16 asking about audits on slaughterhouses. Do you actually
17 keep checks of all the slaughterhouses that supply you or
18 that supply your suppliers?
19 A. "Checks" -- can you clarify?

25 A. In what sense, records you mean?

27 MR. JUSTICE BELL: No, you were asked what audits involved and
28 you gave an example, going to a place with or without a
29 list and looking to see that things were going right. You
30 are being asked if you do the same sort of thing with
31 regard to slaughterhouses?
32 A. OK. It will depend on the country. So, it goes to
33 their place, countries that we do, places that we do not,
34 and the frequency will depend again on what we feel the
35 priority should be.

37 MS. STEEL: What about in the USA, for example?
38 A. Yes, we do.

40 Q. In all the slaughterhouses that supply all your suppliers?
41 A. We have auditor. I can give you an example of this
42 year, ourself in co-ordination with our suppliers.

44 Q. So you do not actually go there yourselves?
45 A. We do sometimes. We do develop the audit forms. We
46 take advantage of our supplier resources. We leverage
47 those resources. You have to understand there are hundreds
48 of slaughterhouses in the US. We do not have the resources
49 alone. We relied on our suppliers because they are also
50 interested, and they are part of our partnership so we work
51 with them. We work also with the trade associations. We
52 have worked with their consultants to first develop the
53 audits, the audit form, the content of it, the verification
54 process. Then we relied on our supplier's resources and
55 all the resources I mentioned before to audit every single
56 slaughterhouse that we have in the US.

58 Q. So you produce the form; you give it to your suppliers and
59 you trust them to do the auditing for you?
