A. Yes, if it is a nasty colour, you are going to put
4 people off.
5 MS. STEEL: How about the thick shakes?
A. Well, I think the same comment would apply.

Q. The thick shakes, do you know, have they got, is it about
7 ten tea spoons of sugar in them?
A. Without doing a calculation, I could not tell you, but
8 what I would emphasise is that a substantial proportion of
that would be milk/sugar which is lactose.

Q. Is there not quite a considerable amount of added sugar?
10 A. There is a certain amount of added sugar, yes. Again
it is all in the information that is provided.

Q. It appears from the ingredient list that sugar is a major
12 part of thick shakes?
A. If I can just comment on that -- it contains, the milk
13 shake base contains skimmed milk, concentrated skimmed
milk, sugar and glucose syrup. So the skimmed milk and
14 the concentrated skimmed milk will contain milk sugar.
The sugar, presumably that would be would be a form of
15 intrinsic sugar, and the glucose syrup would be as well.
I do not know what the relative ratios would be of those.
16 All I am saying is that a substantial proportion of the
sugar would be the lactose from milk.

Q. Then there is more sugar in the syrup?
18 A. Yes, there is. I agree.
19 Q. At any rate, there is quite a lot of sugar in the milk
shake, so McDonald's is adding colouring to a milk shake
20 to encourage people to drink more of them, and it is
something with a high sugar content. Is that something
21 that is particularly advisable? From the point of view of
a nutritionist, is that something that is a good idea to
22 promote something that has a lot of sugar added?
A. I think it is irrelevant really in the way in which we
23 are looking at it, because people have got the information
if they want to consider it. It is something they need to
24 take into consideration if they are trying to conform to
the dietary guidelines. Milk shake is another food. If
25 you have a fair amount of sugar in there, then you need to
be careful with the sugar you are getting from other
26 food. There is nothing specifically about the milk shake
one could condemn, in my view.

MR. MORRIS: Just to move on to something else, how would you
28 define the word "nutritious"?
A. Where were you referring to in the documents now?
