2 Q. It is a queer way to give the date but there it is. My
3 first question is, how is this information collected?
4 A. What happens is that the individuals categorise
5 themselves into whatever ethnic category they wish as well
6 as into gender and so on. Then they put that on to a form
7 and that is input on to the computer by members of the
8 Human Resources Department and then a report is generated.

10 Q. This is, therefore, a computer printout?
11 A. Yes.

13 Q. If we look at the first page this, I take it, is Operations
14 only -- is this the whole Company?
15 A. The first page you have asked me to look at is
16 management only, so that is up to the Restaurant Manager.

18 Q. I see. So that, inevitably, is Operations?
19 A. Yes.

21 Q. Up to General Manager, actually, No. 22 the code is General
22 Manager. Can you tell us briefly what a General Manager is
23 as opposed a Store Manager?
24 A. A General Manager is someone who works in one
25 restaurant, who has usually more experience and is of a
26 higher grade, one grade up from the Restaurant Manager,
27 whose pay and performance is linked -- no, their bonus is
28 linked to the performance and profitability and results of
29 the restaurant in terms of quality of service and
30 cleanliness.

32 Q. So in terms of his remuneration or, as the Americans call
33 it, compensation, is profit sharing, is it?
34 A. Kind of.

36 Q. In a manner of speaking?
37 A. Yes. It is a sort of performance related bonus is how
38 I would describe it.

44 A. Yes, and linked to the results of the restaurant.

46 MR. RAMPTON: If we look at the two columns: On the left, you
47 have the ethnic origin, black, which is subdivided into
48 three, Africa, mid African and Other; then Asian, Indian,
49 Chinese and Other; white, European, Other and unknown.
50 Then you look across -- I am particularly interested,
51 Ms. Mead, in categories 18 and 22. Do you see?
