     5        A.  Yes, that is about right.

     9   MR. JUSTICE BELL:  What is the 12 referring to, Saturday night?

    11   MS. STEEL:  Crew.  Yes, Friday and Saturday night.  How many
    12        crew on Saturday morning?
    13        A.  It was, if I remember, it was fairly busy on a Saturday
    14        morning.  So we would probably have seven or eight people
    15        when the restaurant first open the doors.

    17   Q.   Building to 24?
    18        A.  Yes.

    20   Q.   Over the course of the morning, what, a steady increase or
    21        did they all come in at a particular time?
    22        A.  No, no.  I mean, you are quite right that in order to
    23        make sure it was handled efficiently we made sure they came
    24        in, sort of in half hour groups, so to speak.  So two more,
    25        three more coming in at nine, 9.30, ten and so on and so
    26        forth.  So by 12 o'clock we would be up to 20, sort of,
    27        four or five people, as far as I can remember anyway.

    29   Q.   What was the position on the Sunday?  Was that equivalent
    30        to a week day?
    31        A.  No, Sundays are slightly different, especially for a
    32        city centre restaurant because we did not really start to
    33        see any business until about one or two o'clock.

    35   Q.   So prior to that you would have just had a couple of, what,
    36        three or four crew in?
    37        A.  No; well, probably about five or six really.

    39   Q.   Then from two-ish onwards how many from then?
    40        A.  Probably again sort of 12 or 15 people through till
    41        about eight or nine o'clock, because the two to eight
    42        period was again busier, and then it would drop down again
    43        and Sunday nights (as far as I remember) were not that
    44        busy.  There used to be, I think, a teenage disco close
    45        by.  So we would get a rush at about 10.30 but, as far as
    46        I can recall, there was not anything that made it stand out
    47        as a particularly busy night.

    49   Q.   What kind of number of crew are you talking about, eight?
    50        A.  Probably eight, yes.

    55   Q.   The 100 people that were on the payroll, is that hourly
    56        paid staff or is that just crew, or does that include the
    57        management as well?
    58        A.  No, that would really include the hourly paid people on
    59        our payroll.
