2 A. But this is before it has been -- before you are
3 cooking on the grill you have to go through -- with a gas
4 grill it was a little bit more complicated; you had to go
5 through, you had to do times at specific times to make sure
6 that the calibration was right. So, when the grill was in
7 use you would not get this, necessarily, the low
8 temperature at the front towards the back. This meant,
9 should have meant that all the grill was set up correctly.
10 It was a bit more of a science to setting that grill up
11 because of the air flow down the burners of the grill
12 surface. So, it is important to check it at a specific
13 time. It is important to get these readings.

15 Q. But before you put the meat on, that would be the minimum
16 temperature then, is that what you are saying?
17 A. When you are doing a calibration and you have a
18 temperature at the front of the grill of between 325 and
19 340 on a gas grill, that would mean that your grill was
20 working effectively and would cook meat throughout the day
21 to the required temperature. It is the timing of doing
22 that that was important so that as the grill had heated up
23 .....

26 A. So from the time you switched the grill on to when you
27 did these recordings, it is crucial. If you went back
28 throughout any time of the day then you would not be able
29 to do this particular calibration. You would be looking
30 for 350.

33 A. It would vary.
