Day 080 - 30 Jan 95 - Page 32

       A. Yes.

  Q. That was the number of cows, steers and heifers killed per
       year for McDonald's burgers?
       A. Of the British kill, yes.

  Q. That is just the British cattle?
       A. I have the beef figures here. They are a matter of
       fact.

  Q. Perhaps you would like to read them out?

MR. JUSTICE BELL: Take them steadily, please, Mr. Walker?
       A. Beef: 59,751,272 pounds, equivalent to 331,951 head of
cattle, equivalent to 6,915 head per week. The total UK
beef kill is 3,120,000. Of our beef usage 76.9 per cent
last year was of UK origin, therefore, 76 per cent of the
total UK kill is 255,270 head or 8.1 per cent of the total
beef slaughterings in the United Kingdom.

MS. STEEL: When you say 8.1 per cent, is that the beef used by
McKey's or is that the beef used by McDonald's in the end?
       A. That is for McDonald's.

  Q. That is McDonald's?
       A. Yes.

MR. JUSTICE BELL: All those figures are McDonald's, are they?
       A. Yes, sir. There is something else -- I must explain
this to you -- to get the number of cattle killed, you must
understand that we only use the forequarter and the hind
       quarter flank.

MS. STEEL: That is what I was coming on to.
       A. To get the number of forequarters and the number of
hindquarter flanks we require you need that number of
       cattle.

  Q. With the pigs, do you use all the meat from a pig or just
       certain parts?
       A. No, by coincidence, it is very, very similar. You use
the complete fore-end of the pig and the belly of the pig.

MR. JUSTICE BELL: That is, essentially, sausages and bacon, is
       it?
       A. Yes, sir, but the sausage is not the traditional
English sausage. It is shaped like a beef burger. It is
round and flat. It is not a sausage in a skin.

  Q. Then it is not a sausage, in my opinion.

MR. RAMPTON: My Lord, it is in Scotland.

MR. JUSTICE BELL: I am English. So I must get what I think of
as a sausage out of my mind?
       A. Yes, sir, think of a hamburger. It is the same. It is
round and flat and it is pure pork.

  Q. It is a patty?
       A. Yes, it is like a patty, sir.
