several critical developments which have led to renewed
3 interest in nutrition with particular emphasis on healthy
eating.

First, there has been enormous success in the
5 industrialised world in controlling infectious diseases as
the major causes of death and disability. As a
6 consequence, the predominant diseases now are
degenerative, such as heart disease and certain cancers.

Second, research has established the causes of these
8 diseases and now there is convincing evidence that diet is
a key factor in their development."

Would you broadly agree with that still?
10 A. Yes.
11 Q. Just one of the headings on page 4 of this document: "The
most effective change is to reduce the proportion of fat
12 in the diet." And then: "High-fat diets facilitate the
consumption of excess energy". You would agree with that?
13 A. Yes, this is all common ground.
14 Q. Right, OK. "Causes of Heart Disease", on page 5, the last
sentence of that: "When the risk is high, the diet is
15 characterised by a high fat content, especially saturated
fat - and by relatively low amounts of dietary fibre".
16 You would agree with that?
A. Yes.

Q. Page 6, "Cancers: It is now generally agreed that the
18 incidence of all the common cancers in humans is
determined by potentially controllable external factors,
19 because people in different parts of the world suffer from
different kinds of cancers, depending on their habits,
20 diet and customs, rather than on their ethnic origins."
21 You go on to quote the World Health Organisation
publication, "Diet, Nutrition and the Prevention of
22 Chronic Diseases" and say: "The group concluded that
there is a close and consistent relationship between the
23 type of diet now common in most of the developed
industrialised countries - characterised by an excess of
24 energy-dense foods rich in fat and free sugar but low in
dietary fibre - and the emergence of a range of chronic
25 non-infectious diseases. These include diseases of the
heart and arteries, various cancers, diabetes, mellitus,
26 gallstones, dental caries, gastro-intestinal disorders and
various bone and joint diseases". Would you agree with
27 that?
A. Yes, that is common ground.
