    12   MS. STEEL:  Is that, in fact, the speed that the line usually
    13        goes at?
    14        A.  No, it is not.

    16   Q.   It is not?  Can you explain what that is then?
    17        A.  Well, I think they are saying that if one line breaks
    18        down, the other line can work to a maximum of 6,000 birds
    19        per hour.  But that is only for an emergency.

    21   Q.   The yellow and the blue, is that then one for cockerels and
    22        one for pullets?
    23        A.  Yes, I am not sure which is which.

    25   Q.   So does that then mean if there was a breakdown cockerels
    26        and pullets would be put on the same line?
    27        A.  I am not sure whether that can happen; I presume it
    28        must do, if that is what they are saying.  In theory, the
    29        equipment can probably do both, but it would not be ideal
    30        because it is adjusted to birds' size and everything has to
    31        be adjusted.  The stunning bath, the neck cutter, the
    32        evisceration equipment, all has to be adjusted to birds'
    33        size.  So, there is not really very much flexibility
    34        between the two lines.  It would take quite a long time to
    35        set it up.

    37   Q.   How often does it happen that one line does break down?
    38        A.  Well, I think it is very rare; I do not know how
    39        often.  I am not aware that it happens very often and, if
    40        it does, it is only for a short time in which case this
    41        kind of arrangement would not be necessary.

    43   Q.   Why would the company do out a job procedure for something
    44        that was not necessary?
    45        A.  Well, I think they are only saying it is a procedure
    46        for an emergency breakdown, and it would have to be an
    47        emergency breakdown of some considerable length to make it
    48        worth doing.

    50   Q.   Do the two lines go through the same stun bath or do they 
    51        have separate stun baths? 
    52        A.  No, they have separate stun baths.

    54   Q.   On page 111 there is a chart about sterilizing knives?
    55        A.  Yes.

    57   Q.   How many knives are there, generally, in the -- there would
    58        be one that the workers were using and then there would be
    59        another that was in the sterilization tank, yes?
