7 A. Yes, "still very untidy".

9 Q. Is that something that would require action or not?
10 A. Yes, from a production efficiency point of view.

12 Q. Let us focus, if we may, on human safety, food safety,
13 I mean?
14 A. Yes.

16 Q. What, if any, implications does the tidyness or otherwise
17 of the loading bay have for human safety, food safety, or
18 might it have?
19 A. Very little, because the meat on this particular
20 loading bay is sealed and wrapped in boxes, so untidyness
21 is not a food safety matter.

23 Q. What about the problem of vermin nesting in old boxes of
24 cardboard or polythene, is that problem?
25 A. I would not describe that type of situation as
26 untidyness, no. I would describe it as gross dirtyness and
27 lack of attention to ------

29 Q. Do Jarretts have any sort pest control procedures or not?
30 A. They employ a pest control contractor on what is known
31 as a special reporting service, that is to say, they come
32 in once a month or once every three months, whatever the
33 agreed contract is, to examine all their dating points, all
34 the pest control procedures.

36 Q. Let us move on as fast as we can now -- I am not going to
37 go through all of these documents by any means -- to 28th
38 March 1993, just before Ms. Hovi arrived at the premises.

40 control checks. Just glance down the temperature column,

45 that sheet. Do those temperatures -- they are ticked as
46 being satisfactory, do you agree with?
47 A. They are certainly satisfactory at the temperature
48 shown.
