Day 150 - 07 Jul 95 - Page 76
Q. About 12?
A. About 12 on a Saturday night.

Q. The same as a week day lunch time?
A. Yes, that is about right.

Q. What about Saturday -----

MR. JUSTICE BELL: What is the 12 referring to, Saturday night?

MS. STEEL: Crew. Yes, Friday and Saturday night. How many
crew on Saturday morning?
A. It was, if I remember, it was fairly busy on a Saturday
morning. So we would probably have seven or eight people
when the restaurant first open the doors.

Q. Building to 24?
A. Yes.

Q. Over the course of the morning, what, a steady increase or
did they all come in at a particular time?
A. No, no. I mean, you are quite right that in order to
make sure it was handled efficiently we made sure they came
in, sort of in half hour groups, so to speak. So two more,
three more coming in at nine, 9.30, ten and so on and so
forth. So by 12 o'clock we would be up to 20, sort of,
four or five people, as far as I can remember anyway.

Q. What was the position on the Sunday? Was that equivalent
to a week day?
A. No, Sundays are slightly different, especially for a
city centre restaurant because we did not really start to
see any business until about one or two o'clock.

Q. So prior to that you would have just had a couple of, what,
three or four crew in?
A. No; well, probably about five or six really.

Q. Then from two-ish onwards how many from then?
A. Probably again sort of 12 or 15 people through till
about eight or nine o'clock, because the two to eight
period was again busier, and then it would drop down again
and Sunday nights (as far as I remember) were not that
busy. There used to be, I think, a teenage disco close
by. So we would get a rush at about 10.30 but, as far as
I can recall, there was not anything that made it stand out
as a particularly busy night.

Q. What kind of number of crew are you talking about, eight?
A. Probably eight, yes.

Q. About eight?
A. Yes.

Q. The 100 people that were on the payroll, is that hourly
paid staff or is that just crew, or does that include the
management as well?
A. No, that would really include the hourly paid people on
our payroll.
