     6        terms of sales objectives and the profit and loss?
     7        A.  Yes.

    10        food yields?
    11        A.  It might do, yes.

    14        A.  It might do.

    16   Q.   It might do.  Is there some reason why it would not?
    17        A.  It might be a sales objective.

    19   Q.   Would that not be the one that comes under the initial one,
    20        the "sales day"?
    21        A.  Not necessarily.

    23   Q.   So in some situations the Managers will only be looking at
    24        sales objectives and in other situations they will be
    25        looking at total profit and loss, including labour
    26        percentage and food costs?
    27        A.  On the people day we might be looking at financial
    28        objectives, which might include food costs or labour but it
    29        might not.

    31   Q.   Perhaps I should have just done the "profit day" which is
    32        on the following page:  "This day gives the Area
    33        Supervisors the chance to build on their visit from the QSC
    34        day.  Profit opportunities are highlighted and a three
    35        month profit goal with objectives and action plans is
    36        developed.  The sponsors then review key profit areas in
    37        the restaurant, i.e. food, labour and maintenance and
    38        repair costs".  So there they are being trained as to
    39        setting food yield and labour percentage targets for the
    40        stores?
    41        A.  Well, again not necessarily.  I mean, food and labour
    42        are only part of the profits picture, so it might be other
    43        things.

    45   Q.   Are you saying that in some circumstances those areas are
    46        completely ignored or are you just -----
    47        A.  No, I do not think you can ignore them.

    49   Q.   No, so they would always be included, they just might not
    50        be ----- 
    51        A.  Well, they might not be a key area.
