     3        A.  There are occasions when, for instance, you might have
     4        a problem with the freezer but what you do is you remove
     5        the stock from that freezer -- perhaps if you were
     6        defrosting it overnight it might take three hours for that
     7        freezer to reach that temperature in the morning and that
     8        is something you have to be aware of before you (inaudible)
     9        the product.

    11   Q.   But you have this freezer temperature log in the store,
    12        yes?
    13        A.  It is part of the safety, product safety checklist,
    14        yes.

    16   Q.   I think you said something about it goes back six months,
    17        or something?
    18        A.  I think we keep them for six months.  I do not know
    19        what the requirement is for us to keep them, but we do keep
    20        them.

    22   Q.   When you have finished with them you have to start a new
    23        log?
    24        A.  You have one for each month.

    26   Q.   It is a handwritten one, is it?
    27        A.  It is.  It -- they have just changed the format
    28        slightly, but it is all handwritten, yes.  You basically
    29        have a space for the temperature and a specific time you
    30        are supposed to take the temperature at.

    32   Q.   How many times in a day would you find that the temperature
    33        had not reached the level at which it is meant to be?
    34        A.  You might find a couple of times a day there was a
    35        problem with the small freezer, say the grill side freezer;
    36        that is why we only keep our meat in there for an hour now,
    37        not four hours.

    40        out of -- I cannot remember exactly what you said before
