Day 099 - 08 Mar 95 - Page 47

  Q. Never mind.
       A. It could be a 5, yes.

  Q. It is somewhat less than a million, whatever it is.

MR. MORRIS: It is a 5 on the original document which,
interestingly enough, is easier to read.

MR. RAMPTON: It is 160,000 and the low was 56,000, right?
       A. Yes.

  Q. Can you help me -- I need some help with this -- if you
cannot help, Dr. Pattison may be able to, "Equipment swabs,
bacteria per 16 square centimetres", yes?
       A. Yes.

  Q. What do the entries "C" and "A" mean under "high" and "low"
       respectively?
       A. You need the key to determine exactly what those counts
refer to. I think, from memory, "A" is 0 to 100, "B" is
       100 to 500 and "C" is over 500.

  Q. There is not any entry for a percentage over 500 per 16
       square centimetres.

MS. STEEL: Could we ask if a copy of the key to be provided?

MR. RAMPTON: Do you have a copy of the key at McDonald's, would
       you have?
       A. Yes. I am just wondering if there is actually one in
here. If it is not in here, I can certainly check. I do
not know the numbers off the top of my head.

  Q. In fact, if we turn over the page to page 68, this is -----

MR. JUSTICE BELL: Where would one enter the percentage on the
form if they were over those figures, just at the end of
percentage over whatever box? Suppose you had a percentage
which were over 500 bacteria on equipment swabs per 16
square centimetres, where would you put the percentage in
-- just in front of the percentage?
       A. Just in front of the percentage sign.

MR. RAMPTON: So this person would have to minusculise their
       writing somewhat?
       A. These are just additional checks that we have asked
       for.

MR. JUSTICE BELL: Fair enough, but that is where you would put
it. You would put a 7, or whatever it happened to be, in
       front of the percentage sign?
       A. Yes.

MR. RAMPTON: You mean there are additional checks you have
asked for - I am sorry, I am not following that. What does
       that mean?
       A. We have been relating all the results on the
microbiological counts on the meat products to
       specifications.
