Day 101 - 10 Mar 95 - Page 56

       fact.

MR. MORRIS: We have nearly finished. I do point out, I will
bring the reference. Mr. Rampton has said that he is not
objecting to the word "torture" being used in the
       slaughter.

MR. JUSTICE BELL: Look, we are falling into Friday afternoon
syndrome. It has happened about two Friday afternoons out
of three throughout this case. We end up having spats and
squabbles which do not advance the case one bit.

So, what I suggest you do is just proceed with your
questions of fact and try to isolate that which you can
usefully ask Mr. Kenny from that which you will want to
argue to me at the end of the day.

MR. MORRIS (To the witness): When you have made your visits to
slaughterhouses, which is the Midland Meat Packers and Sun
Valley, basically, you are concerned about meat quality
       concerns, are you not?
       A. One of the things that I would look at is hygiene
issues, if that is what you are referring to.

  Q. Yes, hygiene and meat quality matters?
       A. They are certainly some of the things that I would be
       looking at, yes.

  Q. That is your basic job in McDonald's, is it not, quality
       assurance?
       A. My basic job is looking after the quality and the
safety of the food that is served in our restaurants, yes.

  Q. When you make a visit, say, to Midland Packers, do you see
the audit forms that have been filled in regarding whether
       they are satisfying McKey's specifications?
       A. I see the audit forms or the audit forms are available
for inspection at McKey's, not at Midland Meat. They are
McKey's. I may have occasion to look at them on a visit,
I may not, but they are there for inspection and from time
       to time they are inspected.

  Q. So how come you do not know that Midland Meat Packers have
       been using goads, effectively, always?
       A. I am not aware of the fact that they are.

  Q. You personally have visited there, so you are closer
probably to Midland Meat Packers than any other of the
       suppliers?
       A. I have visited it and I have never seen goads in use at
       Midlands Meat Packers.

  Q. Is Midland Meat Packers one of the largest suppliers to
       McKey's?
       A. Of beef, yes.

  Q. Is it the largest, in fact, largest volume?
       A. I believe it is.

MS. STEEL: I cannot find the Dr. Pattison paper, but you
