6 Cab Hygiene", "Checked and O.K." Whose responsibility is
7 it to check the hygiene of the trailer and its cab?
8 A. The Golden West driver would make those checks.

10 Q. Then it says: Pre-Departure temperatures, "centre" and
11 "rear" I can read but the word on the left-hand side
12 I cannot make out?
13 A. "Host".

16 A. They are just the different compartments in the
17 vehicle. We have multi-temperature vehicles, so we can
18 deliver ambient goods, frozen goods and chilled goods on
19 the same vehicle. They are just temperature settings of
20 the chilling units in the various areas of the vehicle.

23 A. Host, yes.

26 attached to the trailer?
27 A. I guess so, I do not know why they -----

37 arrival time. It has two separate columns for "frozen" and
38 "chilled". Frozen must be, it seems, where the products'
39 temperature is measured on the vehicle 18 degrees plus or
40 minus 2 degrees, and chilled to 4 degrees plus or minus one
41 degree. So, we can run from plus one up to plus five by
42 that, can we?

45 Q. Chilled, yes. You can go from minus 20 to minus 16 under
46 frozen?
47 A. Anything above minus 16 is unacceptable on the frozen.

50 Q. Yes, you are quite right. Minus would be meaningless. It
51 says plus two. Who takes that temperature on the vehicle?
52 A. The restaurant employee will take that. They sometimes
53 have a dedicated delivery person. It may just be a shift
54 running manager. It may be a training squad. It depends
55 who is allocated to take in the delivery.

58 temperature, I take it, is therefore irrelevant?
59 A. Yes, they would be things like packaging materials,
60 foam clamshells and so on.
