Day 180 - 31 Oct 95 - Page 30

  Q. You have said in your statement that if a 60 per cent
labour turnover figure at McDonald's is accepted, this is
double the industry average; and if, as it is the case, it
was 195 per cent at one stage in the winter of 1989/90, do
you have anything further to say about that?
       A. Yes, I do. McDonald's has got high labour turnover,
much higher than the industry average. Secondly, I think
that any reasonable commentator would agree that, in part,
this is due to the age profile and, if you like, the career
       profile of the workforce.

MR. JUSTICE BELL: Just pause a moment. (Pause)
       A. But I say "in part", because what I was trying to get
to with regard to the table is that if you strip out like
the youth factor which is there, if you can strip out the
youth factor, then, arguably, from this table, there are
many other reasons to do with the satisfaction issue which
also seemed to be relevant to the high labour turnover.

MR. JUSTICE BELL: Pause there, please.

  MR. MORRIS: Maybe -----

MR. JUSTICE BELL: Just pause a moment, please. (Pause)

THE WITNESS: If I may add -----

MR. JUSTICE BELL: No. I would like you to pause, because it
is important that I get that answer down, or it may be
       important.

  THE WITNESS: Sorry.

MR. JUSTICE BELL: Yes. You were going to add something,
       Mr. Pearson?
       A. Yes.

  Q. The note I have just made is that: "Firstly, McDonald's has
a level of labour turnover, much higher than the industry
average; secondly, in part, that is due to age profile, if
you like, the career profile of the workforce". But you
say: "In part, because if you strip out the youth factor
then, arguably, on this table, there are many reasons to do
with the satisfaction issue which also seemed to be
relevant to the high labour turnover." Then you were going
to add something, but I stopped you because I wanted to
       complete my note.
       A. Thank you, my Lord. Yes.

  Q. Does that prompt you to remember what you -----
       A. It does, actually, yes. I mean, just two points:
number 1 -- and I trust the -- no, this is my opinion.
Number 1 is that this survey -----

MR. MORRIS: The one in this book?
       A. Sorry, yes. This survey, the results of which are in
       the table.

  MR. JUSTICE BELL: Which survey?
