2 Q. If it opened at nine what time would the crew be coming in?
3 A. I think probably about 7.30.

5 Q. The shift change was four in the afternoon, did you say?
6 A. Generally, the shift changes at four certainly. That
7 is when the night shift Manager would be coming on. So
8 that is when the shift would start, in effect.

10 Q. Crew would normally work about another two hours after the
11 store actually closed?
12 A. If we shut at 11, yes or -- sorry, 1 o'clock we would
13 be finishing, it is certainly fair to say probably about
14 two hours.

16 Q. During the day, during week days, how many people would be
17 scheduled to work? How many crew would be scheduled to
18 work on the day shift?
19 A. During the week day?

21 Q. Yes, on week days.
22 A. Probably about 12.

24 Q. Then there would be extra over the lunch hour period, would
25 there?
26 A. No, I was probably thinking about 12 would be -- if my
27 recollection is right -- probably the number. So, in
28 effect, if we opened at nine o'clock, we may have three or
29 four people, building to 12 and then -----

31 Q. Building to 12 by what point?
32 A. By 12 o'clock usually noon, and generally running with
33 those sorts of people until about 2 o'clock when lunch time
34 would generally finish off or the traditional lunch time
35 period starts to peter.

37 Q. Then after two, what, you go back down to -----
38 A. We may, sort of, drop back down to nine or ten, then
39 rebuild up for tea-time and then work down to, I guess with
40 Leicester probably again about seven people until the store
41 shut, and then probably about four people to clean up after
42 we had shut the restaurant.

44 Q. What was the situation on Saturdays? You said for lunch
45 time there would be 24 or 25 people, but in terms of the
46 rest of the day?
47 A. Well, it would follow a very similar pattern to the
48 previous where it would drop down between two and four and
49 then build up again. Generally, as the shop shut, sort of
50 five, 5.30, 6 o'clock, we would get a burst of trade then;
51 that would drop off, but it would not drop off as probably
52 significantly as it would do on a week day because Friday
53 and Saturday nights people are out socialising and it was
54 in the middle of the city centre. So we are obviously
55 aware of that.

57 Q. So on Friday and Saturday nights, would that be as many as
58 Saturday lunch time?
59 A. No, I think we would probably run with about 12 people.
