Q. You do not know how long the stun lasts?
A. No, I do not.

Q. Dr. Gregory said that when he made the visit although he
did not measure the time from stunning until neck cut, he
estimated that it was about 20 seconds. Would that be
correct?
A. No, it is less than that.

Q. Would it have been correct at that time?
A. I would have thought, no, I cannot see it would have
been. I think it would be less.

Q. So are you not sure it could have been 20 seconds?
A. It is certainly around five to 10 seconds now.
I cannot really see why it should have been any different
unless he was talking about the old system.

Q. On the old system it would have been 20 seconds?
A. It would have been slightly longer on the old system.

Q. Up to 20 seconds?
A. Possibly.

Q. You said that you aim for a minimum of 90 seconds between
cut and scald, so on some occasions it would be less than
that?
A. No, it could not be less than that.

Q. You used the word "aim" that was all.
A. OK. Well, it could not be less than that.

Q. How long has that been the case?
A. For a long time.

Q. Since you introduced the new equipment?
A. No, before that.

Q. What about prior to the previous equipment, that was 1990,
you said it changed?
A. No. There are certain things that you cannot change
because of the requirement for bleeding, and usually that
was about, as I say, a minimum of 90 seconds but usually
just over a minute.

MR. JUSTICE BELL: That does not sound very consistent, a
minimum of 90 seconds but usually just over a minute?
A. Sorry, I was thinking of minutes. Sixty seconds, one
and a half minutes, I am sorry, 90 seconds is one and a
quarter -- no, one and a half ----

Q. Not on my watch! Just think again.
A. What I mean is one and a half minutes minimum to two
minutes maximum. The legal requirement anyway is 90
seconds.

MS. STEEL: Is poultry equipment something that is sold as a
standards lot or is it something you specify to order?
A. Some of the equipment is standard, but individual
