     1        how much that reduction in Spain is real, the reduction in
     2        those rates may be contributed to some extent by the plant
     3        material that is present in olive juice.  So, in a sense,
     4        it off-sets, if you will, the contribution of the fat upon
     5        the olive oil.  As I mentioned before, there are various
     6        kinds of fats.  It turns out that the mono-unsaturates of
     7        the olive oil is, perhaps, the best of the lot.

     9   Q.   Sorry, I missed that.
    10        A.  The mono-unsaturates of olive oil is, as I say, amongst
    11        the polyunsaturates and the mono-unsaturates; they may be
    12        the best of the lot.

    14   Q.   Except that there is evidence that oleic acid is not, of
    15        itself, protective?
    16        A.  That is what is said, but we have data from China that
    17        is very different and more precise, quite frankly, because
    18        we actually measure the amount of olive oil that gets into
    19        the membranes of the red blood cells, because we took the
    20        red blood cells and we analysed them - something others
    21        have not done.  So, we see an inverse relationship between
    22        the olive oil component -- not the olive oil, but the
    23        mono-unsaturate fatty acid intake and oleic acid itself and
    24        coronary heart disease, an inverse relationship.  Highly,
    25        highly significant.

    27   Q.   Coronary heart disease?
    28        A.  Yes.

    30   Q.   But these are figures for colon cancer.
    31        A.  Yes.  Well, I thought you meant reference to heart
    32        disease.  I thought you meant a reference just to heart
    33        disease prior to my statement.  You did not?

    43        large bowel cancer rather than coronary heart disease or,
    44        for instance, breast cancer?
    45        A.  Yes.  I understood the question from the early part of
    46        our discussion.  I just thought towards the end you had
    47        said that oleic acid was shown not to.

    50        did not protect against bowel cancer.  Am I wrong about 
    51        that? 
    52        A.  I do not know.  I do not know that.
