     5        forequarter and the hind quarter flank, and that is top
     6        quality meat.

     8   Q.   So you are saying that McDonald's uses from the steers and
     9        heifers meat that would sell in the butcher shop?
    10        A.  Oh, absolutely.

    13        A.  No, no.

    15   MR. JUSTICE BELL:  No.  I am taking there to be a difference
    16        between top quality meat and prime cuts.  I could imagine
    17        there are cuts which are not prime but are, nevertheless,
    18        top quality meat.

    20   MR. MORRIS:  So they are not the prime cuts of top quality meat?
    21        A.  No, prime cuts are the rump, the sirloin and the cuts
    22        of that nature.

    24   Q.   So which bits are the not top quality butcher shop meat
    25        that come from steers and heifers?

    27   MR. JUSTICE BELL:  Are there any?
    28        A.  No, there are not, sir.  I mean, every piece of meat,
    29        sir, that comes from a steer or heifer is good quality
    30        meat.  I mean, you get the wing rib coming out of the
    31        forequarter and, I mean, you can take the brisket out of
    32        the forequarter; you can take the chuck meat out of the
    33        forequarter, but each has a different task in life, whether
    34        you are going to make a stew or a roast.

    36   MR. MORRIS:  OK.  The cow meat is not top quality butcher shop
    37        meat, is it?
    38        A.  Shop cows are not top quality -- can I use a Smithfield
    39        term?  They are not "West End meat".

    41   Q.   So, in fact, McDonald's whole beef content of their burgers
    42        is the meat that butchers shops do not sell?
    43        A.  Oh, no, not at all -- just the opposite, just opposite.
