1 recycling, you said there were problems with the programme
that was set up. You said that the company could have
2 employed people to co-ordinate or manage that recycling?
              A. I did not say that. It was set up as a hypothesis by
     3 someone.

4 Q. I thought that is what you said?
              A. It may have been Mr. Rampton himself perhaps that
     5 presented that scenario.

6 MR. RAMPTON: I suggested the possibility. That is perfectly
              right.
     7
MR. MORRIS: Say, there was a store of 60 staff, what, in your
8 opinion, would be the number of people you would need to
ensure that customers recycled their packaging
     9 effectively?
              A. Well, first of all, I do not feel I can give you a
10 good answer on that, but I can tell you a couple of
things. One is because we examine a lot of possibility
11 for reusables when we work with the Environmental Defence
              Fund.
    12
For instance, I remember spending a whole day; we were
13 looking at how we could possibly use a reusable cup for
cold drinks versus a disposable one. We spent the better
14 part of two days with the Environmental Defence Fund
sitting in our lobby, watching people and discussing this
15 topic, is it possible, trying to keep an open mind, what
              can we do here?
    16
What we noticed and marked down in our notes is of the,
17 let us say, half people that eat inside our restaurants,
approximately one third of them leave the restaurant with
18 the cup in their hand. They are not finished with their
              drink.
    19
So, I guess what I am saying is that it is not just a
20 matter of employing people to clean up after people in the
lobby. The fact is that our packaging is portable. That
21 is one of the most important features from the customer
perspective; that one criteria is that the portability of
22 packaging is one of the key, actually, the functionality
is probably the most important thing our customers look
    23 at.

24 Also you have to deal with the issue behind the counter.
We would never want to be cleaning scrapes in the lobby
25 area. We want a perfectly clean environment. We would
have to do that type of work in a segregated area to
26 provide the sanitation standards that we have in our
company. I really could not give you a number or an
    27 estimate.

28 Q. You said that the EDF/McDonald's partnership was unique,
I think, or may be certainly one of the first?
    29 A. Yes.

30 Q. Where a company opened its books, yes, opened its books?
              A. That is one of the aspects that was unique; the very
