2 Q. They may might have been in over the weekend?
3 A. The carcasses would have been there over the weekend,
4 so I would assume that you could safely say they were well
5 below 7 at that stage.

7 Q. Then as the week builds up?
8 A. The carcass temperatures tend to go up.

10 Q. In theory anyway, whatever I decide about what is happening
11 here in so far as it may be relevant at all to an issue
12 I have to decide at the end of the day, it would be
13 possible for things to build up and for carcasses to be
14 moved out of the chiller earlier rather than later?
15 A. Yes.

17 Q. If that did happen, then the temperature might not have got
18 down to 7 degrees centigrade. All that is, in theory at
19 least, possible?
20 A. Yes. We in particular recognised the problem at
21 Jarretts and we discussed at a meeting, like I said
22 earlier, with Stewart and Bob Jarrett where we tried to
23 find solutions to the problem of having to move the
24 carcasses out of the chillers early since there were new
25 carcasses coming in and we had to empty them.

32 A. Yes, as far as I can remember.

37 complaints on the subject were made?
38 A. Yes, by that time we had discussed it in several
39 meetings.

41 Q. Well, the first two days that we looked at Mr. Rampton
42 focused on was the 28th February and 28th March; they were
43 both Mondays.

45 MR. RAMPTON: With respect, if Mr. Morris is going to give
46 evidence about dates he will find it is a futile exercise
47 because, for example, when one goes through the whole year
48 one finds a whole variety of days of the week.

50 MR. MORRIS: As far as the first ones before your complaints are
51 concerned, it is only Mondays. So can we draw any
52 conclusions from -----
