Day 094 - 01 Mar 95 - Page 48

       A. That is correct, sir.

MS. STEEL: Yes, sorry, I did mean it to be along those lines.
Would 325 carcasses an hour be something that is not
       unusual?
       A. That would be unusual.

  Q. Unusual?
       A. Yes.

  Q. Would it be less or more?
       A. Oh, less, a lot less.

  Q. What is your experience then?
       A. It will depend on the size of the slaughterhouse, the
type of the installations that they have, the type of
equipment that they have. I have seen slaughterhouses that
are processed the entire day 400 head of cattle.

  Q. Do you know whether this slaughterhouse is much bigger than
the other ones that you have visited?
       A. It is bigger, yes.

  Q. What is the maximum number in an hour that you have seen at
any of the ones that you have been to?
       A. Process maximum, 2500 head of cattle per day.

  Q. How many hours are they open?
       A. About 10.

  Q. The line would be working for all those 10 hours?
       A. 10, that line, then they usually work almost three
shifts, but the rest of -- it starts with the process at
the slaughter, then it goes on the other part is wait for
the carcasses. The plan may be in operation for 18 hours,
but the slaughter will be eight to 10 hours.

  Q. So the ones that you have been to are likely to be 250 or
more an hour, well, the largest one that you have been to?

MR. JUSTICE BELL: It would be between 250 and 310 an hour?
       A. Yes, pretty much.

MS. STEEL: Sorry, in fact, I missed a part out. After the
head and carcass are washed, what would happen then? Is
       what is written there correct?
       A. You have a better copy than I do.

  Q. You cannot read it?
       A. Mine has holes.

  Q. It is below the hole part. It is the second to last
paragraph in the left hand column?
       A. The one starting with "the head"?

  Q. Yes.
       A. Let me read it. Yes, what was the question?

  Q. Is there anything there that you would disagree with?
       A. Yes, I do. The first sentence.
