Day 097 - 06 Mar 95 - Page 61

  Q. These are all Midland Meat documents?
       A. This is a company thing, yes.

  Q. We are going backwards in the process, but page 191 and, as
mine is a double-sided document, 192 and those are
guidelines for the safe loading and unloading, movement of
       livestock?
       A. Yes.

  Q. Again, this seems to have a space for trainee and trainer
       to sign at the back?
       A. Yes.

  Q. This is also a Midland Meat document, is it?
       A. Yes.

  Q. Are these based in part at least on the MAFF guidelines or
       not?
       A. Yes, and experience.

  Q. Is there any extent to which they are based on actual
       experience of handling animals?
       A. I think it is fair to say that both things are taken
       into consideration.

MR. JUSTICE BELL: Who is Mr. Worrall at the bottom of page 192?
       A. He is the transport manager or supervisor.

MR. RAMPTON: In the handling of animals in a slaughterhouse, is
there anything to be gained from, does experience confer
any benefit on, the way in which the animals are handled?
It says here, for example, be gentle with them, make sure
they do not get excited, so on and so forth. Experience of
the actual handler, I mean, is that important?

MR. MORRIS: Sorry, where does it say "be gentle with them"?

MR. RAMPTON: Sorry, it says "Move animals quietly with the
minimum of force and without panic. Be in control of
control of the animal at all times to try to ensure that no
animal escapes", so on and so forth. How important is
experience in handling animals when it comes to that?
       A. I imagine an experience person would probably move
animals in a better manner than one who is inexperienced.

  Q. Can we move on -- the Defendants of course can ask you any
questions they like about those documents -- to tab 9 of
       this volume?

MR. JUSTICE BELL: Mr. Rampton, I see in No. 2 on page 191 the
word "coaxer" appears. Is that the word you use for goad?

MR. RAMPTON: Your Lordship is quite right. I have no idea what
a "coaxer" is. In paragraph 2 on 191, Mr. Chambers, what
does it mean "coaxer"? Do you see "Excessive noise or use
of stick or coaxer will upset animals"?
       A. What page are we on?

MR. JUSTICE BELL: 191, paragraph 2 right near the top.
