Day 103 - 14 Mar 95 - Page 39

Q. When the bins arrive, is it just the meat or ---
A. It just has meat on it.

Q. -- it is deboned?
A. It is just beboned meat.

Q. So that would be about how many kilos per carcass, one
kilo, two kilos, without the bone?
A. Without the bone it is possibly one kilo per carcass.

Q. That would make it 150 bins a day then that McDonald's
would have some part of. So, of the 300 tests per day that
you said, microbiological tests, there would be one for
each bin, would there?
A. Not every bin is tested. If it is coming from one
supplier, we take one sample per supplier, I mean, one
aggregate sample per supplier.

Q. So if there was, as we have seen on some of the charts, 64
bins of GR light, or something, then one of those bins
would be tested?
A. Yes, I mean, you would not sample every one certainly.

MR. RAMPTON: That was in a month.

MR. MORRIS: Sorry, that was in a month.

MR. RAMPTON: That was August. Try 48.

MR. MORRIS: That is a very helpful suggestion. Thank you very
much, Mr. Rampton.

MR. RAMPTON: That was in a week.

MR. MORRIS (To the witness): So if 48 arrive within a week at
GR breast, how many of those would be actually tested?
A. I honestly cannot tell you.

Q. Would it be one day or one for that week?
A. There would certainly be one tested for every day.

Q. From each supplier?
A. From each supplier.

Q. Just going back to the listeria matter, just to clarify,
the listeria on vegetables, that is washed off in washing,
is it not?
A. Listeria, most of it will be washed off off vegetables.

Q. It will be the soil on it that would be contaminated?
A. Yes.

Q. But you cannot wash off listeria from a chicken carcass;
that sounds like a daft question but you cannot do that?
A. No.

MS. STEEL: Just on the subject of listeriosis: It is very hard
to trace, is it not, if a patient suffers as a result of
eating chicken contaminated with listeria, it would be very
