Day 133 - 12 Jun 95 - Page 49
MR. MORRIS: If we just look at the back page of G2, I do not
know where that would be in your -----

MR. JUSTICE BELL: The last before H, Survey of Catering Wages.

THE WITNESS: Yes, I have it.

MR. MORRIS: There is no information there, is there, which
suggests that the rates quoted for other organisations are
not basic starting rates -----

MR. JUSTICE BELL: It says: "The following starting rates of
pay are quoted". It says they are starting rates.

MR. MORRIS: Sorry?

MR. JUSTICE BELL: Your point is made for you by the express
wording. Do you see?

MR. MORRIS: Yes. I thought the witness had said before that
they were averages or something.

MR. RAMPTON: No, that was the earlier one.

MR. JUSTICE BELL: That was on the other one, G1.

MR. MORRIS: OK. (To the witness): Of course, McDonald's
employ in any case a third of their staff being under 18,
are they not?
A. Yes.

Q. So the bottom rate would be 2.65 for a third of your store
in any case?
A. In the areas where we paid an under 18 rate, because
there are areas in Outer and Inner London where we did not
-- well, we do not at this point. So, it is not actually
a third of the workforce. I do not have the figures but it
would not be a third.

Q. I think we can leave that subject. While we are on the
subject, I suppose you compared McDonald's wages, hourly
wages, bearing in mind that the average hourly figure,
something like that, for McDonald's is about 20 hours?
A. Yes.

Q. You compared the hourly rates with other catering and
retail industries. Did you compare or have you compared
with other industries, apart from retail and catering?
A. Not that I know of. I am not sure which ones you might
be meaning, but not that I am aware of. What sorts of
examples?

Q. Construction workers, Civil Servants?
A. No.

Q. Manufacturing?
A. No, not any of those categories. I do not believe we
would have seen that as being relevant or related
employment, so no.
