Day 206 - 22 Jan 96 - Page 48
Q. There is a range?
A. Yes.

Q. Yes.
A. On fries and yield products.

Q. We have seen the documents. Have you ever seen a Manager
or, for that matter, anyone else, Mr. Henden, add water to
watered down the milkshakes?
A. No, I have never seen anybody add water to the shake
mix or any food products.

Q. At Bath?
A. At any restaurant.

Q. Anywhere? Have you ever heard it discussed?
A. No.

Q. At a Managers' meeting?
A. No.

Q. Have you ever heard it talked about by crew?
A. No.

Q. "Michael Logan overheard Managers discussing the
possibility of increasing air content to improve yields".
Can you help us what that might be supposed to mean?
A. Mix it with, the shake machine blends air with liquid
shake mix as a ratio which is governed by the Company at a
given ratio of mix to air, and this can be controlled by
factors such as the check bands, et cetera, and they are
changed on a regular basis, the mixture of the air content
is correct, but I have never heard of anybody actually
increasing the air ratio.

Q. Have you ever come across the practice of slightly under
filling the shake cups in order to meet the yield targets?
A. No, on a Saturday we used to position a crew member on
the shake machine to pour shakes at the correct level,
mainly because they would be overfilling the shake.

Q. That is to avoid waste, is it?
A. That is correct, yes.

Q. I am not going to ask you to go through -- you have seen
Mr. Danny Olive's letter, have you?
A. Yes, I have seen it this morning.

Q. Yes. Indeed, so have I. I am not going to ask you to go
through his letter. Just answer this -- it may already be
in your statement and forgive me if it is, from your
memory, do you remember Mr. Olive?
A. I do.

Q. Do you have a memory -- it may be in the documents; it may
not be -- what sort of hours he did in the restaurant?
A. He would typically work two shifts a week, those being
evening shifts.

Q. Would those be, sort of, eight, nine hour shifts, do you
