     9   Q.   Obviously, there are other aspects that are not in the
    10        specifications which may not be so serious.  This is not
    11        the complete "how to run a supply plant", is it?  It is
    12        only the particular things McKey feels strongly about?
    13        A.  No, I mean, in the context of your last remark, you
    14        have got professional people dealing with professional
    15        people.

    17   Q.   The Microbiological Guidelines that have to be strictly
    18        adhered to at the suppliers, are they exactly the same as
    19        what happens at McKey's?
    20        A.  No, those Microbiological Guidelines, those are done at
    21        the McKey when the meat arrives.

    23   Q.   So 6.1, that refers to McKey's tests, not the suppliers'
    24        tests?
    25        A.  It say so.  "Two samples will be collected from each
    26        delivery upon arrival".  That is what it says.

    33   Q.   Sorry, I did not appreciate that.  I see, OK.  If when you
    34        do these routine tests at McKey's it goes above the
    35        concentration levels, I presume the batch is rejected, the
    36        combo -- is it the combo bin which will be rejected?
    37        A.  Yes, if it is unsatisfactory, yes.

    40        the "unsatisfactory" category?

    51        statement you say:  "All abattoirs supplying McKey are 
    52        inspected twice annually as a minimum", which you have just 
    53        said, "... The abattoirs will conduct their own quality
    54        control checks in addition to those imposed by McKey and
    55        each abattoir has its own veterinary surgeons, laboratories
    56        and Environmental Health Officers"?
