     3        percentage figure.  But I do not believe anything is that
     4        ready available by which I could type in "5p pay rise?" and
     5        then it would give me a percentage.

     7   MISS STEEL:  Is that a standardised chart, the manual tracking
     8        thing, which people then fill in?
     9        A.  I think so, certainly, yes.

    11   Q.   Whose responsibility would it be to fill that in?
    12        A.  The ultimate responsibility, I guess, would be the
    13        restaurant manager, but some of them do employ admin
    14        assistants or assist managers to do that, depending on
    15        whose responsibility it may well be.

    17   Q.   Would it be a responsibility of an area supervisor to check
    18        up that it was being done, or is that just something that
    19        is left entirely up to the managers?
    20        A.  To check that it has been completed, certainly.

    22   Q.   Would an area supervisor check whether -- for example, if
    23        nobody was getting any pay increases, would the area
    24        supervisor say anything about it, or if everyone was
    25        getting a 15 pence increase, would the area supervisor say
    26        anything about it?
    27        A.  I think what it would do to me, personally, is perhaps
    28        make me go and look a bit further; that if nobody was
    29        getting anything, to go back to performance reviews, to see
    30        whether or not they were justified, certainly to make sure
    31        that people were being treated fairly.

    33   Q.   Is it something that is compared between stores?
    34        A.  Not to my knowledge, it is not, no.

    36   Q.   Is there any kind of figure, guidelines for managers to aim
    37        for?
    38        A.  Not to my knowledge, there is not.  You are talking
    39        here about the percentage of pay rises between a
    40        certain -----
