatever, enough scope, given the right marketing
31 agents, to confuse people; and in this country that is
32 what we have seen over the past decade, or so; a
33 deliberate policy to needlessly confuse people about what
34 is or is not a healthier way of eating. I believe that
35 much good could be done and many lives could be saved by
36 acting now to change our diets rather than waiting for
37 conclusive proof, which ultimately science cannot deliver.

39 MR. MORRIS: Is that because you are concerned about human
40 health?
41 A. Absolutely. My father died from coronary heart
42 disease; my mother died from breast cancer. I am
43 desperately concerned about these matters.
