2 A. That is right, yes.

4 Q. -- are you saying it is on a part of the grill which is
5 cooler than it should be for cooking?
6 A. Yes. But, also, if the grill is not being used
7 correctly, then it does not get a chance to reheat, which
8 is what happened if they did a sear lay.

10 Q. What does that mean?
11 A. That meant that instead of laying the meat every time
12 you turned the previous group of meat, you actually laid it
13 down after you had seared the first set, so you were
14 cooking it a lot faster; the grill got used too much, or
15 too quickly; the same part of the grill was being re-used
16 before it had a chance to reheat.

18 MR. MORRIS: On the next page, which is page 4 at the top
19 righthand corner, the second paragraph is about environment/index.html">litter
20 patrols; yes?
21 A. Yes.

23 Q. Can you just read it to yourself and say if there is
24 anything else you would like to add, or explain why this
25 was the situation, or whatever.
26 A. The environment/index.html">litter patrol in the store that I worked at was
27 seen as a joke, really. The Managers would laugh about it,
28 because you were told, like I said here, to only -- you
29 were supposed to pick up all environment/index.html">litter around the store, but
30 they only picked up McDonald's environment/index.html">litter, and they used to
31 laugh about it and say that it was not a serious intention
32 of theirs to clear all the environment/index.html">litter, it was just something
33 used to impress the local council or the community with.
34 They were not serious about it. New people got laughed at
35 if they came back with a really big bag full of everyone
36 else's environment/index.html">litter, because it was as if they had missed the
37 point. I suppose you could say it was a cosmetic
38 exercise.

40 Q. Was this just something that happened because the crew did
41 not want to do it, or what?
42 A. No, this what the managers -- like I said, the managers
43 decided what the environment/index.html">litter patrol was to be and told you what
44 to do, so you were in no doubt that they did not consider
45 it a serious thing to do. Some of the things in the rule
46 book, I suppose, were seen as tongue-in-cheek, and this was
47 an example of one of them.

49 I think, as well, sometimes the environment/index.html">litter patrol was used as a
50 punishment. If it was freezing cold, and someone had been
51 considered to be cheeky or something, then they would be
52 sent out to do a environment/index.html">litter patrol and told to take a certain
53 amount of time.

55 Q. In the next paragraph, you talk about the severity of the
56 management team constantly changed, and this would enable
57 managers to discipline or sack staff who were breaking
58 minor rules which had not previously been enforced. Have
59 you any examples of this that come to mind?
60 A. Well, I think that there were loads of examples
