Day 197 - 07 Dec 95 - Page 51

     crew members?
     A. Yes.

Q. Do you agree that on the whole full-timers, because they
have advanced further on PRs, cost more than occasional
     part-timers?
     A. It depends on the age of the full-timer.

Q. Yes, probably, but if they are both of the same age,
whether it be under 18 or over 18?
     A. If they are both of the same age, then the full-timer
     would be more expensive.

Q. Yes. Now please look at page 30. This is a performance
review of you by Mr. Mark Davis whom you say pressurised
you, indeed, encouraged you to cut corners in order to
meet your labour and food cost targets, is that right, is
it not? Look at the top of the page under "Sales,
includes", and this is printed, "scheduling that does not
restrict sales building" and Mr. Davis has written:
"Generally OK. Half term holidays need attention". That
means, does it not, that you did not have enough people in
the restaurant at the half term holidays?
     A. It could mean, that, yes, or it -----

Q. That is what it does mean, does it not?
     A. It could mean that, I do not know. Looking on that
and he actually has said "recently improved" underneath, I
     think that should -----

Q. No, that is for adequate crew size. It is a different
entry. "Adequate crew size recently improved". Mr. Davis
was anxious, was he not, Mr. Coton, that your crew size
was not large enough until recently? Is that right?
     A. If you look at all reviews, that is a recurring
problem with everything because what actually happened
with these is a lot of it is a cosmetic exercise. The
reality between what goes on these and what actually
happens on the floor is sometimes totally different. You
will be told to do one thing and expected to do another.

Q. So if you turn to page 31 at the bottom of the page -----

MR. MORRIS: Was it made clear that this review actually covers
the whole year previously to November 1987?

MR. JUSTICE BELL: Well -----

MR. MORRIS: It says so on page 28.

MR. RAMPTON: There will be lots more, Mr. Morris.

MR. JUSTICE BELL: Do not bother.

MR. RAMPTON: Lots more, Mr. Morris will be pleased to hear,
when Mr. Mark Davies was not Manager. If you turn to
page 31, Mr. Coton, at the bottom of the page under
"People", No. 4, and then look at "Turnover", Mr. Davis
comments that you have too high a turnover. Reduction in
turnover costs money, does it not?
