     2        are served.  As I said before, and as a result of that,
     3        your sales go up, so the way that we phrase it, term it,
     4        train people, is always in those terms.

     6   Q.   If you just turn over the page 71 at 73 it has about the
     7        Field Services Department which, presumably, monitors the
     8        franchisees, yes?
     9        A.  Yes.

    11   Q.   "The formal goal of staff in Field Services Department is
    12        to represent the business interests and protect the
    13        financial investment both of franchisees and of
    14        McDonald's.  Their basic objectives are to build sales,
    15        optimise profitability, and to improve and protect the
    16        McDonald's brand name".  Nothing there about safety or
    17        anything else.  Really, what the whole operation is about,
    18        is it not, Mr. Atherton, is profits for McDonald's?
    19        A.  The reason we are in business is to make money.  We are
    20        a commercial organisation and we understand how that
    21        works.  We do make money and we make money by looking after
    22        our people, looking after our customers, ensuring that we
    23        serve safe food, ensuring that we maintain the standards
    24        for our employees to work in a healthy and safe
    25        environment.

    27   MS. STEEL:  Can I just ask, who has responsibility for food
    28        safety projects before David Wignall?
    29        A.  I think they would have come under Paul Connan.

    32        A.  Paul Connan, C-O-N-N-A-N.  I referred to him the other

    35   Q.   Do crew members have to pass OCLs to get pay rises?
    36        A.  No, there is not a direct relationship with passing
    37        OCLs and getting pay rises.

    40        A.  They are part of the assessment of someone's
    41        performance.

    44        A.  Pay rises are based on performance.

    49   Q.   In paragraph 64 of Mr. Wignall's statement he refers to an
    50        annual "full field" audit which he says:  "Attached to this 
    51        statement at Appendix 8 is an example of the documentation 
    52        which is completed by those undertaking the full field 
    53        during the course of the day".  If you could turn to that
    54        full field audit, or whatever it is supposed to be?  It is
    55        at tab H?
