5 Q. That was the plan?
6 A. Mmm.

8 Q. Right. It is a funny thing, is it not, if we look at the
9 management labour No. 24, we can see that the actual spend
10 as a percentage of sales for management for 1991 was 4.91
11 per cent, but the plan was to increase the management
12 percentage of labour costs as to sales to 5.07 per cent; so
13 how do you account for the intention of the Company to
14 reduce the crew labour percentage remuneration but to
15 increase the management percentage?
16 A. Well, without the figures in front of me, I cannot tell
17 you, but I imagine that when they have budgeted, they have
18 calculated the number of stores they have had, they have
19 calculated how many management they need and that has
20 brought those variations about.

22 Q. Do you know what the average hours worked are by McDonald's
23 part-time staff, approximately?
24 A. I have not seen the figures for some years. I think
25 the average was running at about 22 -- it is a figure I
26 remember.

28 Q. 22 hours?
29 A. I mean, that figure was available to me but I have not
30 seen those figures for four years.

32 Q. If you remember, was that for all staff, included all
33 staff, or was that just for the part-time staff?
34 A. No, I think part-time workers were averaging somewhere
35 round about 20. I remember seeing that somewhere.

37 Q. To be honest, I think I have seen something like that but
38 I cannot remember where.
39 A. No, I do remember reading somewhere that it was round
40 about -- but it is four years ago, and that figure will
41 move a little year by year.

43 Q. Did you enquire or look into what the category "occasional
44 workers" meant?
45 A. No, I have not had the opportunity. I am not allowed
46 to discuss my evidence with anyone until I have finished
47 giving it.

49 MS. STEEL: Do you remember the Guardian article that you took
50 legal action over about workers' employment conditions ---
51 A. Yes.

53 Q. -- and pay and things like that? Do you remember the
54 article?

57 Q. After that article appeared, did your Department send out a
58 memo saying that under no circumstances could the branches
59 make employees work on their day off or for longer hours
60 than they were supposed to?
