14 A. Beef: 59,751,272 pounds, equivalent to 331,951 head of
15 cattle, equivalent to 6,915 head per week. The total UK
16 beef kill is 3,120,000. Of our beef usage 76.9 per cent
17 last year was of UK origin, therefore, 76 per cent of the
18 total UK kill is 255,270 head or 8.1 per cent of the total
19 beef slaughterings in the United Kingdom.

21 MS. STEEL: When you say 8.1 per cent, is that the beef used by
22 McKey's or is that the beef used by McDonald's in the end?
23 A. That is for McDonald's.

29 A. Yes, sir. There is something else -- I must explain
30 this to you -- to get the number of cattle killed, you must
31 understand that we only use the forequarter and the hind
32 quarter flank.

35 A. To get the number of forequarters and the number of
36 hindquarter flanks we require you need that number of
37 cattle.

39 Q. With the pigs, do you use all the meat from a pig or just
40 certain parts?
41 A. No, by coincidence, it is very, very similar. You use
42 the complete fore-end of the pig and the belly of the pig.

46 A. Yes, sir, but the sausage is not the traditional
47 English sausage. It is shaped like a beef burger. It is
48 round and flat. It is not a sausage in a skin.
