A. I do remember him.

Q. Do you know whether he is still in the McDonald's
organisation?
A. Yes. He is a First Assistant in Marble Arch --
Manager.

Q. Do you remember towards the end of the film there was a
picture -- I think it towards the end -- of a man called
Michael Metcalfe?
A. Yes, I do remember.

Q. There was a passage about him trying to account for
53 missing buns. Do you remember that?
A. Yes, I do.

Q. What is the purpose of checking that kind of discrepancy?
A. We do get delivery every day. Products could be
missing from delivery; and probably, also, the waste is not
counted properly. There are quite a few reasons. The main
is the delivery and the waste is not recorded properly.

Q. Do you check the waste against the till receipts?
A. Yes, we do.

Q. What is the purpose of that?
A. Again, to find out how we waste the product against
where we wasted it. So that if it is to do a training,
that is fine. But if it is other areas which we can reduce
the waste, we will look into it.

Q. The Strand was a very busy restaurant, was it not?
A. That is correct.

Q. At that time in 1987, compared with the rest of the world,
do you know how busy it was?
A. It was the busiest restaurant in the world.

Q. Was it successful in 1987?
A. It was. We are quite successful -- we were.

Q. Did the Company reward you in any way?
A. Yes. When we became the busiest restaurant in the
world, we received shares. All the employees, including
crew members, we had shares from the Company.

Q. In the corporation?
A. That is correct.

Q. The American Company?
A. That is correct.

Q. How many crew members did you have, roughly ---
A. About 200.

Q. -- on the payroll? About 200?
A. About 200.

Q. In a normal busy day at the Strand, how many buns do you
think you would have used in the course of a day?
