Day 096 - 03 Mar 95 - Page 31
A. No, no, no. Everything on a pig, I am pleased to say,
we can grill or roast, if necessary. In actual fact,
McKey's do actually buy meat exactly the same that is on
retail stores, right? But because you sell it to them in
bulk that is discounted by roughly 25 per cent to what we
would be making to the retailers.

Q. That is not really what I am asking about. Maybe you
cannot give the answer but when it comes to selling ----
A. Right, if I can give you a specific answer? If you go
into any of the major retailers or a butcher's shop, you
can buy a shoulder of pork. Right? That is one of the
cuts that we will supply to McKeys consistently. So, they
are actually using butchered or butchery pork for
manufacturing as well. But because they will buy it in
bulk, it is discounted. That is absolute prime meat.

Q. But you also supply to McKey's meat which, I do not know
whether you know or not, is processed so it is what
McDonald's call "sausage"?
A. Yes.

Q. Which, as I understand it, is a pork version of a burger
patty?
A. Yes.

Q. How does the price of the meat which ends up processed in
that way compare?
A. Exactly as I have just described, sir. Exactly as I
have just described, sir.

Q. I have not followed you, I am afraid. How does it compare
with shoulder of pork?
A. Well, the shoulder of pork, McKey buys a shoulder of
pork from us and we also sell shoulder of pork to our
retailers. So, they buy exactly the same standard of meat.

Q. I am sorry. It may be that my question is totally inept.
Do you also sell a part of the pig to McKey's which you
know is going to be McDonald's sausage?
A. Oh, yes.

Q. Can you give me a price, not the price, but what sort of
relationship the price of that bears to shoulder of pork?
A. I am actually -----

Q. If the answer is: "No, I cannot because a whole part of a
pig will be sold and they will take a bit of it for this
and a bit of it for that" -----
A. We sell shoulder and belly ------

MR. RAMPTON: My Lord, I am sorry, it is terribly cheeky of me.
Might it be better to ask him what parts of the pig he
sells to McKeys that he would not sell to the supermarket,
if any, because I do not know the answer.

THE WITNESS: Yes, we sell basically shoulder and belly to
McKeys, right? But, equally so, at times that can go to
the supermarket as well. They are getting the same quality
of meat exactly as what goes to the supermarket. It is not
