Day 161 - 24 Jul 95 - Page 29
MISS STEEL: So, if you did not have enough people leaving, then
people's hours would be cut?
A. As I said, some students are full-time during the
holidays; they go back to college, and they become
part-time. Those hours would be shared to the new crew.
It is not necessarily cutting -----

MR. JUSTICE BELL: All that is being put to you is that if you
found that the people going back to college, or other
people who had gone of their own free will, did not create
the job which would suit you from 200 to 150 -- suppose
only 30 went back, so you had 170 -- then the scheduled
hours would be shared between the 170, and some people,
anyway, might have to work less hours; some, for instance,
of the part-time workers might have to work less hours than
they had been working or than they wanted to work?
A. It is possible.

MR. JUSTICE BELL: That is possible. Yes.

MISS STEEL: You said that you got through about 3,000 buns a
day?
A. That is correct.

Q. Do you know how many customers you served, for example,
during the summertime in a day?
A. I would not know offhand.

Q. You do not know?
A. I do not know.

Q. It would have been information that you would have had at
the time, but you do not remember?
A. Yes, I would have known at that time.

MR. MORRIS: What were the takings per hour then, approximately,
when you were the busiest store in the world?
A. Takings?

Q. Approximately.
A. £2,000.

Q. Would that be like a busy time, Saturday, or would that be
averaged throughout the week, something like that?
A. The Strand did not have one busy hour. It was a steady
one. So.....

MISS STEEL: We wanted to show the video and ask the witness
questions about it.

MR. JUSTICE BELL: Yes.

MS. STEEL: Although it is not all about the Strand, sometimes
it is not very clear which part is which, so it may be
easier just to run through and get the witness to confirm
which part is which.

MR. JUSTICE BELL: Will that mean tht you will want to stop
every now and again to ask where something was?
