Day 112 - 31 Mar 95 - Page 19

       A. Yes, I did.

  Q. -- on those occasions?
       A. Yes. There was no file in the OVS's offices at the
time for temperature records for carcasses, so I opened a
new file and put those -- I designed a form where these
       temperatures were put and -----

MR. JUSTICE BELL: How many conversations did you have with
Mr. Stuart and Mr. Bob Jarrett?
       A. I had several conversations with them.

  Q. On different days?
       A. On different days and on the factory floor as well
when they were actually present when I was measuring the
temperatures, and they admitted that the temperatures were
very high. Like I mentioned yesterday, we had a very
co-operative meeting with both Stuart and Bob Jarrett the
day before I was dismissed about the carcass temperatures.
They understood my concern about them and we made, both
sides made, several suggestions of how this could be
       alleviated.

I gave them two weeks time to come down with the carcass
temperatures, subject to a reservation that the carcasses
would not be loaded in the trucks at 16, 15, 16 as they
were. I was prepared to accept temperatures that were
above 7, but not that high.

I had consulted with research workers in the Bristol Meat
Hygiene Research Institute in Langford. They said that
there was scope for some sort of judgment as far as the
temperatures were concerned, but 15 or 16 were definitely
       too high.

I also had to take into consideration in these situations
that I am actually responsible for that load. When an
inspector at the other end opens a truck and finds
carcasses at high temperatures -- because it is very
unlikely that carcass temperatures go down during the
transport -- I am held fully responsible for those.

MR. JUSTICE BELL: Is there, Mr. Rampton, any earlier equivalent
of page 102 or page 103? When I say "earlier" I mean the
       checking into the boning hall.

  MR. RAMPTON: In the process?

  MR. JUSTICE BELL: Yes.

MR. RAMPTON: My Lord, yes, we have looked at some of those.

MR. JUSTICE BELL: Yes, but for those dates.

  MR. RAMPTON: For which dates?

MR. JUSTICE BELL: One is 14th April, that is page 102.

MR. RAMPTON: There is not one for 14th or 7th; there is one for
28th March. The first one is February. My Lord, that is
