Day 131 - 06 Jun 95 - Page 70

       A. No, if you splash it over the side it is because you
have not located it properly, because the bin is not
adjusted properly, because you are not looking; it is a
       dozen and one reasons.

  Q. So we blame the worker, do we, then?
       A. Have I said that?

  Q.   What about the grills then, just before we come to hustle;
if people have to turn 12 or 24, whatever it is, burgers
rather than six, they have to work at a greater speed, do
       they not?
       A. Well, yes, but that is your comment, if they have to 24
instead of six. I mean, is this a real situation or a
hypothetical one you are putting to me?

  Q. For, example in the film "One Every Mile" there was a shot,
I do not know if you recall, you probably do not recall it,
where somebody had to flip ---
       A. He was doing the normal six burgers at a time.

  Q. -- I do not remember how many burgers it was, quite a large
amount of burgers at some incredible speed?

MR. JUSTICE BELL: How many were there, you see?

MR. MORRIS: I cannot remember how many. The problem is the
       speed; that is the problem.

MR. JUSTICE BELL: I have to be candid -- it is not. If you are
saying that instead of cooking them for 40 to 44 seconds
they were cutting it down to 30 and slapping another six on
       every 30 seconds ---

  MR. MORRIS: No.

MR. JUSTICE BELL: -- I understand that, but at the moment the
system, as I understand it, is that the grill top will only
take so many burgers. They have to be cooked for such and
such a time. So it does not matter what pressure you are
under, you can only put so many burgers on the grill at one
time and they have to cook for at least 40, 44 seconds,
       whatever it is.

MR. MORRIS: But you have to put them on quickly ---

  MR. JUSTICE BELL: Why?

MR. MORRIS: -- flip them quickly and take them off quickly in
order to get the product finished for the customer.

MR. JUSTICE BELL: Then put that so I understand it to
       Mr. Purslow.

MR. MORRIS (To the witness): That is correct, is it not? If
somebody felt under pressure to get the product to the
customer as quickly as possible, then they may be putting
stuff on grills, flipping things on grills, taking things
off grills, putting things in fry vats quickly ----
