A. Well, as it happens, that was a change which was made
2 just before I joined McDonald's and, I mean, the fact that
they were looking critically at these issues was one of
3 the factors why I decide to work with them, because the
lard had been replaced and with a smaller amount of
4 vegetable oil thereby reducing the amount of saturated fat
that would be present in these buns.

Q. Has the sugar content come down since you were advising
6 McDonald's?
A. No, again the sugar content in the buns is not
7 something that would concern me because the final level is
not all that high.

Q. Just on the ingredients, you are very concerned about
9 saturated fat levels in foods generally, yes?
A. Yes, we are agreed on that.

19 recommendations are made for the purposes of -- well,
there are major health reasons, are there not?
20 A. Yes.
21 Q. By and large?
A. Are you referring to a particular point in my
22 statement?
23 Q. No, I am not really. I have lost my train of thought. By
and large, they are daily recommendations, are they not?
24 A. No. We have been over all this ground before. We are
talking about the average intake for a day when people are
25 not -- I think it would not be sensible to expect each
particular day to be exactly the same in terms of dietary
26 recommendations because, after all, people's eating habits
vary over a long period and, of course, people's behaviour
27 varies over a long period -- I go jogging but I do not go
jogging every day.

Q. That was not quite what I asked. What I meant was, when
29 dietary recommendations are made they are generally
expressed in terms of daily intake?
30 A. Well, it varies because with some of the dietary
recommendations they refer to the percentage of calories
