MISS STEEL: I will read out the relevant section. It was a
3 section on page 8 about dietary fibre being particularly
important because it helps add bulk to the diet and,
4 therefore, helps prevent constipation. The section on
page 9 about total fats, saturated fats and cholesterol in
5 the diet are all thought to be linked to the incidence of
coronary heart disease, but the importance of dietary
6 cholesterol has been largely discounted:
7 "The effect of the total amount of fats, particularly
saturated fats, on increasing blood cholesterol is
8 generally believed to be important. Hence, current
advice is to reduce the total intake of fat in the diet
9 but also to replace some of the saturated fats with
unsaturated fats."

On page 10: "Excessive intake of sodium is thought to be
11 related to high blood pressure, hypertension in some
people". The most important section on page 12:

"In recent years, doctors and nutritionists have also
13 become aware of other important factors in healthy eating.
There is a considerable amount of evidence to suggest that
14 many of the diseases which are more common in the western,
affluent world - diseases such as obesity, diabetes, high
15 blood pressure, heart disease, stroke and some forms of
cancer are related to diet. The typical western diet is
16 relatively low in dietary fibre, roughage and high in fat,
salt and sugar".

MR. JUSTICE BELL: Yes. I remember the general drift of it,
18 but if you were asking Mr. Preston about diet and cancer,
it was that bit I needed to be reminded of. I needed to
19 know what he was being asked, if he still agreed with it.
20 MISS STEEL: Would you publish the last part that I read out
again?
21 A. I would publish the book in its entirety. I would not
attempt to take out sentences, phrases. I would have gone
22 on to publish that which you just read:
23 "Many countries have therefore published 'Dietary
Guidelines' - general recommendations concerning diet
24 which are aimed at the whole population in order to
prevent these diseases and to promote good health. These
25 recommendations suggest that on average people should eat
more foods rich in dietary fibre (cereal foods, vegetables
26 and fruit) and less of the foods rich in fat, sugar and
salt (sodium)". I have no problem with that; that is a
27 general statement.
28 Q. You have no problem with printing again the paragraph that
I read out? You have no problem with printing that as long
29 as it is in its entirety?
A. I would have a problem printing it in isolation
30 without the other material surrounding it, yes. I would
not print it on its own. I would have to print the whole
