     5   MR. JUSTICE BELL:  He said "if they find it" which means the
     6        same thing, does it not? (To the witness)  So, it tells
     7        them they must warn the customer immediately and
     8        investigate how it came to be?
     9        A.  Yes, indeed.

    11   MR. JUSTICE BELL:  Do you have a problem this morning?  You are
    12        going very slowly.  We do have good mornings and bad
    13        mornings and good afternoons and bad afternoons.

    15   MR. MORRIS:  Yes.  I do not have a problem, but it is one of
    16        those issues that it is not -- it did not help that I did
    17        not get the material that I was hoping to get, but I am
    18        thinking at the same time.  I do not know if that is usual
    19        in court cases.

    21        (To the witness):  What I am trying to get to is that the
    22        speed of the line and the volume of throughput in any
    23        abattoir is bound to be of educational significance, is it
    24        not?
    25        A.  Forgive me for not understanding exactly what you are
    26        asking me?

    28   Q.   If a company was concerned about the quality of their
    29        procedures and their products, and it has been accepted
    30        that the faster (above a certain point) the throughput in
    31        the line, the more pressure that might put on particular
    32        tasks or procedures, then -----
    33        A.  I must say, I would not accept -- whatever conclusion
    34        you would draw from the increased pressure, clearly, a busy
    35        fast moving line requires a degree of skill and attention
    36        to detail which a slower moving line might not in order to
    37        achieve the same results, but there is nothing wrong with a
    38        fast moving line as such.

    40   Q.   So, if Jarretts have something like 400 to 600 carcasses a
    41        day going through, is that the figure?
    42        A.  400 to 600?

    44   Q.   Yes?
    45        A.  That would be very high.  I think 800 a week, if my
    46        memory serves me correctly, is about the number of units
    47        which would go through Jarretts.

    49   Q.   A week?
    50        A.  Yes.

    52   Q.   So an operation like Jarretts, the line goes five days a 
    53        week, does it?
    54        A.  Yes.  If the business is there, it does.  It is
    55        normally a five day working week.

    57   Q.   So 800 a week would be something like 150, 200 a day
    58        carcasses going through, yes?
    59        A.  In fact, it would be more because one sheep carcass
    60        equals five cattle carcasses (sic).  When I say "800 units
