     3   Q.   Five.  When you were giving evidence-in-chief you said:
     4         "Two samples will be collected from each delivery upon
     5        arrival and total viable counts carried out".  You said
     6        that was right?
     7        A.  Yes.

     9   Q.   Is it two or five or is that something different?
    10        A.  Five.

    12   Q.   It is five.  It says two in the specifications, does it
    13        not?
    14        A.  Yes, but it is now five.

    16   Q.   So when did that come in?
    17        A.  Last year.

    20        A.  June.

    22   Q.   For how long had it been two?
    23        A.  Since, well, since 1978, I would think.

    25   Q.   Can I just ask if the meat is rejected as "unsatisfactory",
    26        does it get sent back to the suppliers or is it just thrown
    27        away or what?
    28        A.  No, you have to -- "unsatisfactory" does not mean that
    29        it is condemnable; it means it is unsatisfactory.

    31   Q.   Right -- for what?
    32        A.  Well, as a standard, it is unsatisfactory.  It does not
    33        mean that it is bad or smelling or "off".  It just means it
    34        is unsatisfactory by McDonald's standards.

    36   Q.   So what happens to it?
    37        A.  As I said, I think, in my evidence yesterday, we
    38        publish a league table and if someone is bottom of that
    39        table twice and they cannot correct the situation, they are
    40        taken off our supply list.

    42   Q.   But what actually happens to the combo of meat that is
    43        unsatisfactory?
    44        A.  Well, the combo of meat by then has been manufactured.
    45        Bacteriology takes 24, 48 hours.

    47   MR. JUSTICE BELL:  No, I think what is being asked:  The
    48        bacterial analysis, is that the core analysis or is that a
    49        swab analysis?
    50        A.  That is the core, sir.  The meat is taken out in a 
    51        core.  It is emulsified to make sure you have got a very 
    52        good distribution.

    55        A.  By that time the meat has gone through.
