11 MS. STEEL: That is the shouting back to the people who were
12 doing the cooking to tell them what is needed and things
13 like that, is it?
14 A. Yes, maybe calling to the fry person to ask for
15 portions of fries to be ready. We used to have a procedure
16 where, in order for the person on fries to keep up with
17 customer demand, you get all the crew to call for it. What
18 would sometimes happen is with, perhaps, 10 or 12 tills
19 operating, people would have to shout to get -- to be
20 heard, and we simply scrapped that system and reverted to
21 another system whereby it becomes the responsibility of the
22 Manager at the front to ensure that the fry person
23 anticipates demand, and you can cut out that sort of
24 unnecessary, if you like, communication and shouting, yes.

26 Q. The two paragraphs below, there are just a couple of
27 sentences: "The basics such as time cards and holding time
28 usage, care of raw products and enough lettuce on Macs are
29 not in place. Both stores have been caught abusing shelf
30 life". Is that a common problem throughout stores, or is
31 it something that is -----
32 A. Every store faces a common problem of, a common issue,
33 of ensuring that they order the correct amount of stock in
34 relation to their volume, but I do not believe it is a
35 problem in every restaurant. Some time in every restaurant
36 stock will go out of date, and everybody knows what to do.
37 You throw it out. I am sure that will have occurred in
38 every restaurant in the Company at some time or other, but
39 I guess it can be a get a bit excessive and costly. I do
40 recall the mistake -- I have just recalled the mistake --
41 in Clacton, in fact, and that was a bag of onions which was
42 one day out of date in the walk in which I do not consider
43 a particularly serious matter.

45 So, for Colchester it was a particularly bad problem.
46 I once threw something like 11 bags of lettuce at a cost of
47 about a fiver a bag in the bin, having been into the
48 chiller, which is a considerable amount of unnecessary
49 waste. The occasion that I talked about with Sally, when
50 I went out the back -- excuse me, sorry, am I? Sorry, I am
51 getting ...... Is it not necessary?
