manual tracking; and, again, if I was, I suppose, to go
along that and add it all up, I could come up with a
percentage figure. But I do not believe anything is that
ready available by which I could type in "5p pay rise?" and
then it would give me a percentage.

MISS STEEL: Is that a standardised chart, the manual tracking
thing, which people then fill in?
A. I think so, certainly, yes.

Q. Whose responsibility would it be to fill that in?
A. The ultimate responsibility, I guess, would be the
restaurant manager, but some of them do employ admin
assistants or assist managers to do that, depending on
whose responsibility it may well be.

Q. Would it be a responsibility of an area supervisor to check
up that it was being done, or is that just something that
is left entirely up to the managers?
A. To check that it has been completed, certainly.

Q. Would an area supervisor check whether -- for example, if
nobody was getting any pay increases, would the area
supervisor say anything about it, or if everyone was
getting a 15 pence increase, would the area supervisor say
anything about it?
A. I think what it would do to me, personally, is perhaps
make me go and look a bit further; that if nobody was
getting anything, to go back to performance reviews, to see
whether or not they were justified, certainly to make sure
that people were being treated fairly.

Q. Is it something that is compared between stores?
A. Not to my knowledge, it is not, no.

Q. Is there any kind of figure, guidelines for managers to aim
for?
A. Not to my knowledge, there is not. You are talking
here about the percentage of pay rises between a
certain -----

Q. Yes.
A. Not to my knowledge, there is not, no.

MR. JUSTICE BELL: Are you going on to another topic?

MISS STEEL: Yes.

MR. JUSTICE BELL: We will have our five-minute break.

(Short adjournment)

MISS STEEL: Would crew regularly be asked to work more than
39 hours a week?
A. No.

Q. They would not?
A. Not to my knowledge.

Q. That is a general policy throughout the country, is it, or
