       relevant.

MR. MORRIS: If it helps, obviously we will have to see the
documents, but the source documents are the ones
       Mr. Jackson saw.

MR. JUSTICE BELL: Look at the documents first and I will hear
any argument when you have had time to consider it.

                 Cross-Examined by the Defendants.

MR. MORRIS: Beef is used in pizza toppings as well, is it not?
       A. No, I do not think so. Which topping are you referring
       to?

  Q. I do not know.
       A. If you are referring to the Pepperoni topping, yes, a
small part of the Pepperoni is beef, pork and beef.

  Q. Is that supplied by McKey's?
       A. No, it is not.

  Q. Who is that supplied by then?
       A. It is supplied by a company called Charlcoutry.

  Q. You said Golden West Food is now independent. When did it
become, as you called it, independent?
       A. I am not quite sure of the exact date, but originally
it was set up as joint venture between McDonald's and
       another company.

  Q. So was that quite recently it became independent, then,
since, I do not know, how long you have been ----
       A. It happened about the same time I guess I joined the
company, so it is probably about five or six years ago.
       I am guessing now.

  Q. You said that the food in the distribution centres is
stored for approximately two days. Would it be sometimes
shorter than that and sometimes longer than that?
       A. Yes. It depends on the volumes being sold in the
restaurants and the time of year obviously, but that would
be about an average I would guess.

  Q. You cannot store something even if it is -- sorry, the
things in that storage, are some of them frozen, some of
them chilled and some of them fresh?
       A. Yes, they have a freezer, a chiller and an ambient
       temperature warehouse.

  Q. So do you have any specifications about how long something
can be stored before it has to be rejected?
       A. Yes, we do.

  Q. What are those specifications?
       A. They vary for different products, but we have a minimum
obviously. We have the production shelf life that the
manufacturer puts on. We also stipulate a minimum shelf
life that our manufacturer then has to deliver it into the
distribution centre. Then that is the minimum shelf life
