Day 015 - 21 Jul 94 - Page 48

1 for a woman at about 1900 I think we said. So, yes, it is
a principle well established, if a high proportion comes
2 in this way, then you have to be more careful about the
choice of the rest of the diet sure.
     3
         Q. Yes. I think the amount of saturated fat consumed in that
4 meal, for example, would mean that she would not eat
healthily. She would not want to eat any more saturated
5 fat at all because she is already over the limit?
              A. May well be.
     6
MR. JUSTICE BELL: That is assuming that in order to have a
7 healthy diet she has to be within the limit each day, day
              by day?
8 A. Yes. Again, I think we have already discussed this,
we would take this over a rather longer period.
     9
MS. STEEL: What sort of the things would she have to eat for
10 the rest of the day to fulfil a healthy diet?
              A. The kinds of things I described earlier on that
11 I might have had in my diet, namely, if you have -- I can
tell you again -- something like porridge made with
12 skimmed milk, banana sandwich in the morning, something
like this at lunch and a salad and perhaps some bread and
13 low fat spread, tea, coffee, orange juice, I do not think
it would be all that far from achieving the dietary
    14 recommendations for a day.

15 Q. Do you think realistically that it is more likely that
people's eating habits are centred around McDonald's, and
16 they carry on eating this type of food for the rest of the
              day?
17 A. I really have no idea. It would depend on them. As
              I have already said, if that is what people choose to do;
18 if they choose to have bacon and eggs three times a day,
choose to have pork pies, steak and kidney pies three
19 times a day, sure, but the whole thing is ludicrous.

20 Q. The list you came out with about what they would have to
eat for the rest of the day, are all of those foods going
21 to be under 20 per cent fat and contain no saturated fat
              at all?
22 A. Well, I do not carry that information around in my
head. But I think from memory there would not normally be
23 very much fat in oats. There is not any fat in skimmed
milk. There is very little fat in bananas. There is very
24 little fat in salads, and it would depend how much salad
cream, if at all, one actually used, how much low fat
    25 spread.

26 Q. You mentioned a banana sandwich. There would be fat in
              that?
27 A. There is not much fat in a banana.

    28 Q. In a banana sandwich?
              A. I do not put butter on my bread when I am making a
    29 banana sandwich.

30 MR. JUSTICE BELL: If you had a banana buttie then you would
              have butter in it?
