22 A. What do you mean the "minimum figures"? These are the
23 figures.

25 Q. No, these are the minimum because, with respect, those that
26 are working between 71 and 78 hours could well be working
27 over 39 hours one week and under 39 hours another week,
28 could they not?
29 A. I think it is unlikely. It may rarely, but I think it
30 is unlikely. People are fairly regular in their hours.

32 Q. So some people are working regularly over 39 hours then?
33 A. No, I said people are fairly regular in the hours that
34 they want to work. It is the odd occasion on which they
35 work the overtime. I think these figures highlight that.

39 Q. So when you say that Joanna Blackett, I think, was correct
40 to say that it was on rare occasions that people worked

45 defined as rare; is that correct?
46 A. Yes, you have to look at the numbers in reality as
47 well, not just percentages. I mean, one restaurant, the
48 first three restaurants, two in one restaurant and one in
49 the next, one in the next, in a fortnightly period, and
50 very small numbers. I think they are very small numbers.
51 I do not think there is anything there to cause us concern.
