Day 094 - 01 Mar 95 - Page 72

       A. That is correct.

  Q. So if a grill was not reaching the minimum standards, that
would have to be immediately -- if it was not reaching
minimum temperature, for example, set by -----

MR. JUSTICE BELL: Mr. Morris, let me put it to him.
(To the witness): What is being suggested is that it is
safer -- however safe it was before leave to one side -- to
test the internal temperature, quite apart from visual
checking for pink meat, to test the internal temperature a
certain time after it has come off the grill, because that
way, by doing your spot checks every now and again, you
know that the grill is working to get it up to a certain
minimum temperature over a certain period of time; whereas
before, if you just had X degrees for Y seconds, if your
grill for any reason was not working just as it should, you
might not have been reaching the required number of degrees
for the required number of seconds.
       A. I cannot guarantee that it is safer. We have been
doing research. Sometimes we find the new piece of
equipment is safer, sometimes we find the other piece of
equipment is safer. It is, however, a more accurate way of
measuring that. I can guarantee that.

MR. MORRIS: So the internal temperature which you are now
testing, the 155 degrees Fahrenheit minimum, has that
increased from the previous times? Is that temperature you
are setting as a minimum standard greater than it was in
       the past?
       A. I do not know. I have not been -- I am not aware of
any changes in temperatures. Since I have been with the
company it has been 155 degrees to 160.

MR. JUSTICE BELL: How long will your matter take, Mr. Rampton?

MR. RAMPTON: I just want to give your Lordship and the
       Defendants some documents.

MR. JUSTICE BELL: Do not embark on it now. How long will it
       take?

  MR. RAMPTON: About two minutes.

MR. MORRIS: Is it possible to carry on because we are concerned
we are not going finish tomorrow. We want to make sure we
do finish tomorrow, basically. I think we will but just if
we can get another five minutes in.

MR. JUSTICE BELL: Carry on. If need be, you can go longer than
that. Just bear in mind that Mr. Rampton needs a few
minutes to talk about documentation. Unless anyone has
pressing matter, we will press on to half past four or just
after. Then we will deal with Mr. Rampton's matter and
then we will break off until the morning.

MR. MORRIS: I do not think we have many more hygiene questions.

MR. JUSTICE BELL: See if you can finish those.
