Day 074 - 16 Jan 95 - Page 43

Q. The only checks that you made personally was to drive
around in the morning and in the evening?
A. No. When I was a restaurant manager, whenever I felt
like that, I do it, I check on my managers, then I did.
But if I was the shift manager, then I will do it myself.

Q. How often was that?
A. Again I would say two, three, four times. Again, if it
is that managers have been running the shift, then I might
just do it once.

Q. So you went out two, three, four times a shift?
A. If I was the shift manager because I used to run the
shift myself too when I was a restaurant manager.

Q. Were you the top manager at the store?
A. Yes, I was.

Q. Sometimes you doubled as the shift manager?
A. Yes, a restaurant manager also runs the shifts.

Q. Was there another shift manager at the store?
A. Yes, there is.

MR. JUSTICE BELL: So there is always a shift manager there? If
the manager of the store is there, then he manages the
shift he is on; is that right?
A. Yes, sometimes what you do is you do a schedule of your
managers and the shift which you cannot schedule the
manager for, then you cover those shifts yourself as a
shift manager. Otherwise, the shift, when you have the
shift manager, you just work alongside and perform
different activities.

MS. STEEL: So, on the times when you were there, when you were
not the shift manager, did you make any checks then or was
that just left to the shift manager to do?
A. That is what I said that just once or it depends who
the shift -- if it is a new manager, then I had to make
sure and maybe more than once because dining area was, the
hostess already checked, when the shift manager. My job
was just to do spot checks whenever I feel like it just to
see that the job was done.

Q. How did you make your checks -- was this by car again?
A. No, no, because sometimes I used to park my car further
back from Kings Road; it is nearer for me.

Q. The checks that you made in the morning and the evening,
you say, was that every day that you were at work?
A. No, sometimes there were days when they were missed out
if I am not a shift manager -- if I was not a shift
manager.

MR. JUSTICE BELL: Try to keep as direct to the point as you
possibly can. At the end of the day, obviously, I am going
to be influenced on what the evidence is as to how much
environment/index.html">litter -- if you say: "Despite what should have been the
system, there was environment/index.html">litter", I can understand that some
