12 reasons for failed audit -- it has got "told to bleep me if
13 temperatures rise above four degrees/five degrees - time
14 for action to be taken to prevent six degrees". So it
15 appears, in fact, four degrees is not your requirement but
16 six degrees?
17 A. Four degrees is our target. Occasionally, the
18 temperature will go up to six degrees in which case we aim
19 to hold birds longer in the chillers, if that is the case.

21 Q. So, in fact, you do not actually take any action until it
22 is six degrees?
23 A. In this particular case, it is only the middle of the
24 process, so we do not have to.

26 Q. If we go on to the next page, we can note that on this page
27 under "Exit Temperatures", "Action point four degrees".
28 "All samples must be less than six degrees". Then it says
29 the first one failed. So, in fact, some temperatures do
30 reach above six degrees but then they would fail, yes?
31 A. Yes, and the way we react to that is by leaving birds
32 longer in the chillers. And you have to realise that this
33 particular set of documents I produced as a result of my
34 last appearance here when I simply rang through and asked
35 for a day's figures and I just named a day at random.
