3 I just want to read this to you, then tell me what you
think of it: "People eat for pleasure as well as
4 nutrition. When you keep portion sizes reasonable and
understand your own dietary needs. It is easier to eat
5 the foods you like and stay healthy. The key is balance,
variety and moderation." "Some people seem to approach
6 nutrition as though they were entering a mine field where
danger lurks at every step. But individual foods are
7 neither nor bad. It is how and what you eat over time
that counts. A healthy meal plan is moderate
8 in fat, salt and sugar, but moderation does not imply
no fat, no salt, no sugar or no fun. The point is to
9 avoid too much of any of these items in your total meal
plan, and not to be overly concerned about their amounts
10 in any single food item or in any single meal. Keep sight
of the big picture which is your overall eating pattern.
11 No individual food can meet every nutritional goal all by
itself. Recommended guidelines for fat, salt and sugar
12 refer to averages for your entire meal plan. Just follow
these basic principles: Balance: Select foods from all
13 major food groups. How much depends on your individual
calorie and nutrient needs. Variety: Enjoy different
14 foods within each food group. Variety ensures a
nutrient-rich eating plan that is flexible land
15 interesting. Moderation: Keep serving sizes in check.
With moderation there is no need for elimination."

As a piece of advice about how to run one's diet, what do
17 you think of that, Professor Wheelock?
A. I could not put it better myself.

Q. Then if you go over to the other side of the fold out,
19 which is page 64 of the file, we see the dietary guides
for Americans recommended by the US Department of
20 Agriculture and Department of Health and Human Services.
We can all read those. I am not going to read the text.

"Eat a variety of foods; maintain healthy weight; choose
22 a diet low in fat, saturated fat and cholesterol; choose a
diet with plenty of vegetables, fruits and grain
23 products. Use sugars only in moderation. Use salt and
sodium only in moderation. If you drink alcohol beverages
24 do so in moderation". A somewhat bossy injunction, that
last one, one might think!
