Day 296 - 07 Nov 96 - Page 33
the dangers of a high fat low fibre diet and its connection
with degenerative diseases.

During cross-examination, Professor Wheelock accepted, and
I think this was taken from page 87 of the bundle of his
statement, that there is no dispute that McDonald's
products are relatively high in fat and saturated fat.
That was on day 21, pages 30 to 31. We asked him
specifically about a typical meal of cheeseburger, fries
and shakes, and he said that that would be high in fat,
saturated fat and sodium. That was on day 21, page 31.

Professor Crawford referred to the contents of a Big Mac
and said that 48.5 percent of the calories come from total
fat, whereas the recommendations from the World Health
Organisation are a maximum of 30 percent of calories from
fat and a minimum of 15 percent... Sorry, no, not the
minimum. That is the kind of --

MR. JUSTICE BELL: The lesser percentage was the maximum from
saturated fat, was it not?

MS. STEEL: No.

MR. JUSTICE BELL: The maximum proportion of saturated fat?

MS. STEEL: No, the maximum proportion of saturated fat was
between 0 and 10 percent.

MR. JUSTICE BELL: That is why I say the lesser percentage, not
the 15 percent. Where does the 15 percent come in?

MS. STEEL: The 15 percent was the kind of 30 percent maximum
limit, was the kind of realistic boundary that they were
setting bearing in mind all the influences on people's
diets, taking commercial considerations into their view,
but there was a 15 percent maximum which was the preferred
maximum in terms of optimum benefits for people's health.

MR. JUSTICE BELL: Yes.

MS. STEEL: And Professor Crawford also said that Big Macs were
very poor providers of N3 fatty acids, which were known to
be protective. That was on day 31, page 38. I think the
whole of that is from round about there.

Dr. Lobstein referred to the British Nutrition Foundation
briefing paper, which, as you may remember, the British
Nutrition Foundation is actually an industry sponsored
organisation, food industry sponsored organisation. That
briefing paper stated that the restricted range of menu
items, the choices of foodstuffs and the cooking methods
used may mean that the meals are high in fat. That was on
day 32, page 36.

Dr. Barnard stated that McDonald's products were high in
fat, total fat and saturated fat, they were high in
cholesterol and low in a number of vitamins, and he said
that a cheeseburger was 45 percent fat, 45 percent of
calories from fat. That was day 33, page 7. That the food
