     1        we have 1,000 pieces of meat come in and within the day we
     2        sell 500 sandwiches that bear that piece of meat, then we
     3        should have 500 left in the stock room.  Any difference is
     4        waste that has been thrown away.  So, within that there
     5        will be a piece of meat that is dropped on the floor and
     6        put in the bin, and we would account for that, count it up
     7        in the waste, or the discrepancy between it would be if
     8        someone had taken something.

    11        A.  Yes, so we need to monitor the two just for obvious
    12        business control.

    14   MS. STEEL:  The reason I am getting confused is because if
    15        something is in the bin, it is not missing, is it?  It is
    16        waste.

    18   MR. JUSTICE BELL:  It is missing by -- I think what he saying is
    19        it is missing in that you have got 2,000 beef patties come
    20        in, you have got 1720 of them gone into Big Macs and so on,
    21        two of them in each Big Mac and one in an ordinary burger

    25   Q.   The ones which have been chucked in the bin because they
    26        have gone on the floor, or something unsatisfactory about
    27        them in some way, are added?

    30   Q.   You find that gets you up to 1970, and you want to know
    31        what has happened to the other 30?
    32        A.  That is correct.

    35        A.  That is it.  Some also will be given away for promo(?)

    39        A.  We want the two numbers to balance, and that is why we
    40        have to calculate the waste.

    43        A.  Yes, unfortunately, miscounts or stolen.

    45   MS. STEEL:  But what are you calling the missing ones, the ones
    46        that are unaccounted for or the ones that are in the bin?
    47        A.  The ones that are unaccounted for are the missing ones,
    48        but you have to count the ones in the bin to work out if
    49        they are missing.  You have two sets of hard figures.  One
    50        is what came into the restaurant, the second is what you 
    51        sold.  You take one away from the other and leaves you with 
    52        that which you have used.

    54   Q.   I understand that, but what I was asking was, is there any
    55        pressure about the amount of waste that is going out in the
    56        waste bin?  Is there any pressure from Head Office about
    57        that?
    58        A.  No, not that is in the actual production process, but
    59        within that, if you had a freezer break-down, and you had
    60        to throw away, you know, a lot of cases of meat, that would
