Day 208 - 24 Jan 96 - Page 38

  Q. It was a long running problem, was it not?
       A. There are problems with the grease traps. There is not
only one; so when you refer to there was a broken grease
trap, it could have been one of five. So it is never the
       same one.

  Q. So, there have been problems with a number of grease traps
       over a period of time?
       A. Pieces of equipment are always being broken and fixed
in the store. It is a fact of life. If you use it, it
       happens.

  Q. Managers do not check every individual burger before they
       get sent out, do they?
       A. No.

MR. MORRIS: Just one question we are checking, before we move
on to toasters. The chicken vats -- you say you have no
knowledge or experience of this allegation, but is it fair
to say that you heard about it in the store, that there was
a problem with the chicken vats?
       A. I have not heard of there being a problem. I have been
       there on an occasion when the chicken vat has tripped out;
and you can hear it anyway; you do not have to ask anybody
else whether it happened or not. You can probably hear it
about -- you could probably hear it in the dining area when
it goes, because the vat -----

  Q. It booms out, does it?
       A. It is whoosh of air where the extractor fans go off and
the whole of the station is shut down.

  Q. I thought you did not have any knowledge or experience of
       this allegation?
       A. I have no knowledge or experience of the allegation, of
it happening on a regular basis or more than once.

  Q. So how many times have you heard it happen, then?
       A. Once.

  Q. Once?
       A. Yes.

  MR. RAMPTON: My Lord ---

MR. MORRIS: You did not -----

MR. RAMPTON: -- I rise to remind Mr. Morris that the allegation
is that the vats used to cook the Chicken McNuggets and
patties were extremely unreliable, often tripping out,
giving no immediate or obvious indication that they have
done so. That is the allegation.

MR. MORRIS: (To the witness) You did not investigate when you
heard this loud booming noise? Did you go and investigate
to find out what it was?
       A. As a crew member, that would not have been my
responsibility. That would have been down to a member of
the management team, be it the kitchen Manager, the shift
