4 Q. Did Mr. Logan ever mention this alleged incident with
5 Mr. Richards to you?
6 A. No, he did not.

8 Q. Then the next, if you go back to the piece of green paper,
9 it is number 3, Mr. Henden: "For three years Michael Logan
10 was a shift running Manager two or three times a week, but
11 still hourly paid. No salaried Manager was on for most of
12 those shifts and he (that is Mr. Logan) very rarely was
13 able to take a break on such shifts, except for maybe 10 to
14 15 minutes."

16 Do you have any comment on that?
17 A. Without personally looking back at any of the clock
18 card reports at the present, I cannot actually say the
19 exact shifts he worked each day. But, invariably, there
20 would be an opening Manager in the morning and there would
21 be a swing shift Manager who would cover, say, a 12/8
22 period or 11/7 period.

24 Q. 11 at night to 7 in the morning?
25 A. 11 in the morning to about 7 in the evening.

27 Q. I see. What about the later shift?
28 A. As I say, without actual reference to the schedules --
29 I mean, he may be shift running by himself on occasions.

31 Q. When you say "on occasions", how frequently do you think
32 that that is likely to have been so?
33 A. Maybe -- I would say perhaps one or maybe twice a week.

35 Q. Then he says in number 4: "Freezer stickers were on
36 occasion put on out-of-date buns to be able to use them and
37 avoid the 'use by' deadline, especially in 1991, 1992."

39 What comment, if any, do you have on that allegation?
40 A. That did not occur. If freezers stickers would be put
41 on buns when they were withdrawn from the freezer, then
42 they would be dated with a 48 hour shelf life from there.

44 Q. What is a freezer sticker?
45 A. Basically, you can actually put either pre-printed
46 computer stickers on to them or, if you have not got those
47 available, you have a date gun which you can dial in the
48 date and the time, with the "use by" date, and then put
49 those on to the individual trays of buns. So, basically,
50 it is like, maybe, as they use a price gun in a
51 supermarket.

53 Q. Have you ever -- and I think this is what the allegation
54 means; perhaps you will be able to correct me if I am wrong
55 -- the allegation appears to be that a bun which had gone
56 past its useful shelf life had a freezer sticker put on it
57 to make it appear as though it had just come out of the
58 freezer. Is that how you understand the allegation?
59 A. That is correct.
