1 Q. So how to organise the crew within a store?
2 A. Organising what? Organising them would be an
3 operational thing.

5 Q. You said "organisational". That is the problem. How to
6 make sure you have got the right number of crew present and
7 for getting the jobs done and if there are any problems
8 that arise how to deal with those problems?
9 A. Yes, broadly speaking, yes.

11 Q. Sorry, that was a bit of a side track. That manual is just
12 for management, is it?
13 A. That is who it was intended to.

15 Q. So it is not given to crew?
16 A. No.

18 Q. Are they allowed to see it?
19 A. Yes, if they wanted to, yes. There are a number of
20 things that are duplicated in the Crew Handbook and in the
21 Manual.

23 Q. The section on employment of young people, is that done
24 from the records that the store has as well?
25 A. Yes.

27 Q. There are just a couple of other questions I wanted to ask
28 you. On section 6, Legal, it has "giving away food" in a
29 separate category. Why is that?
30 A. Because that is a notice which is displayed and it is
31 really just an internal thing, that some regions wanted to
32 mark their restaurants down if they did not have the notice
33 displayed and others just did not because it messed up the
34 number of points. So it was just ticked if they had it.
35 It is not a compulsory notice, in other words.

37 Q. So that is a notice to crew saying they are not allowed to
38 give away food?
39 A. That is right. It is an extract from the Crew Handbook
40 which is displayed in some restaurants.

42 Q. If you get section 2 of the document, it is on the second
43 page, it says: "Performance reviews are calculated since
44 the last full field or 12 months". Which performance
45 reviews are those?
46 A. The performance reviews of the hourly paid people whose
47 files you would check.

49 Q. Can you just explain what that means there?
50 A. Yes. What happens is you take a sample of files which
51 would be either 10 or 20, or in some large restaurants it
52 could even be 30 or 40, but if I take 20 as the benchmark,
53 and in going through those files, when you are looking at
54 these other things which are in section 1, when you look at
55 the performance reviews, you go back through the file to
56 see which performance reviews have been conducted during
57 that time, either since the last full field, as it was then
58 called, or 12 months.
