Day 081 - 31 Jan 95 - Page 40

       A. If you are referring to older type of premises, there
may be but not usually in the case of cattle.

  Q. But that is something to be discouraged, is it, the
crossing of the line with contaminated material?
       A. Yes. I cannot think of a situation in which it might
       occur.

MR. JUSTICE BELL: You had better explain what "crossing the
       line" means to me.

MR. MORRIS: Say, for example, contaminated material is taken
off a carcass and you have the line of all the carcasses
moving along the route projected here, and then someone was
to wheel a barrel full of contaminated material across that
line, that is something that should not happen?
       A. No.

  Q. I think you said the splitting saw, round about the
splitting saw area, which is in the middle of this floor
plan, is that generally where the meat inspectors will be
       checking?
       A. Well, in this particular case the meat inspection is
just beyond that, the next stage, the next stage along.

  Q. After that?
       A. Yes.

  Q. If a carcass, there is a problem and it needs to be taken
to the detained room, it is often detained, is it not, for
quite a considerable time while it is being checked or
       whatever?
       A. Well, a few hours possibly, yes.

  Q. The detained room, is that chilled in a typical well-run
       plant?
       A. I do not think so, no.

  Q. It is not?
       A. It could be but I do not think there is a requirement
       for it to be chilled.

  Q. I do not mean the condemned room; I mean the detained
       room.
       A. Yes. I take it you are referring to slaughterhouses,
in general, rather than this particular one?

  Q. Yes. Because you do not know; you have not been here so
       you do not know?
       A. No.

  Q. I am just asking general questions. Where the inspection
is, around that area there is a wash, a hose wash of
carcasses -- just take my word for it -- that is the area
where the hose washing takes place, around that area.

MR. RAMPTON: Wait a minute, my Lord, I do not understand why
Mr. Morris should expect Professor Jackson to take his word
       for anything at all.
