5 have advanced further on PRs, cost more than occasional
6 part-timers?
7 A. It depends on the age of the full-timer.

10 whether it be under 18 or over 18?
11 A. If they are both of the same age, then the full-timer
12 would be more expensive.

14 Q. Yes. Now please look at page 30. This is a performance
15 review of you by Mr. Mark Davis whom you say pressurised
16 you, indeed, encouraged you to cut corners in order to
17 meet your labour and food cost targets, is that right, is
18 it not? Look at the top of the page under "Sales,
19 includes", and this is printed, "scheduling that does not
20 restrict sales building" and Mr. Davis has written:
21 "Generally OK. Half term holidays need attention". That
22 means, does it not, that you did not have enough people in
23 the restaurant at the half term holidays?
24 A. It could mean, that, yes, or it -----

26 Q. That is what it does mean, does it not?
27 A. It could mean that, I do not know. Looking on that
28 and he actually has said "recently improved" underneath, I
29 think that should -----

31 Q. No, that is for adequate crew size. It is a different
32 entry. "Adequate crew size recently improved". Mr. Davis
33 was anxious, was he not, Mr. Coton, that your crew size
34 was not large enough until recently? Is that right?
35 A. If you look at all reviews, that is a recurring
36 problem with everything because what actually happened
37 with these is a lot of it is a cosmetic exercise. The
38 reality between what goes on these and what actually
39 happens on the floor is sometimes totally different. You
40 will be told to do one thing and expected to do another.

58 "People", No. 4, and then look at "Turnover", Mr. Davis
59 comments that you have too high a turnover. Reduction in
60 turnover costs money, does it not?
