     1        whichever it is, the counts are very high.  If it was one
     2        of those polyvinyl cutting boards, then one of the reasons
     3        could be to the poor results could be the fact that they
     4        were worn out and should have been changed earlier.

     6        This would definitely be my guesses as to why these counts
     7        are so bad.

     9   Q.   So, in the grading system they have used here, at what
    10        grade would you start to take action?  You said here you
    11        would definitely take action?
    12        A.  Perhaps it would be helpful to mention that, for
    13        example, when Local Authority's Environmental Health
    14        Officers monitor food premises in restaurants, for example,
    15        when they do, they usually do TVC monitoring only at
    16        premises where they are worried -- which they consider high
    17        risk premises, that have either had a bad record in the
    18        past or had poor visible hygiene, then they would monitor
    19        weekly.

    21        They would accept good levels of hygiene would be
    22        considered in premises where you get As.  These would,
    23        obviously, still be acceptable but they would definitely
    24        prompt any Environmental Health Officer to give a note.

    35        I would think that acceptable levels at a raw material
    36        outfit like Jarretts, A, B and C would be acceptable
    37        levels.  I would be quite happy, after first monitoring the
    38        situation, finding out the background level there and then
    39        if the background level continuously stayed at D and E,
    40        I would want to push it up to C, definitely.

    42   Q.   Do A, B, C, D and E mean anything to you particularly or
    43        are you looking next to, for instance, trimtable in the
    44        boning hall, sample D?  Are you looking at grade E or are
    45        you looking at 7.4 x 10 to the power of 4?  What are you

    47        A.  Well, I am basically looking at the figure, but it is
    48        fairly easy to establish from these results, and this
    49        grading is commonly used; it is not something that -----
