Day 130 - 26 May 95 - Page 35

liquid shortening, or or liquid fat. If we can get a
liquid to perform for us, we could possibly get away with
not having it so hot when it is changed, which, again, will
       reduce the risk.

  Q. Just this note on AK at the bottom, we have another one
which says: "Put both hands into vat".

MR. JUSTICE BELL: I have found something similar to that in
other places, on AL and so on.

MR. MORRIS: On AN, the fourth one down, that is a similar one
as well: "While cleaning the fry vat, slipped and dipped
arm in shortening". It says: "Burns and blister",
something, "arm". Burns can result in a permanent scar,
       can they not?
       A. A deep burn certainly can. It looks as if in this
particular restaurant, once a year, one of the crew members
was sustaining a burn from the hot fat in the vat.
I suppose, putting that into perspective, it meant perhaps
each crew member every 50 years would have the same sort of
injury. I am afraid, as you know, as long as we have hot
shortening for cooking, then occasionally people are going
to burn themselves on it. I would love to be able to tell
you we could prevent all the accidents, but I just do not
really think really that is practical.

  Q. If we move on -----

MR. JUSTICE BELL: Do not forget that when you come to address
me, if you have done an analysis of this, you can give me
figures, just as Mr. Rampton has done. Unless Mr. Rampton
challenges them, there would be no need to do a recount.
You are not going to find Mr. Rampton saying: "No, well,
that was not put to someone". I take it everyone is agreed
that I can get whatever I can off the face of the document,
one way or the other. What is "LH" -- is it "HH" or "HMI"
-- no, "CM" is crew member.

  MR. MORRIS: Lobby Hostess?
       A. Lobby Hostess or Dining Hostess.

MR. MORRIS: If we look at AS, please. The second one there is
a 15 year old girl on work experience. What is work -----

MR. JUSTICE BELL: I know what that is.

MR. MORRIS: Is that from school?
       A. I really would not know.

  Q. Is that something that happens, though, children from
schools come to McDonald's for work experience from time to
       time?
       A. It is news to me. Put it that way. In fact, we have
very strict codes in terms of taking children into the
kitchen and where they can stand, and who should be with
them. I have never had experience of a 15 year old doing
anything in terms of work in one of our restaurants.

  Q. She was working on the quarter pounder grill?
