Day 088 - 13 Feb 95 - Page 46
is never a smell problem in our plant but that is part of
all organoleptic testing -- and also to look at the
texture, to look at the fatness, and then finally one cooks
it as well and sees what the eating quality is, the
tenderness, the succulence etc. etc. On the other hand, we
also use it for a means of testing of strains of pigs, you
know, so that we can actually do research work in
establishing which is the best commercial pig for us to get
on to the retailer shelf.

Q. These people in the white hats sitting on the plastic
chairs, are they your people?
A. The testing is done in two forms: Every day we
organoleptic test with management, trained management, but
three days a week, mostly sometimes two, but mostly three
days a week, we have people who come in from the town, our
local town, with commercial age range of 18 or whatever up
to old age pensioners also to test the meat and they are
fully trained taste panelists, and our managers are, that
have actually been trained by the Meat Research Institute
and MLC, the Meat and Livestock Commission.

Q. Is that raw meat as well as cooked?
A. Yes.

Q. Now, if you can turn on a bit and come to these tables
which we got to before lunch, to do with -- I will not say
what they are to do with.
First of all, we see the turnover of the companies
between them that they were apparently faxed down from your
company this morning, 13th February, at quarter to 10. Are
these your documents, are these are your company's
documents?
A. Yes, these are our own documents. Also they are shared
with MLC. They also have the documentation because we
worked together on this project.

Q. One notices that the species said to be concerned in this
exercise was sheep?
A. Yes.

Q. How long is it since you have had any sheep in your
factory?
A. We last killed a sheep on -- I can tell you
exactly -- November 23rd, 1984.

Q. Yes. We notice that the date on these documents is 2nd
January 1993. So, why does it say "Sheep"?
A. It is, I apologise for the computer at Milton Keynes,
also part of work so that it should be anonymous as well in
describing pigs as sheep also.

Q. So that from that answer, do we assume that in fact this
species concerned was pigs?
A. It is pigs.

Q. What exactly are these documents and what are they the
result of?
A. These documents are the work of what, as I have
explained earlier, we have been constantly doing work in
