Day 169 - 04 Oct 95 - Page 20

  Q. You said yesterday that if there was a problem with the
grills tripping out, or whatever, then the food that was
being cooked on them would be thrown away; is that right?
       A. That is correct.

  Q. That is not what you say in your statement, is it, on page
11 of your statement, or is it different for the chicken
vats, or was that the same? Did you throw away all the
products from the chicken vats that -----
       A. If you had been cooking on a grill and if come, for
instance, the meat had reached the end of its cooking
cycle, you are removing the meat from the grill and the
grill tripped out, you would still apply the same rules you
would do normally; you would ensure that that product had
reached the correct temperature by using the normal visual
checks and, if necessary, you would do on internal probe.
But if something was half through its cooking cycle or
even, like, 97 per cent of the way through its cooking
cycle, you would still discard it.

If you took a bag of chicken out of the vat and as you took
it out of the vat you noticed all the lights going off and
the HVAC failing, and the vat going down, you test that
chicken. You would ensure the chicken was fit to serve and
then you would serve it, but if you are still cooking it,
       then you would discard it.

  Q. You test it by sticking an internal probe into it?
       A. That is right.

  Q. In which case you would not be able to serve it afterwards?
       A. No, that is right.

  Q. You might just as well have thrown it all away?
       A. No, but -----

MR. JUSTICE BELL: Hang on. How many are there -----
       A. There are 40 to 45 pieces of chicken in a -----

MR. JUSTICE BELL: Just listen to me when I am talking, please.
       A. Sorry.

  Q. If there were 40 to 45 pieces of chicken which you had
taken out of a vat as the vat appeared to go off, how many
       of them would you probe?
       A. You would probe maybe two.

MS. STEEL: Then you assume that if they are cooked all the rest
       will be?
       A. As they are all in the same basket and they are all
covered by the same shortening and the vat is at the same
       temperature equally across, then yes.

  Q. Is that the case for the burgers on the grills as well?
       A. What do you mean, when you -----

  Q. If you had 12 on a grill would you check one or two of
       them?
       A. You would check the four corner pieces.
