  Q. -- would know from visual checks?
       A. Yes.

  Q. Whereas inexperienced staff may not be able to?
       A. I would say that they might -- they may not have known,
but they would be told, yes.

  Q. The visual check, was that made from breaking a burger or
       what?
       A. For me, you mean?

  Q. Yes.
       A. I could just see by looking. You do not need to break
it open. So, when I took the temperature and it was too
low, then I broke it open to check and you could see all
       the blood inside it.

MS. STEEL: Sorry, just to clarify, so you did not see the blood
       until you broke it open?
       A. No, no, you could see blood on top, bits of blood on
top of the burger as well. When you broke it, you could
see it was like red inside.

  Q. Right.

MR. MORRIS: You have never looked inside toasters, have you, in
       the work ------
       A. I would not have a clue where to start, no.

  Q. Right. Buns, paragraph 27 of your statement, you say:
"Buns have a four day shelf life and they can be frozen
within that time and put into the freezer" ---
       A. Yes.

  Q. -- "if they are not going to be used"?
       A. If too many have been ordered, yes.

  Q. Right. You say if ever you saw an out of date product you
would inform the shift Manager. Have you actually done
       that?
       A. Yes, I quite regularly did that.

  Q. Sorry, we are just reading. The buns, is that the same as
       muffins?
       A. Your dates, you mean, as in dated or -- muffins are
frozen when they come in, so they be different.
       Again -----

  Q. So what are the muffins? Is that the Egg McMuffin?
       A. Yes, muffins would be used for, like, egg muffins and
Big Breakfast and things like that.

  Q. But the muffin is the bun for the -----
       A. Yes, but it is -- it comes in the stores already frozen
so it is with the frozen stuff in any case, so it is not --
it has not got -- sorry.

  Q. Right, sorry. On page 121 in your PRs -- it is in the file
volume 1 -- under "Breakfast quality", it is the second
