Day 197 - 07 Dec 95 - Page 55

not sacrifice quality in order to achieve your budget
     targets?
     A. I do not agree with that. Basically, what you are
being told is, it is what I call the "umbrella" there.
I am being told to do one thing, but on paper someone is
     covering themselves with another argument.

Q. Oh, so here Mr. Davis is being totally dishonest, in fact,
     and he is just writing this down for his superiors to see;
     is that right?
     A. No, it is -- you are being asked to do one thing but
something else is being done at the same time.

Q. What does he mean by the word "or agreed by you", is that
just paper or does it mean something, so far as you are
     aware?
     A. That, I mean, I never had -- you would always be
arguing about trying to get your labour that little bit
higher, trying to get a little bit more leeway within
there. My return on being agreed would, basically: "This
is what you have to got to run at". That is the level of
     my agreement.

Q. What, in fact, happens, Mr. Coton, is this, is it not,
when the Supervisor meets the Manager to set targets,
budget figures -- you know what a budget is, do you
     not ---
     A. I do, yes.

Q. It is not a fixed limit within which you must keep, is it?
     A. No.

Q. The Manager sits down with his Supervisor and they discuss
the restaurant's recent performance, do they not?
     A. Not on a -- the budgets are actually set, or they were
set, for the year, so we would get a whole year budget
actually delivered to you, and you would go through them
like that. It was not actually a case of each weak you
sat down and you reinstigated your budget settings. It
was actually set. At the beginning of the year you knew
     what your budget would be.

Q. You knew what your budget would be -- on a weekly or
     monthly basis?
     A. Monthly basis.

Q. The budget varies according to which restaurant you are
     at, does it not?
     A. It would be seasonally adjusted, yes.

Q. It is based on past performance and expected performance
in the future, is it not?
     A. Correct.

Q. That is all agreed between the Manager and his Area
     Supervisor, is it not?
     A. No. That is actually given to the Manager.

Q. What happens if you fail to meet your targets from time to
time, or what happened when you were Manager?
