Day 133 - 12 Jun 95 - Page 38

  Q. £3.55?
       A. Yes, right, I am with you.

  Q. The other medium rates 3.42 and two 3.41s exceed all the
       other McDonald's basic starting rates?
       A. Yes.

  Q. If you turn to the back of the document, there is a survey
of catering wages and again a number of caterers, including
some of McDonald's direct competitors -----

MR. MORRIS: What page are we on, sorry?

MR. RAMPTON: It is the last page of that document.
(To the witness): There is a survey of catering wages, do
       you see that?
       A. Yes.

  Q. There is a sample given compiled, apparently, by the
Catering Review Group. Do you know who they are?
       A. Yes, it is representatives from each of those employers
       and others.

  Q. From each of the companies, yes, I see?
       A. Yes, an exchange of ----

  Q. Sorry. At the bottom of the page there are some average
starting rates given. The overall UK average is 3.18,
apparently, or was at this date; the Outer London,
Southeast average was 3.40; the Inner London average based,
apparently, on a small sample was about 3.51p. All except
the first of those figures seems to outscore the basic
       McDonald's starting rate.
       A. Yes.

  Q. The question I have is, given this overall -- one can pick
nits but that is not my habit -- it looks as though the
basic McDonald's starting rate is below the general
       averages for that kind of work in the country at large;
       would you agree with that?
       A. Yes.

  Q. The basic starting rate?
       A. Yes.

  Q. Mr. Nicholson tells us, Ms. Mead, that this problem, if it
be a problem, is overcome by the availability of
performance and promotion related increases within
       McDonald's.
       A. Yes.

  Q. Does McDonald's have a problem recruiting?
       A. In general, no. There are some areas where there may
be more employers vying for staff but, in general, no.

  Q. The three increases, performance related increases, as we
know, which are available for a crew member at McDonald's
or for an hourly paid worker, I should say, at McDonald's
       are 5p, 10p and 15p?
