     3   MR. MORRIS:  Yes.  In the requirements under bone inspection,
     4        what is the "no floor product"?
     5        A.  That just means that no product that has been on the
     6        floor is allowed to go back into bins of meat that we would
     7        sell to a customer.

     9   Q.   So when it says "fail" in that line, someone has done that,
    10        have they?
    11        A.  They may -- the auditor as he goes around doing his
    12        checks may have seen somebody pick up meat and put it in a
    13        bin, in which case that would be brought to the attention
    14        of the supervisor and the particular issue would be dealt
    15        with.

    17   Q.   Over the page, when it has reason for failed audit for that
    18        day, it does not mention those.  So, no action was taken on
    19        that day?
    20        A.  Well, I would imagine the action was taken; it is just
    21        not recorded.

    23   Q.   The "binning" line on that previous page, "clean sanitized
    24        bins" failed all day.  Somebody was not cleaning the bins;
    25        is that correct?
    26        A.  They obviously had a particular problem with the bin
    27        cleaning that day.

    29   Q.   But on the next page no action was taken -----
    30        A.  The action has been taken on the previous -- it is
    31        shown on the previous.

    33   Q.   What was the action that was taken?
    34        A.  Well, it is signed by the production department that
    35        action has been taken to remedy that.

    37   Q.   It does not say that action was taken.  It just says that
    38        it has been noted.  The next page after that is headed
    39        "Butchery".  It says under "box room", "ambient
    40        temperature", is that minus one to minus four degrees?
    41        A.  Minus one to minus four, yes.

    43   Q.   In fact, the temperature written down was three degrees and
    44        two degrees?
    45        A.  I cannot explain that.  I cannot imagine why the "box
    46        room" should have to be at minus one to minus four.

    48   Q.   When it goes further down, about the middle of the page, on
    49        the left-hand side it says "product temperature"?
    50        A.  Yes.

    52   Q.   What state of process is that? 
    53        A.  Well, what it says is that for whole birds, saddles,
    54        thighs and drum sticks, in other words, that is all the
    55        work in progress in that department, should be between 0
    56        and 4 degrees.
