Day 080 - 30 Jan 95 - Page 59
A. No, with the proviso that I would expect to see any
documents related to beef which I was purchasing from them.
In other words, I would expect to see any documents on any
animals or any bacteriological results referring to my
beef.

Q. If you wanted copies of those you would expect to be able
to get copies?
A. Yes.

MS. STEEL: No further questions. Thank you.

Re-Examined by Mr. Rampton.

Q. Mr. Walker, it may sound funny, can we have a look, please,
at the coloured pictures of the hanging carcasses
showing -----

MR. JUSTICE BELL: They are in your blue file which you had out
of your briefcase.

THE WITNESS: They are in my briefcase. (Handed)

MR. RAMPTON: Can you find in there the bits of the animals that
are used to make McDonald's hamburger patties, please?
A. There you have got the full forequarter. It is not in
the correct position. There is the hindquarter flank.

Q. Is that like a jigsaw puzzle?
A. Yes.

MR. JUSTICE BELL: That is the hindquarter skirt at the top?
A. Yes, sir, hindquarter flank.

MR. RAMPTON: Can you show that piece reconstituted by reference
to a picture of a side or carcass?
A. Yes. I am just looking for the biggest side that
I have got. That is why I am flicking through them because
these are all the different grades of beef steak and cows
and butcher cows.

MR. JUSTICE BELL: Just hold it up so that everyone can see.
A. If this was being cut for McDonald's, it would be cut
like that, to the 13th rib.

MR. RAMPTON: So the lower -----
A. The whole of that forequarter goes to McDonald's and
that hind quarter flank.

Q. I see. May we, if we need to, borrow those so that we can
make coloured copies of them?
A. Yes.

Q. My Lord, that is all the re-examination I have.

MR. JUSTICE BELL: Yes, thank you. Thank you Mr. Walker.
A. Thank you, sir.
