5 A. Each is subdivided. You need two OCLs completed on the
6 same area, passed on the same area. There will be maybe
7 two or three sections to that class.

9 Q. There is not an OCL in health and safety, is there?
10 A. There is not, no.

12 Q. There is one in hygiene though?
13 A. There is a hygiene OCL, yes.

15 Q. How long has there been a hygiene OCL? It is a more recent
16 one, is it not?
17 A. I think it is probably more recent than the grill one.
18 It has been around for a while.

21 A. Possibly a bit longer.

26 Q. Why is there not one in health and safety?
27 A. I think the health and safety ones are covered on the
28 back of each test. I currently have scrambled eggs still
29 open which is sheet 11. Flip over the page you will see on
30 every OCL you get two health and safety questions. In this
31 instance what safety equipment must be worn when filtering
32 shortening and what three things must be used to wash your
33 hands thoroughly. Our feeling on this is that health and
34 safety should be part of everything you do and is not
35 separate or away from it. I think on hygiene we would
36 probably go the same way. We do not have the specific
37 hygiene OCL, but we incorporate it into everything we do.
38 We incorporate it into the OCL. We do not suddenly stop
39 talking hygiene. We are talking about the procedures of
40 hygiene, health and safety altogether. Be by law we have
41 to do the fire health and safety test when people start in
42 the company. I think that covers the test part of that
43 area, and why the hygiene OCL came out for.

45 MR. JUSTICE BELL: My soft-centred omelettes would fail
46 hopelessly, would they?
47 A. I am afraid so, yes. We would probably go out of
48 business very quickly if we were selling your soft-centred
49 omelettes.

51 MS. STEEL: Most of the health and safety ones appear to be
52 about fires?
53 A. I am just going through what you would do if one of the
54 compactor guards was missing. Filtering, lift shaft,
55 I think from the ones I can see there does not seem to be a
56 particular direction towards fire. Obviously, fire is a
57 hazard and people can get burnt by fire happening just as
58 they can get burnt from filtering or any other incident.
59 It is important that our crew members and everyone in the
60 restaurant is equally aware of fire hazards as they are of
