1 how busy the stores are and the type of store it is, but
2 certainly when it is busy you would want people on the
3 station that are best at it,. It just makes sense from a
4 business stand point. Whereas, when it is quieter, you
5 would probably rotate them and train them on the new
6 stations and build up their skill.

8 Q. But they would be expected to learn how to do several
9 stations within a few weeks of starting?
10 A. It depends on how many hours they are working.
11 I cannot remember the exact length of time for the training
12 programme, but certainly somebody who is working 35 hours a
13 week you would expect them to complete all the stations,
14 have passed their observation check list, have been able to
15 demonstrate competency a lot quicker than somebody doing 20
16 hours a week or maybe a student who is only doing one shift
17 a week. It really is whatever is right for them, depending
18 on how many hours they are working and when they are
19 working.

21 Q. Roughly how long does it take for someone working 35 hours
22 a week to be competent, or to complete all the stations,
23 and pass their observation check list?
24 A. There is a set time that we advise, but I cannot
25 remember what it is, I am afraid. It is not my area of
26 expertise.

28 Q. Could I just ask about in the Crew Handbook, which I can
29 either read or you can get it, if you want,. It is pink
30 volume XI, page 164, tab 3 at 1C. It says:

32 "Provide, where appropriate, training, instruction,
33 information and supervision in respect of employees at all
34 levels to enable them to work safely and to carry out their
35 health and safety responsibilities efficiently". What does
36 "where appropriate" mean?
37 A. Well, I would interpret it as meaning, that the
38 training that you would give a Restaurant Manager, it is
39 not necessarily the training you would give a crew member,
40 so the training is appropriate; the instruction is
41 appropriate and so forth.

43 Q. Is it not appropriate, in all circumstances, to have all
44 employees, train so they can work safely, carry out health
45 and safety responsibilities efficiently?
46 A. I would agree with that. Are you saying there is a
47 different way you can read the statement, in terms of, are
48 you saying -----

50 Q. It is "where appropriate", not "to an appropriate level"?
51 A. OK. I think it is just in the wording of the statement
52 because it is almost taken exactly from the Health and
53 Safety at Work Act, in terms of our legal obligations to
54 provide that information, instruction, training and
55 supervision. That is a legal obligation that is laid out
56 in there. This seems to be taken almost straight from
57 that, with a few extra words added in.
