  Q. The last sentence in that paragraph.

MR. JUSTICE BELL: The last sentence of the same paragraph:
"You need to cut down on the excessive and unnecessary
       shouting in the front counter"?
       A. OK. I am with you now, sorry.

  Q. Yes.

MS. STEEL: That is the shouting back to the people who were
doing the cooking to tell them what is needed and things
       like that, is it?
       A. Yes, maybe calling to the fry person to ask for
portions of fries to be ready. We used to have a procedure
where, in order for the person on fries to keep up with
customer demand, you get all the crew to call for it. What
would sometimes happen is with, perhaps, 10 or 12 tills
operating, people would have to shout to get -- to be
heard, and we simply scrapped that system and reverted to
another system whereby it becomes the responsibility of the
Manager at the front to ensure that the fry person
anticipates demand, and you can cut out that sort of
unnecessary, if you like, communication and shouting, yes.

  Q. The two paragraphs below, there are just a couple of
sentences: "The basics such as time cards and holding time
usage, care of raw products and enough lettuce on Macs are
not in place. Both stores have been caught abusing shelf
life". Is that a common problem throughout stores, or is
       it something that is -----
       A. Every store faces a common problem of, a common issue,
of ensuring that they order the correct amount of stock in
relation to their volume, but I do not believe it is a
problem in every restaurant. Some time in every restaurant
stock will go out of date, and everybody knows what to do.
You throw it out. I am sure that will have occurred in
every restaurant in the Company at some time or other, but
I guess it can be a get a bit excessive and costly. I do
recall the mistake -- I have just recalled the mistake --
in Clacton, in fact, and that was a bag of onions which was
one day out of date in the walk in which I do not consider
       a particularly serious matter.

So, for Colchester it was a particularly bad problem.
I once threw something like 11 bags of lettuce at a cost of
about a fiver a bag in the bin, having been into the
chiller, which is a considerable amount of unnecessary
waste. The occasion that I talked about with Sally, when
I went out the back -- excuse me, sorry, am I? Sorry, I am
getting ...... Is it not necessary?

  MS. STEEL: I am listening.

MR. JUSTICE BELL: At three minutes to four on a Friday
afternoon, I would keep it as short as you can, quite
frankly. Ms. Steel can ask you a further question if she
       wants to.

MR. MORRIS: It is just that a general question was asked and
