Day 080 - 30 Jan 95 - Page 28
are the top quality butcher shop meat, or that McDonald's
takes the top quality butcher shop meat from steers and
heifers or not?
A. McDonald's takes from steers and heifers the complete
forequarter and the hind quarter flank, and that is top
quality meat.

Q. So you are saying that McDonald's uses from the steers and
heifers meat that would sell in the butcher shop?
A. Oh, absolutely.

Q. At 10 times the price or something?
A. No, no.

MR. JUSTICE BELL: No. I am taking there to be a difference
between top quality meat and prime cuts. I could imagine
there are cuts which are not prime but are, nevertheless,
top quality meat.

MR. MORRIS: So they are not the prime cuts of top quality meat?
A. No, prime cuts are the rump, the sirloin and the cuts
of that nature.

Q. So which bits are the not top quality butcher shop meat
that come from steers and heifers?

MR. JUSTICE BELL: Are there any?
A. No, there are not, sir. I mean, every piece of meat,
sir, that comes from a steer or heifer is good quality
meat. I mean, you get the wing rib coming out of the
forequarter and, I mean, you can take the brisket out of
the forequarter; you can take the chuck meat out of the
forequarter, but each has a different task in life, whether
you are going to make a stew or a roast.

MR. MORRIS: OK. The cow meat is not top quality butcher shop
meat, is it?
A. Shop cows are not top quality -- can I use a Smithfield
term? They are not "West End meat".

Q. So, in fact, McDonald's whole beef content of their burgers
is the meat that butchers shops do not sell?
A. Oh, no, not at all -- just the opposite, just opposite.

MR. JUSTICE BELL: Where do we come to that from?

MR. MORRIS: It has just struck me that cow meat that they are
using is not sold in butcher shops and the -----

MR. JUSTICE BELL: What do you say about that?
A. Well, cow meat that we buy is sold in butchers shops.

MR. MORRIS: You just said that it was not?
A. No, I did not. I said it was not "West End meat". It
is all a matter of class, grade price.

Q. Which parts of -----

MR. JUSTICE BELL: Just pause and think where you are actually
going on this because we have covered an awful lot of
