       fails any one check -----

MR. JUSTICE BELL: Yes, if it fails any one of 36 separate
(start emphasis) quality control checks (end of emphasis).

MR. MORRIS: The quality control checks have specifications so
that they know what they are looking for; is that correct?
       A. No, I keep saying it. I will say it again. The
quality control checks are in place to ensure that the ends
product meets the specification -- the McDonald's
       specification.

  Q. Yes, all right. Whether they are called quality control
checks or called specifications, the important thing is if
it fails any one of those checks -- and there are standards
set, are there not, about what is satisfactory and what is
       unsatisfactory, yes?
       A. There are limits for those checks.

  Q. Mr. Walker said in his evidence at one stage that the four
degrees, for example, was a "cast-iron rejection" if it
above four degrees. You have said that as well, but then
he changed his mind and accepted that, in fact, when he was
shown a document that meat does arrive over four degrees,
and they accept it, depending on how much over it is. So,
is that the kind of approach you have to your
       specification?

MR. JUSTICE BELL: I do not think you really need compare him
with someone else. All you need to ask is what McDonald's
       attitude is towards their specification.

MR. MORRIS: Let us say, for example, this is all about food
poisoning at the moment, is it not, and let us say, for
example, someone finds a burger that is 69.8 degrees
internal temperature, that has failed your specification,
       has it not?
       A. That has failed our quality control test.

  Q. OK, but your specification is it should be no less than 70
       degrees?

MR. JUSTICE BELL: Where do you get that from?

MR. MORRIS: All right, let us forget the word "specification",
it has failed your quality control check?
       A. Yes.

  Q. And, therefore, does that mean it is automatically rejected
        ---
       A. Yes.

  Q. -- as a product?
       A. Yes.

  Q. You are absolutely sure about?
       A. I am totally sure about that.

  Q. So you are happy if your suppliers do not have the same
attitude which you claim to have?
