7 per cent part-time to 20 per cent full-time; would you be

9 A. I could not comment.

11 Q. -- greater -- well, do you know whether you were typical of
12 the UK or whether you had a greater percentage of
13 part-timers?
14 A. Definitely in the summer period because of the nature
15 of that restaurant being a lot busier than other stores, it
16 would have a necessity for more part-time people.

18 Q. There were not many people who stayed there for a long
19 time?

21 MR. JUSTICE BELL: Do not look at your statement because that
22 does not help you about that. What is your recollection,
23 if you have one about that?
24 A. In terms of, what, people leaving?

26 Q. Yes, people staying or coming and going?
27 A. We would lose a few people, yes, but there would also
28 be a lot of people there that had been there for quite some
29 time - one, two, three, four, five years.

31 MS. STEEL: What do you mean by -- how many people have been
32 there five years; do you know?
33 A. Not off-hand, no.

35 Q. What do you mean by, then, in your statement that you did
36 not have a large number of permanent staff?
37 A. That is full-time staff. You have part-time people as
38 well in the -- that make up the payroll. You are going to
39 get people joining you for the seasons, especially, as
40 I said earlier, the summer.

42 Q. Right. A lot of people will just be taken on for the
43 summer period and then they would leave at the end of that?
44 A. Yes.

46 Q. Basically, you did not want them any more because it was
47 not -- the store was not busy any more?
48 A. It is not a question of not wanting them any more.

51 A. That is, perhaps, one way of saying it, but, on the
52 other hand, it is -- they are hired for a summer period and
53 many would stay. It is for the benefit ----

55 Q. So when they were taken on they were not necessarily told
56 then that this is just for the summer period?
57 A. Yes, you are going to have people who are going to join
58 you for that specific reason, who want to come and work for
59 you for a short period of time.
