    26   MR. JUSTICE BELL:  Yes, certainly.  (Handed to the witness)

    28   MR. MORRIS:  On page 109 -- this is just for the record -- this
    29        is the World Health Organisation Report 1990, "Diet,
    30        Nutrition and Prevention of Chronic Diseases".  Just
    31        before we go to any specifics, what is your view of the
    32        kind of advice and analyses that the World Health
    33        Organisation and its status as an authoritative body?
    34        A.  The World Health Organisation pulls together groups of
    35        people who are expert in their field.  Part of the problem
    36        of reviewing evidence is that we all in science tend to
    37        say our own bit in the scientific literature viewed from
    38        our own perspectives.

    40        The function of a body like the World Health Organisation
    41        is to bring together people from different disciplines and
    42        from different countries to get a distillate of the wisdom
    43        that is current.  I think that says it all.  This is a
    44        distillate of the contemporary wisdom that you can extract
    45        from a body of people who will know what they are talking
    46        about.

    48   Q.   On page 109 under the heading of "Total Fat," these are
    49        the goals they are recommending -- is that correct ---
    50        A.  Yes.

    52   Q.   -- to the world?  Then their lower limit they give for fat 
    53        as a contribution to energy is 15 per cent, lower limit,
    54        and upper limit 30 per cent as an interim goal.  Does that
    55        mean that they feel it should be, in fact, lower than
    56        that?
    57        A.  I suspect that it does.  I think they obviously want
    58        to have the total fat intake down to below 30 per cent is
    59        really what it means.
