  Q. What standards for?
       A. Business and Technicians Education Council.

  Q. Then did you go straight from finishing college to Midland
       Meat Packers?
       A. It was a part-time course that I was doing.

MR. JUSTICE BELL: You went to Midland Meat Packers after
A levels and did your course while you were there, did you?
       A. That is right, yes.

MR. RAMPTON: How long have you held your post as Quality
       Assurance Manager?
       A. With that title, five or six years.

  Q. If I may say so, please do not be offended, you do not look
       very old?
       A. Thank you very much.

  Q. How old are you?
       A. I will be 30 very soon.

  Q. Broadly speaking -- there is no need to go into detail at
the moment because we will learn the detail as we go
through your evidence -- what are your responsibilities at
Midland Meat as Quality Assurance Manager?
       A. Really, to ensure that all customer requirements and
statutory regulations within my scope are met and
       fulfilled.

  Q. Does that include what I might call the food safety aspects
       of meat?
       A. Yes, it certainly does, yes.

  Q. Does it extend to any considerations of animal welfare for
the animals while they are still alive?
       A. To a limited degree, yes, from when they enter our
       premises.

  Q. From when they enter your premises?
       A. Yes.

  Q. We will go through that process in a moment. Precisely
what types of cattle does Midland Meat slaughter and
       process?
       A. All type of cattle, basically -- cows, heifers, steers
       and bulls.

  Q. As you know, or I expect you know, McKeys have a
specification which forbids, for example ------

MR. MORRIS: Is this a leading question?

  MS. STEEL: This is leading.

MR. RAMPTON: No, it is all in the documents. We can look and
       see -----

MS. STEEL: I think you should ask the witness rather than lead.
