1 filmed, there was a discussion about hours' calculation,
2 and it went like this: "See, they do not know what they
3 are doing, so the person doing the hours, right, your hours
4 would be short. Say we do 80 hours and then, you know,
5 they pay for 60 hours, so I think we should get someone
6 more competent to do the job. I did a lot of premium last
7 week, last two weeks, and they only gave me one hour
8 instead of about six or eight".
9 Do you know what the problem is there that the crew were
10 trying to identify?
11 A. The crew has worked extra hours which have not been
12 paid for and they wanted to be calculated and be paid for
13 it, and that is what they are trying to say. It does
14 happen from time to time it is not worked out all the
15 hours.

17 MISS STEEL: Is that something that really only comes to your
18 attention if the crew complain about it themselves?
19 A. First they go to the person who does the payroll who is
20 an Assistant Manager; they will explain -- he will take
21 their card out and look at the card, and if they are
22 unhappy with what he, you know, he answer them they come to
23 me. If they are satisfied with the situation they leave it
24 to that.

26 Q. But if they did not -- but it is up to them to bring it up
27 and complain if they feel they are being not paid for
28 enough hours, for all the hours they have worked?
29 A. Yes, if they think they have not been paid for the
30 appropriate hours, yes, it is up to them.

32 Q. Do you know where Paul Hickling was Area Supervisor for?
33 A. I am not quite sure which restaurant, but I know only
34 one, which is Croydon. He was a Supervisor of Croydon and
35 other few more restaurants.

37 Q. In that area, in the Croydon area?
38 A. Not Croydon area, just South East probably.

40 Q. Right. At the end of the film when it mentioned about
41 Mr. Metcalfe counting up the -- trying to account for the
42 missing buns it said that he resigned the following week.
43 Do you remember him resigning?
44 A. Yes, I do.

46 Q. Was it shortly after the film had been -- that film had
47 been shot?
48 A. I think so, yes; shortly after.
