     1        catering industry where my responsibilities included:
     2        negotiating pay and conditions among hotel and restaurant
     3        companies in London and at national level; providing advice
     4        and assistance to individual catering workers on specific
     5        employment rights issues; organising and supporting union
     6        recruitment drives either in response to specific requests
     7        or as part of planned campaigns; representing workers at
     8        industrial and social security appeal tribunals;
     9        representing the Transport and General Workers Union as a
    10        member of the Licensed Residential Establishments and
    11        Licensed Restaurant Wages Council; the Unlicensed Place of
    12        Refreshment Wages Council; and the advisory body attached
    13        to the Denmark Street Hotel and Catering Job Centre;
    14        servicing, as secretary, the union's Hotel and Catering
    15        Advisory Committee; organising and conducting as tutor,
    16        TGWU training courses at regional and national level on
    17        health and safety at work; rights at work; and support
    18        courses for shop stewards in the hotel and catering
    19        sector.

    22        fast-food sector.  I had contact with staff in a number of
    23        McDonald's outlets, including those referred to in my
    24        earlier statement of 30th September 1988, concerning
    25        initiatives at the Mare Street (Hackney), Warren Street
    26        (Camden), and Seven Sisters (Holloway) and other branches."
