Day 067 - 15 Dec 94 - Page 33

MS. STEEL: The number in the middle of the page at the bottom,
what is the page number of that?
       A. Oh, 5. Is that the specification?

  Q. Yes.

MR. MORRIS: It is one of them, yes.
       A. They all have basically the same. It says in the
fourth line, it says: "Manufacturers must comply with all
applicable food laws and regulations". The Humane
Slaughter Act is part of those laws and regulations.

  Q. Right, so?
       A. And it also says when doing business outside of the
       United States, the same thing.

  Q. Where does it say that, sorry?
       A. It also says prior to that that it includes when doing
business outside of the United States.

MR. JUSTICE BELL: I think I will break off there. I would like
you to give it a bit more -- if you look at tab 4, for
instance, there is a raw material specification to McKey
Food Service Limited. On page 44 there is a section pre
and postmortem treatment, which refers to stress,
       layeraging.

MS. STEEL: Yes. I think document 4 only relates to the UK.

MR. JUSTICE BELL: Yes, it does. (To the witness): What you
are being asked -- you see, even that is specific to stress
and layeraging rather than the generality of the Slaughter
of Animals Act or the Slaughterhouse Hygiene Regulations
1979 -- is where in the documentation there is something
which tells the supplier that there must be a full
compliance with the Humane Slaughter Act.
       A. We are missing a page that will include the Quality
Assurance specification. That is a common page for all of
       our products.

  Q. On which page?
       A. I do not see it here. But we have a page.

  Q. That is why I have suggested we break off now, among other
reasons. If you are saying there is another document,
apart from No. 5, which says that manufacturers must comply
with all applicable food laws and regulations ----
       A. Yes, and this document also states that all
manufacturers must comply with all local and government
regulations, and the Humane Slaughter Act is part of those
regulations. Our suppliers certainly understand that.

MR. MORRIS: Can I just ask a final question?

  MR. JUSTICE BELL: Yes.

MR. MORRIS (To the witness): In other words, apart from that
mention in small print at the bottom of the specification,
McDonald's does not have any animal welfare policy or it
