Day 104 - 15 Mar 95 - Page 20
sheet. Action taken: Called clean contractor (MB Lucas)",
yes?
A. Yes.

Q. What would that mean?
A. It means that he has identified -- "he" being the
supervisor of the department -- something in the cleaning
which does not entirely satisfy him and he has had a word
with the contractors about it.

Q. How often are the premises actually cleaned?
A. The boning room twice, because there is an evening
shift. It is cleaned after the day shift and then cleaned
after the evening shift at the terminal cleaning, as it is
described, but there is a continuing clean and tidying
process going on.

Q. I was going to ask you, do they do any cleaning in any part
of this plant as they go along?
A. Yes, indeed.

Q. They use their knives or whatever, do they do anything to
clean up the knives?
A. Their are individual knives are cleaned and sterilized
continually.

Q. At the bottom of this page left-hand side it says: "VC12
not working, called maintenance", what does that mean?

MR. JUSTICE BELL: That is the thing you have just looked at?
A. Yes.

Q. Is the VC12 the machine?
A. Yes, that is the vacuum packing machine. That is the
one that the cross is against.

MR. RAMPTON: That reflect the cross?
A. Yes, I am sorry, I did not make that clear.

Q. Please turn over to 16 which, as far as I can tell, relates
to the same date. There is no 15, my Lord. It seems to
have got missed out. There seem to be, am I right, for
each the dates we have, Mr. Bennett, five sheets?
A. Yes.

Q. This is called "Boning room controls - Intake Quality
Checks"?
A. Yes.

Q. All Quarters, so that is forequarter and hindquarter, is
it?
A. Yes, anything that goes into the boning room at a given
time.

Q. That first block is called "Visible Contaminants"?
A. Yes.

Q. "Blood clots, faecal contamination, hide, oil, rust
specks", something I cannot read, what seems to be a blank.
