1 Then on the facing page, 193, there is a short list of
2 just a few reports, conclusions of reports, including the
3 one on the left and also including American Cancer Society
4 in 1985. So that is quite a convenient resource.

6 The ACS recommendations in 1985, for example, say: "To
7 reduce risk of cancer or specified cancers, cut down total
8 fat intake, eat more high fibre foods, include foods rich
9 in vitamins A and C, include ... (reading to the
10 words) ... nitrite cured foods moderate". Those are
11 really, essentially, the same recommendations that were
12 made in 1982 by the National Academy of Sciences.

14 MR. MORRIS: Right. If we move on to the next document which
15 is the World Health Organisation Report which has been
16 looked at. This was referred to behind Dr. Arnott's
17 statement, I believe. In terms of the section that we
18 have already looked at in court, and you have provided us
19 with some further sections which have been served.
20 A. Which report are you referring to now?

22 Q. This is the Diet, Nutrition and Prevention of Chronic
23 Diseases 1990.

26 morning goes in the middle of the sections that are behind
27 Dr. Arnott's statement.

30 want to draw the court's attention to ---
31 A. Yes. I think.

34 A. Yes. I think, without wishing to be invidious, I
35 would suggest that this is a report which is really
36 particularly central to this case, not because I am
37 suggesting that the scientists responsible for compiling
38 this report were of a higher quality than scientists who
39 compiled other reports, but, rather, because of when the
40 report was compiled and published (which was between 1989
41 and 1990) and also because it is a report whose dietary
42 guidelines are for the whole world, referring to pages
43 that are not submitted to the court but just as a matter
44 of information, the Chairman of the Committee who produced
45 this report happens to be British -- he is a professor
46 Phillip James who is a director of the Rowett Research
47 Institute in Aberdeen -- but also there are people serving
48 on the committee, for example, from India, from Italy,
49 from China, Canada, Australia, Africa and elsewhere.
