4 A. Yes. There was no file in the OVS's offices at the
5 time for temperature records for carcasses, so I opened a
6 new file and put those -- I designed a form where these
7 temperatures were put and -----

9 MR. JUSTICE BELL: How many conversations did you have with
10 Mr. Stuart and Mr. Bob Jarrett?
11 A. I had several conversations with them.

13 Q. On different days?
14 A. On different days and on the factory floor as well
15 when they were actually present when I was measuring the
16 temperatures, and they admitted that the temperatures were
17 very high. Like I mentioned yesterday, we had a very
18 co-operative meeting with both Stuart and Bob Jarrett the
19 day before I was dismissed about the carcass temperatures.
20 They understood my concern about them and we made, both
21 sides made, several suggestions of how this could be
22 alleviated.

24 I gave them two weeks time to come down with the carcass
25 temperatures, subject to a reservation that the carcasses
26 would not be loaded in the trucks at 16, 15, 16 as they
27 were. I was prepared to accept temperatures that were
28 above 7, but not that high.

30 I had consulted with research workers in the Bristol Meat
31 Hygiene Research Institute in Langford. They said that
32 there was scope for some sort of judgment as far as the
33 temperatures were concerned, but 15 or 16 were definitely
34 too high.

36 I also had to take into consideration in these situations
37 that I am actually responsible for that load. When an
38 inspector at the other end opens a truck and finds
39 carcasses at high temperatures -- because it is very
40 unlikely that carcass temperatures go down during the
41 transport -- I am held fully responsible for those.

43 MR. JUSTICE BELL: Is there, Mr. Rampton, any earlier equivalent
44 of page 102 or page 103? When I say "earlier" I mean the
45 checking into the boning hall.
