    18        what these two documents are and then explain what the two
    19        lines of the figures deal with?
    20        A.  This -- the top sheet is October of 1986.  It will go
    21        through sheet by sheet until April of 1987.

    33   MR. ATKINSON:  Then the figures that appear on those pages,
    34        under the dotted line, can you just explain what they are?
    35        A.  OK, on the left-hand side you have current year for
    36        that month and previous year for that month.  Then on the
    37        right-hand side you have actual year to date, and for last
    38        year as well.

    40   Q.   That is net sales and then?
    41        A.  Underneath those you have controlled expenses and
    42        payroll crew which is the staffing levels with the
    43        poundages and then the per cents.

    45   Q.   Then the figure of 15.35, that tells you what?
    46        A.  That was the percentage that that month ran at.

    48   Q.   Is that what we call the labour percentage?
    49        A.  That is right.

    51   Q.   Yes.  Then the budget? 
    52        A.  Yes.  The other one is the budget for the year of 1987 
    53        for that restaurant which on the first sheet shows January
    54        to June, and on the second sheet will show June through to
    55        December.
