       end-all at those times.

  Q. It is possible it was mentioned but you do not remember it?
       A. I honestly cannot remember it being mentioned. But if
you were to ask someone who was in that department at that
moment in time, then they would probably be able to clarify
       the matter.

MR. JUSTICE BELL: Would it be fair to say that the mentality
was to look to the instructions which came from on high
within the company rather than outside guidance and advice?
       A. Most definitely, this time on procedures and what we
did in our restaurants, would just definitely come from
Head Office and Kevin Haag was an important man within the
company. If you had a note from him, you would implement
what was said straightaway. As regards why he came to a
decision, in my position, I just would not be privy to the
       influences behind that.

MR. MORRIS: If we can go back to Mr. Clark's statement --
I hope you still have it?

  MR. JUSTICE BELL: Yellow VIII.

THE WITNESS: What particular part of that document should I
       look at?

MR. MORRIS: Just wait a minute. You said when you set the
temperature minimums that it may still be necessary for
them to increase the times to ensure the product is
properly cooked. You have minimums, well, 40 degrees is
       the minimum, yes?
       A. No.

  Q. Sorry, start again. 40 seconds is the minimum time?
       A. 40 to 44 seconds is the range.

  Q. So 40 seconds is the minimum?
       A. Yes.

  Q. And you could increase that time. When you set
temperatures for your equipment they are minimums as well.
Can people increase the temperatures if they wish to
       achieve the -----
       A. No, we would prefer them to increase the time rather
       than the temperature.

  Q. What about decreasing the temperature?
       A. No, not decrease the temperature. They would have to
       be at that temperature.

  Q. If you just look at Mr. Clark's statement on page 14?
       A. Yes.

  Q. If I just refer you to the Glasgow Fries Fryer?
       A. Glasgow Fries Fryer, that is the figure that says 331.

  Q. Yes. I was not going to read out the figures.
       A. Sorry.
