3 A. What I wanted for lunch.

5 Q. What was on the piece of paper that she showed you?
6 A. The menu: Parma ham and melon today.

8 Q. In the Crew Handbook, health and safety comes last, does it
9 not?
10 A. It is one of the latest sections, yes.

12 Q. It is right at the back, is it not?
13 A. Pretty well near the back, yes.

15 Q. Do you not think you ought to have it at the front of the
16 handbook to indicate to crew how important health and
17 safety is?
18 A. I suppose it is one of the things we could consider.

20 Q. And to hope they are more likely to read it if they start
21 reading the book from the front, as most people do?
22 A. I do not know we would expect them to read it all the
23 way, or to read every section in depth anyway. They have
24 specific things pointed out during their orientation, and
25 the health and safety segment is one of those and it is
26 then a reference document.

28 Q. When crew members start, you said they are more likely to
29 have accidents when they start, or in the first few months
30 when they are getting used to the procedures and things
31 like that?
32 A. I suppose it is a bit like riding a bicycle. There is
33 so much to learn to start off with that it is easy to get a
34 few things wrongs, and in getting them wrong, one of the
35 outcomes could be burns or cuts, the sort of injuries we
36 were talking about.

38 MR. JUSTICE BELL: That is right then, is it? They are more
39 likely to have accidents?
40 A. I think from my understanding of safety, in general,
41 the two groups of people who are more likely to have
42 accidents are the new people, and then the people that have
43 been there for a very long time, because they become rather
44 complacent. Again it has not happened to me, so far in
45 terms of anything bad, so I am safe.

47 MS. STEEL: Do you encourage employees to work slower when they
48 start?
49 A. No.

52 A. No, I think naturally they would be slower in that they
53 are learning to do something. Certainly that is my own
54 experience in learning things.

56 Q. But you do not encourage them to take a long time, to get
57 familiar with everything, and to take their time flipping
58 burgers and matters like that, in order that they are less
59 likely to have accidents?
60 A. Well, I mean certainly when they are being taught they
