Day 133 - 12 Jun 95 - Page 16

MR. RAMPTON: Nowadays, the Operations Manager is the immediate
       superior of the Supervisor?
       A. Yes, that is right.

MR. JUSTICE BELL: Yes, I can see that now because the
Operations Manager is what the Senior Supervisor was, which
is why we have no numbers in column 31?
       A. Basically, that is right, yes.

MR. RAMPTON: Again I can tell you that the figures show that of
the Operations Managers over 14 per cent are either black
       or Asian?
       A. Yes.

  Q. Of the Supervisors, the 100 Supervisors, 14 per cent,
I think it is, are the same, black or Asian. Do you see
       that?
       A. Yes.

  Q. Again I ask the same question: Are these figures, which
compared with the national basis, about which you are
       relatively content?
       A. Well, I think that there is always room for
improvement, but I would say that they are quite good
figures, yes, I believe so, particularly as they are mid to
       senior management figures.

  Q. Thank you. You can keep that, I think it is XII you have
there. We will turn now to something completely different
which, Miss Mead, is turnover. Could I ask you to keep the
XII with you, put it slightly to one side, and fetch, if
you will, No. X in the same series, the pink series, which
is a copy of the Operations and Training Manual. Please
turn to page 87. This is the American version. I am going
to come back to this but I just want to ask you a question
or two about it as a preliminary. Do you see that the left
hand column on that page 87 is headed: "Retention of
       crew"?
       A. Yes.

  Q. It says: "Staffing and retention are closely related
issues. Many problems are the by-products of
under-staffing. Under-staffing puts additional pressure on
everyone and results in frustration for management and
crew. Causes of turnover. It is crucial to understand the
reasons why people leave McDonald's. Some of the most
significant reasons people give for leaving are", then we
will come back to these in a moment. The question I have,
Ms. Mead, is why as it appears from this document is
       McDonald's concerned about retaining crew?
       A. Because I think it is fairly much common sense that if
people are trained initially that they are then more
productive and likely to operate the business more
       efficiently.

  Q. Yes. The Defendants will, no doubt, suggest to you -- I
would like you to deal with it now, please -- that, of
course, if you have a huge turnover in crew it is much to
your financial benefit because it costs less since they all
start and restart at the basic rate. Therefore, it would
