     1   MR. MORRIS:  At the very end, you may remember you heard your
     2        own voice.  You said: "Voice overs of the type which are
     3        coming down:  you stay out, stay out, stay out, stay out,
     4        stay out."  Do you happen to remember what that was about,
     5        or might have been about?
     6        A.  I just do not remember at all.

     8   Q.   Also, there is Peter, again -- I presume from Croydon --
     9        saying: "£3,000 hour coming up."  Do you know what that is
    10        about?
    11        A.  Probably, the hours they are working is £3,000.

    13   Q.   Takings?
    14        A.  Takings probably; I could not be sure.

    16   Q.   No.  What would be the significance of saying something
    17        like that to people, "We have got a £3,000 hour coming up"?

    19   MR. JUSTICE BELL:  Does any of this matter?  I mean,
    20        I assume ---

    22   MR. MORRIS:  I think it does.

    24   MR. JUSTICE BELL:  -- it is that he is hoping he will take
    25        £3,000 in that hour, and he is getting near the mark.

    27   MR. MORRIS:  Is that part of getting the adrenalin going for all
    28        the staff to be keyed up and ready?
    29        A.  I cannot comment on that because it does not happen in
    30        my restaurant, so I do not know.

    32   MISS STEEL:  Just coming back to the rap session and the OCLs
    33        that we were talking about during the film; you were saying
    34         -- what was the procedure at the Strand store while you
    35        were Manager with regards to the training of crew when they
    36        took OCLs and when they would be left to do the work on
    37        their own?
    38        A.  To do OCL there is a given time for each employee when
    39        they arrive on the first area they need to work, on what
    40        OCLs they need, and after four months they have to complete
    41        at least two stations, and they carry onto the next
    42        station.  So we follow the guideline of the Company which
    43        is given to us by the Company doing the OCLs.

    45   Q.   That is in the crew training programme?
    46        A.  That is correct.

    48   Q.   I think that says after two or three days on a station they
    49        do an OCL?
    50        A.  Yes.

    52   Q.   Does that accord with your memory? 
    53        A.  Yes.

    55   Q.   Then at the Strand store do they have to do a second OCL
    56        before they pass that station?
    57        A.  They have to complete two OCLs and one test.
