MR. MORRIS: Can you stop it, please? Why did the people who
work at the fat filtering have to wear visors and gloves?
       A. To protect from touching the hot equipment. That is
really hot, and the filter, and they are expected to wear
       it. It is hot.

  Q. But why would they touch it with their face? I know it is
       a daft question, but -----

MR. JUSTICE BELL: It is. I will not say daft, but it is
obvious, is it not? You do not have to ask that.

MR. MORRIS: Because it splashes up, and they have to wear
       gloves and visors?
       A. It does not splash; it goes straight down. But that is
       to protect, just in case.

MR. JUSTICE BELL: In case there is on occasional splash; is
       that what you mean?
       A. That is correct, sir.

MISS STEEL: The outfit that he was wearing, was that the one
that was the usual one worn at the Strand store?
       A. They were wearing McDonald's -----

  Q. But for the filming, did you get in a uniform from another
       store?
       A. No. I have got two pairs of everything at all times.

  Q. So you think that he was wearing the one that was normally
       worn at the store?
       A. That is correct.

  MR. MORRIS: Thank you.

(Video film continued to be played)

MR. MORRIS: Just stop there -- sorry. It said Managers do not
earn overtime. Do they get paid per hour if they work over
40 hours, or do they just get a standard salary?
       A. The standard salary in law came in -- according to the
day and the time you get paid, your working day, if you are
not regular, you get paid regular (?); if you work
evenings, you get evening rates; if you work after 7, you
       get premium.

  Q. That is for salaried managers?
       A.  For salaried managers, sorry, yes.  You do get salary;
       you do not get overtime.

  Q. So you get a standard yearly salary and, within that, if
your hours fluctuate, you still get the same salary per
       year?
       A. The hours does not fluctuate. It is regular. They are
schedule according to the guidelines. So it does not
       fluctuate.

  Q. What I am saying is, if a salaried Manager, if their hours
