Day 127 - 23 May 95 - Page 49

       A. A day I believe it is now, a full day.

  Q. This is right at the beginning before the 21-day
probationary period is started, is it?
       A. Yes, they have to go through orientation before they
       are allowed to work.

  Q. A slightly different question, Mrs. Barnes, and then we can
put this file away as well. If you turn to tab 5, please,
at page 298 and now we have moved on to June 1992, the
bottom of the page 298, 59 of the original document, there
are the words: "Definition of 'hustle'. 'Hustle'
efficiency gained from safe and proper use of the three
       C's - communication, co-operation and co-ordination. IT
DOES NOT MEAN RUNNING OR RUSHING", right?
       A. Yes.

  Q. Has that definition appeared in subsequent editions of the
       Crew Handbook?
       A. As far as I know, yes, that is what the definition was
       changed to that year.

MR. JUSTICE BELL: Keep your voice up, please.
       A. It is certainly the definition that we have used since.

MR. RAMPTON: Right. I can tell you, so we do not all have to
look back, that this is the first time that that or any
definition of "hustle" appears any the Crew Handbook
       itself.
       A. Yes.

  Q. Do you know what the reason was why that definition should
appear for the first time in the edition which was
       published in June 1992?
       A. Yes, at the end of 1991 when we were having our initial
discussions with the health and safety executive, one of
the things that they raised with us, the Environmental
Health Officer had expressed concern about, that our then
definition and speed and efficiency really led to different
interpretations in different restaurants. They were
worried that some restaurants had interpreted it as rushing
and running. So this definition was agreed with the then
three regional managers as being a more specific definition
that had more of the spirit of what we meant by "hustle"
and, obviously, included the word "safety" as well. So
that was agreed and sent out in memo format as well as
being included in here even before the HSE reported back to
       us.

  Q. Who actually wrote this definition -- a committee or a
       person?
       A. I seem to remember it was myself, Bill Tindale who
headed up training then and Kevin Haag which was Chief
       Operations Officer.

  Q. We will come to the HSE report later, as I said this
morning. Can you put that one now away, please, that is
volume XI, and return to volume XIII. Again this is to be
found, though it is not directly relevant to the Mark
Hopkins' accident, but these things are to be found in that
