Day 089 - 15 Feb 95 - Page 62

  Q. In August, I think, of last year?
       A. That is correct.

  Q. Did you go round the plant with him?
       A. No. I met Mr. North and I took him to each factory and
I left him to be guided by the technical manager of each
       area.

  Q. So far as you are aware, was there any part of the
processing operation that was concealed from him?
       A. No. The instruction was to show him everything that he
       wanted to see.

  Q. Did he, so far as you know, ask for example -- I should
have asked you this first, do you have a laboratory on the
       premises?
       A. Yes, we do.

  Q. How long have you had a laboratory on the premises?
       A. Since 1976.

  Q. What does the laboratory do?
       A. The laboratory is responsible for the microbiological
checks on food products for the veterinary and diagnostic
work, and also for doing quality control checks on poultry
       foods.

  Q. So far as you are aware, did Mr. North visit the
       laboratory?
       A. My office is in the laboratory, so we certainly had a
meeting there, although he did not ask to go through the
       laboratory in any detail.

  Q. Did he ask to look at any results of microbiological
       testing?
       A. I cannot remember whether he asked to see them or not.
I certainly know that we would have showed them had he
asked for them, but we have a lot of visitors to the
laboratory and I cannot always remember who has asked to
       see what.

  Q. Did he stop to observe the analysis being done?
       A. No, he did not spend any time in the facility.

  Q. How many microbiological tests do you do in a day?
       A. There are well over 300 tests done every day.

  Q. At what stages of the process are those tests done?
       A. Most of them are -- when I say 300, those are on food
products alone. They are checks on the food product before
       it goes to the customer.

  Q. Does McDonald's product get tested?
       A. Yes, it is tested in the same way as any other product
would be to any other customer.

  Q. Is that something you do voluntarily or is it something
       that McDonald's requires of you?
       A. They require us to do it. It is to an agreed protocol
