Day 103 - 14 Mar 95 - Page 64

       A. Yes.

  Q. Or the company puts "monitor". But action should be taken
at four degrees; is that correct?
       A. Yes.

  Q. What kind of action?
       A. Well, check the equipment, leave the birds in for a bit
       longer, whatever is appropriate.

  Q. So on this page, the second to last item -- this is 8.2.95
reasons for failed audit -- it has got "told to bleep me if
temperatures rise above four degrees/five degrees - time
for action to be taken to prevent six degrees". So it
appears, in fact, four degrees is not your requirement but
       six degrees?
       A. Four degrees is our target. Occasionally, the
temperature will go up to six degrees in which case we aim
to hold birds longer in the chillers, if that is the case.

  Q. So, in fact, you do not actually take any action until it
       is six degrees?
       A. In this particular case, it is only the middle of the
process, so we do not have to.

  Q. If we go on to the next page, we can note that on this page
under "Exit Temperatures", "Action point four degrees".
"All samples must be less than six degrees". Then it says
the first one failed. So, in fact, some temperatures do
reach above six degrees but then they would fail, yes?
       A. Yes, and the way we react to that is by leaving birds
longer in the chillers. And you have to realise that this
particular set of documents I produced as a result of my
last appearance here when I simply rang through and asked
for a day's figures and I just named a day at random.
These are working documents. These are what people use to
       manage their business.

  Q. Yes, I understand that. If we move on, if we go two more
pages, we have another failed audit on the same date.
No. 3 ILC up to eight degrees. Do you know what that is?
       A. In line chiller.

  Q. In line chiller, reached up to eight degrees. The chiller
       was stopped at that stage?
       A. Yes.

  Q. For 20 minutes?
       A. Yes.

  Q. If we go five pages further on, it is headed in handwriting
       "Portions Line one - Wednesday"?
       A. Yes.

  Q. It has the temperature code on the left. Then if we move
along it says: "Correct temperature 0 to 4" and there were
a number of failures which over the page resulted in
putting them into blast. What is the "blast"? Does that
get the temperature back down again?
       A. Yes, blast chiller.
