Day 179 - 30 Oct 95 - Page 42

       be?
       A. To have the right number of people working for the
       projected takings.

  Q. For the projected ---
       A. -- takings of any one hour.

  Q. Could I ask you then, please, to have a look at a document
which is after your time, but I would like you to look at
it, just the same. Bear with me, Mr. Gibney. It is volume
XI, pink XI. There should be a section A in that. I would
like you, if you will, to try and find tab 10B.

MS. STEEL: Can you give the title of the document, please?

MR. RAMPTON: It is the Crew Management and Scheduling
Programme -- sorry -- the Management and Crew Scheduling
       Programme.

  THE WITNESS: Yes.

MR. RAMPTON: (To the witness): Have you ever seen anything like
       that before, yourself?
       A. No.

  Q. You have not? It is easier if you put it in front of you
in the witness box, I think. Could you turn to the third
page of that document, please? Do you see a section headed
in the lefthand column "The Objectives"? Do you see that?
       A. Yes.

  Q. It reads: "The Crew and Management Scheduling Programme was
to accomplish the following goals: total customer
satisfaction; puts the right people in the right place at
the right time; maximises salaried management; sales
       growth; provides the right amount of crew for the sales;
provides consistent high levels of quality service and
cleanliness to our customers; optimum profit effectively
controls labour costs which are our second largest
controllable expense; and allows for proper use of planned
maintenance system; motivated staff; allows training to
take place on a more consistent basis; improves management
time planning; improves retention through improved
management and crew morale, self-development, time
       scheduled for individual development."

Then can you turn over the page, please? It is a short
page. The first letters, which are in bold writing:
"The aim of crew scheduling should always be to build sales
       rather than protect existing sales."

Do not worry, I am going to ask you a question at the end
of this. On the following page, at the top of the page,
second paragraph: "The crew schedules vital to the
efficiency and effectiveness of your restaurant, your
business depends on you having the right people in the
right place at the right time in order to achieve total
customer satisfaction, high levels of QSC and cost
effectiveness." Are your pages, Mr. Gibney, numbered at
       the bottom?
