13 A. No, I do not think so. Which topping are you referring
14 to?

17 A. If you are referring to the Pepperoni topping, yes, a
18 small part of the Pepperoni is beef, pork and beef.

20 Q. Is that supplied by McKey's?
21 A. No, it is not.

24 A. It is supplied by a company called Charlcoutry.

26 Q. You said Golden West Food is now independent. When did it
27 become, as you called it, independent?
28 A. I am not quite sure of the exact date, but originally
29 it was set up as joint venture between McDonald's and
30 another company.

32 Q. So was that quite recently it became independent, then,
33 since, I do not know, how long you have been ----
34 A. It happened about the same time I guess I joined the
35 company, so it is probably about five or six years ago.

38 Q. You said that the food in the distribution centres is
39 stored for approximately two days. Would it be sometimes
40 shorter than that and sometimes longer than that?
41 A. Yes. It depends on the volumes being sold in the
42 restaurants and the time of year obviously, but that would
43 be about an average I would guess.

45 Q. You cannot store something even if it is -- sorry, the
46 things in that storage, are some of them frozen, some of
47 them chilled and some of them fresh?
48 A. Yes, they have a freezer, a chiller and an ambient
49 temperature warehouse.

51 Q. So do you have any specifications about how long something
52 can be stored before it has to be rejected?
53 A. Yes, we do.

55 Q. What are those specifications?
56 A. They vary for different products, but we have a minimum
57 obviously. We have the production shelf life that the
58 manufacturer puts on. We also stipulate a minimum shelf
59 life that our manufacturer then has to deliver it into the
60 distribution centre. Then that is the minimum shelf life
