    12   MR. MORRIS:  So you cook your burgers at 155 degrees Fahrenheit
    13        for 15 seconds?
    14        A.  For a longer period of time.

    17        A.  It exceeds that.

    20        A.  The length?

    22   Q.   Well, I mean, we have gone into this in this country in

    25   MR. JUSTICE BELL:  Do you know whether McDonald's has a
    26        specified time for cooking -- do you have 10 to a pound and
    27        quarter pounders in the States the same as this country?
    28        That is universal, is it?
    29        A.  It is very close, yes.

    31   Q.   Is there a recommended minimum temperature for the minimum
    32        time for cooking that you know?

    34   MR. MORRIS:  For the 10 to a pound?
    35        A.  For any burger it is the same.  It is 155 degrees.  We
    36        exceed at some point during the cooking of the patty, a
    37        short period of time it exceeds, highly exceeds that
    38        temperature.

    40   MR. JUSTICE BELL:  But do you know what they are?  If you do not
    41        then say so?
    42        A.  OK.  In this country I do not.

    44   Q.   Not in this country, the UK.  All I am enquiring about is
    45        whether you know of a McDonald's standard to cook the 10 to
    46        a pound patties for a minimum of X seconds at a minimum of
    47        X degrees Fahrenheit?
    48        A.  We do.  Our specifications require that we cook the
    49        quarter pounder to a 155 degrees after.  After one minute
    50        from that is taken from the grill.

    52   Q.   But you cook it at that temperature for one minute? 
    53        A.  No, sir. I guess I did not explain myself very well.
    54        We cook it to a -- the way we check the temperature is one
    55        minute after we take it from the grill.  One minute 50
    56        seconds later we check the temperature.  That temperature
    57        should be 155 degrees.

    59   MR. MORRIS:  This is the quarter pounder.  Is that the same for
    60        the 10-1 or is it different?
