Day 020 - 28 Jul 94 - Page 53
1 Q. Do you feel this was a significant improvement?
A. Based on the number of animals involved in this
2 analysis during the visit in April, it is difficult to put
any firm conclusions on that such as you are suggesting.
3
Q. Of the animals in plant B that you observed, it was only
4 27 cases, was it not, were they mostly cows, actual cows,
female?
5 A. To the best of my memory, they were all cows.
6 Q. They were all cows. If I just ask you if you remember, in
your survey, the University of Bristol survey -- I do not
7 know what tab this is -- you did say that the average
incidence of poor stunning for cull cows in your survey
8 was 1.7 per cent; for steers and heifers it was 6.6 per
cent and bulls it was 53 per cent. I am not sure what tab
9 that was. It is page 12 of that survey.
A. It is following; it is under the same tab.
10
Q. I do not know.
11 A. It is.
12 Q. It is the Bristol one. Page 12?
A. It is the addendum to this report.
13
Q. It was an extra one, was it not?
14 A. You are referring to table 4?
15 Q. Yes.
A. On the University of Bristol's page 12?
16
Q. Yes.
17 A. Your figures of 6.6 per cent for steers and heifers
and 1.7 per cent for cull cows -- if that is what you
18 said, that is correct.
19 Q. Yes. So, although it is not statistically a great number,
27 cows, it does indicate the fact that it was double the
20 average for 27 abattoirs in 1987 for cull cows?
A. Yes. I think that is rather dangerous, bearing in
21 mind the numbers involved, to attach any significance to
that.
22
MR. JUSTICE BELL: The other factor, I suppose, is that you
23 counted it as an imperfect stunning, although you were not
sure that was so, that was a possible inference from the
24 fact that the slaughtermen used the gun a second time?
A. That is correct, but the same criteria would have been
25 used in the survey.
26 Q. Right. I understand.
27 MR. MORRIS: It is said for plant B, for example, the next
paragraph, that the interval between the stunning and
28 pithing was an average 28 seconds, and between stunning
and sticking it was 47 seconds. In your Bristol report on
29 page 9 ------
A. Yes.
30
Q. It says on page 9 at the top: "The stun to stick interval
