Day 298 - 11 Nov 96 - Page 05
said "fact intake", but never mind - will be needed to
attain a low risk of fat-related cancers. He said that
that indicates in the very broadest sense of causality that
reduction in saturated fats will remove a significant part
of the cause of that cancer.

He went on to say that he agreed with the statement that
followed that -- "Nevertheless evidence indicates that the
diet that is low in total and saturated fats, high in
farmed foods, especially green and yellow vegetables and
citrus fruits, low in alcohol and salt and pickled foods is
consistent with a low risk of many of the current major
cancers including cancer of the colon, prostate, breast,
stomach, lung and oesophagus." He said he agreed with
that.

He also said -- this is on page 90 from lines 18 to 30 --
that he agreed that dietary factors are now known to
influence the development of a wide range of chronic
diseases, eg coronary heart disease, various cancers,
hypertension, cerebro-vascular disease and diabetes."

Just moving on to Professor Campbell, who was Product
Director of the China Oxford Cornell diet and health
project, and I think I referred last week to the fact that
he was on the... I can't remember - yes, that he was chair
the Dietary Prevention of Cancer Worldwide, which was a
highly distinguished international committee of scientists
set up to look into and evaluate links between diet and
cancer, and also that he was co-author and member of the
National Academy of Sciences expert panel on diet,
nutrition and cancer between 1981 and 1983, and that was
the one that produced the green book that we referred to
earlier in the trial.

Just referring to the China study, he said that the
findings from the investigation of diet and disease
relationships in rural China strongly supported the
proposition that a high fat, low fibre diet is causal in
the development of a wide range of cancer and
cardiovascular disease. That was page 9, line 37.

MR. JUSTICE BELL: Which day?

MS. STEEL: Sorry, this is all day 256.

MR. JUSTICE BELL: Yes.

MS. STEEL: Then it was put to him, "Assuming that we establish
that typical McDonald's meals are high in fat, sugar and
animal products, salt, sodium, low in vitamins and minerals
would a diet of such nature lead to a very real risk that
you will suffer cancer of the breast or bowel or heart
disease as a result?" He said, "Yes." That was on page 10
lines 42 to 47.

On page 11 he went on to say, "When one has both biological
plausibility on the one hand, together with the numerous
associations that have been published many times over, it
clearly establishes a very, very strong and convincing
