6 two o'clock on whether there are more?

8 MR. MORRIS: I think it is fairly simple.

10 (To the witness): In terms of the restaurants in that table
11 in your Employment Flows research report, where it said
12 about the restaurants' turnover average which apply to the
13 sector that McDonald's is part of being 35.4 per cent,
14 would those restaurants have a high proportion of -- that
15 sector as a whole, the restaurant sector, would that have a
16 high proportion of young people and people returning to
17 school and college as well, or is McDonald's completely
18 unique in that respect?
19 A. Well, in two parts -- I will answer that in two parts.
20 McDonald's is not completely unique amongst the fast-food
21 industry in employing young people, but this survey is a
22 cross-section of the restaurant sector; and I do not have
23 the age profile of the sample, but one would only one would
24 assume that it would be a more mature profile, one more
25 truly reflecting the age profile of the industry. If
26 turnover is associated with age, then the turnover for the
27 industry would of course be lower, because of that factor,
28 than in McDonald's. McDonald's would tend to be higher
29 because of the age profile.

31 Q. All I am saying is, is the age profile in the restaurant
32 sector, the catering industry as a whole, generally towards
33 the lower end of the age spectrum or higher end of -----
34 A. Compared with McDonald's -----

36 Q. No, compared to other industries.
37 A. I am sorry. (Pause)

39 MR. JUSTICE BELL: Well, can you say?
40 A. Yes. There is a tendency towards the employment of
41 younger workers in the catering industry. One in three
42 school leavers would find their first job in catering.
