Day 104 - 15 Mar 95 - Page 23

supervisor's general assessment of the situation, and he
has clearly called back the contractors to put right
       whatever faults he finds.

  Q. You see against "Loading Bays" somebody has written "still"
       something "very untidy"?
       A. Yes, "still very untidy".

  Q. Is that something that would require action or not?
       A. Yes, from a production efficiency point of view.

  Q. Let us focus, if we may, on human safety, food safety,
       I mean?
       A. Yes.

  Q. What, if any, implications does the tidyness or otherwise
of the loading bay have for human safety, food safety, or
       might it have?
       A. Very little, because the meat on this particular
loading bay is sealed and wrapped in boxes, so untidyness
is not a food safety matter.

  Q. What about the problem of vermin nesting in old boxes of
cardboard or polythene, is that problem?
       A. I would not describe that type of situation as
untidyness, no. I would describe it as gross dirtyness and
       lack of attention to ------

  Q. Do Jarretts have any sort pest control procedures or not?
       A. They employ a pest control contractor on what is known
as a special reporting service, that is to say, they come
in once a month or once every three months, whatever the
agreed contract is, to examine all their dating points, all
       the pest control procedures.

  Q. Let us move on as fast as we can now -- I am not going to
go through all of these documents by any means -- to 28th
March 1993, just before Ms. Hovi arrived at the premises.
Page 18. This again is the half hourly on line quality
control checks. Just glance down the temperature column,
       Mr. Bennett, please?
       A. Yes.

  Q. And over the page we get some hindquarters at the end of
that sheet. Do those temperatures -- they are ticked as
being satisfactory, do you agree with?
       A. They are certainly satisfactory at the temperature
       shown.

  Q. Then the next one is the process control sheet, page 20.
There do not seem to be any dissatisfactions noted on that
       sheet, do there?
       A. There do not.

  Q. Then the next one again a check on visible contaminants,
page 21 -- my Lord, may be there is a muddle in the
paging. The pages are, I am afraid, out at lunch, is all I
can say. I have done the best I can to reorder my own ones
but if there is an error in the order -----
