Day 081 - 31 Jan 95 - Page 44
A. It could.

Q. So, if an inspector sees problems, they normally inform the
slaughterhouse what the problems are and they are given
time to improve matters, yes?
A. Well, you understand, I am not a practising EHO. I am
talking about a hypothetical situation but because in most
cases and, particularly, in larger places there will be
staff on duty all the time. In the case of the premises
I went around, there is an abundance of meat inspectors and
veterinary surgeons who will be looking at these on a
day-to-day basis and, no doubt, they will be picking things
up and requesting that they be done immediately rather than
by reference to a licence. So, it is an on-going process;
it is not a once a year or once every six months occasion.

Q. Can I refer you to a document? It is in the Jarret's
documents. I do not know if the witness has copies of the
Jarret's documents?

MR. RAMPTON: My Lord, it is underneath the peacock coloured
files. It is not a yellow spine. It has a yellow label
and it is called "Jarret".

MR. MORRIS: If you could, please, to turn to page 71 in that
document? Do you know what this is, this document, this
kind of document?
A. It says it is a laboratory report.

Q. Is this a general hygiene check of plants? If you look
over the page, it also continues over the page.
A. I presume that is what it is, yes.

Q. Have you seen documents like this before, not for Jarrets
but for slaughterhouses?
A. Not in this precise form, but this is just a report of
-- just a microbiological examination.

Q. Of a whole plant ---
A. Yes.

Q. -- or significant parts of it? Do you know what the
gradings A to E represent? I mean, in terms of are they
standard gradings used to grade hygiene?
A. I have no idea.

Q. You do not know? You have not seen those before?
A. No.

MR. RAMPTON: I must say, my Lord, I do not have any evidence
that those are gradings at all.

MR. MORRIS: It says "grade" at the top of the column, so
I presume it is gradings.

MR. JUSTICE BELL: Yes, the samples are listed under heads but
it has "grade" ---

MR. MORRIS: Can you see the gradings on the right-hand side?
A. Yes.
