7 us. (To the witness): How many times do you think that
8 that has happened, not that somebody has grabbed a whole
9 lot so there is nothing you can do about it, but that
10 somebody has failed to spot that you have been running out
11 while you have been in charge?
12 A. I would say approximately it would have happened three
13 or four times in a year.

15 Q. When you have run out how quickly do you get replacements?
16 A. If we can get them from other restaurants we can have
17 them the same day.

19 Q. If you have to get them from Finchley, what then?
20 A. From our suppliers, they come from -----

23 A. Yes -- up to two days.

25 Q. Finally, on this sheet, Mr. Stump, you see at the bottom of
26 the page there is a date, October 1993. Do you see that in
27 brackets at the bottom of the page?

30 Q. When you first arrived in the Chelsea restaurant on 1st
31 June 1993, was there a similar thing in place or not, a
32 similar document?
33 A. There was the previous version of the observation check
34 list. There have always been observation check lists since
35 I joined the company. It was just an earlier version of
36 the observation check list.

38 Q. You may have answered this in cross-examination, I cannot
39 remember. That is why I ask it again. See item 14, trash
40 walk carried out at least every 30 minutes following the
41 trash walk map. Has that or something like it appeared in
42 previous versions that you have seen or not?
43 A. On the observation check list?

46 A. I cannot be sure whether it was on the observation
47 check list, but I know from my training as a manager I was
48 taught this about the trash walk, and I am not sure where
49 the information was contained.

51 Q. I understand. We will try to find some other person who
52 can. Then can you turn over the page at the back of the
53 document at question 4. What sort of answer would you
54 expect to get in order that the person should get a tick in
55 answer to that question?
56 A. I think they have to describe the fact that all rubbish
57 is collected, not just McDonald's rubbish; also that it
58 follows a set, a set area, and it also asks them about the
59 frequency of the trash walk, how often they happen.
60 I think that is the three main points.
