Day 037 - 14 Oct 94 - Page 26

  Q. So the first one is 50 per cent?
       A. Yes, something of that order. Suddenly -- you know,
I am looking at it from a marketing point of view --
suddenly it means something, and you start to think to
yourself: "Is this really the sort of product I should be
eating?" I suspect that is not the reaction that
McDonald's wish ordinary people should have.

  Q. When I said 50 per cent, I mean of the fat, half of the
       fat is saturated?
       A. Yes.

  Q. So the next document you look at -----

MR. JUSTICE BELL: You also make the point in your statement
that it is easier to compare different foods if you use
       the same percentage of calories.
       A. Yes, if you adopt the same convention.

MR. MORRIS: You did also, while we are on that subject, refer
to the Department of Health Dietary Reference Values?
       A. Yes.

  Q. And how do they express their recommendations?
       A. In the way that I previously referred.

MR. JUSTICE BELL: The grammes actually, it may just be that
you would make the same criticism of other suppliers, but
a lot of packaged foods in this country do give it in
       grammes, do they not?
       A. Yes.

  Q. They give it 100 grammes, then they give it total
       quantity?
       A. Yes, well, that is even more misleading.

  Q. I do not mind confessing that I have really only begun to
look at those papers with any care since I started hearing
this case, but, having done that, it is a very common way
of doing it, is it not?
       A. Yes. My opinion is that measuring it per 100 grammes
is even more misleading, in fact, because nobody eats a
100 grammes precisely of food. Together with that
measurement on the packet almost always there is an
approximate serving size, and if the serving size is 157
grammes you have to go through huge mental arithmetic.

MR. MORRIS: This may be an obvious point, but you put it in
your statement: Is the problem that you are saying is
here -- I can put it to you because it is in your
statement -- the problem is that their levels of fat in
their foods are high in any event and saturated fat also?
       A. This is plainly so.

  Q. If we just move on to the next document, which is The
Facts About Eating at McDonald's with nutrition in mind.
       A. Yes.

MS. STEEL: Document No. 8 in the bundle.
       A. This is a pretty awful document.
