2 Q. And strength?
3 A. Well endurance and strength are different things.
4 Endurance depends primarily on carbohydrates in the diet,
5 what is in common parlance referred to as carbo-loading.
6 Athletes who are involved in any sport that requires very
7 substantial endurance, such as marathons or these
8 triatholons where people swim and bicycle and run, or even
9 such things as tennis which do require continued aerobic
10 activity, the muscles need to have access to glycogen
11 which provides energy for them and a high carbohydrate
12 diet builds up glycogen. If one has a high meat diet
13 there is no -----

15 MR. JUSTICE BELL: Carbo-loading is allowing the glycogen
16 reserves to deplete and them giving them a boost over a
17 period of three or four days before a particular endurance
18 endeavour, is it not, in the hope that the muscles will
19 contain, will be especially full of glycogen which is
20 going to come in useful; it is not just a high
21 carbohydrate diet generally?
22 A. There are specific techniques that are used in
23 carbo-loading, and I am not aware of the details of it.
24 However, a high meat diet or meat in general, any form of
25 meat, contains no complex carbohydrates whatsoever. So,
26 it would not be helpful in building glycogen stores.

28 In fact, there is perhaps some reason to believe that a
29 high meat diet may actually impair athletic endeavours,
30 because after a meat meal or any meal high in fat -- this
31 would also indict vegetable oils, meals that are quite
32 high in vegetable oils, such as french fries or salad oil
33 -- after a meal that is very high in fat, the viscosity
34 of the blood if it is measured will register as being
35 somewhat higher, meaning that blood flow is somewhat
36 impaired.

38 Q. That is a temporal thing?
39 A. Yes. It is a temporary event.

41 Q. That is not related to diet, is it? That is related to
42 having a particular kind of meal and then the efficacy of
43 the body taking exercise within a period of however many
44 hours it would be thereafter, or are you relating it to
45 diet generally?
46 A. I am relating to a specific meal rather than the
47 overall diet.

49 MR. MORRIS: Just to go back to that advert, that promotion:
50 It says: "Eating two servings a day of these foods can
51 make it easier to do things like climb higher and ride
52 your bike farther". So, it is talking about a diet high
53 in that group, is it not?
54 A. Yes, it is. Their representation, apparently, as
55 I read it, that if children include two servings from the
56 meat group which is predominantly meat items, if they
57 include two servings of items from the meat group every
58 day, that they will find it easier to climb higher, to
59 ride their bikes farther and perhaps to do other things
60 that children like to do.
