     2   Q.   Is this just a cosmetic exercise by the Company or does it
     3        use the information that it obtains by this method?
     4        A.  Oh, no, it is taken quite seriously.  It is something
     5        that is done regularly and, for example, if a restaurant is
     6        not performing so well, if its grades are not so good, they
     7        will be then assessed more often in order to make sure that
     8        they are then improving in certain areas so, yes, it is a
     9        genuine tool for improvement.

    11   Q.   How long would it take to do one of these personnel audits?
    12        A.  Well, it depends how efficient you are, I suppose, but
    13        it takes a few hours, about three -- it could be four.

    15   Q.   I do not know the date of this but I think it might be
    16        April 1987.  I am not sure about that.

    25        not sure.  May be this is a composite document.  What I was
    26        going to ask is, whether it be 87 or 89, Miss Mead, has it
    27        changed much since then?
    28        A.  It has changed in that we have included additional
    29        things as time has gone on.  We have added more -- health
    30        and safety is now dealt with in a separate audit, so things
    31        like that have happened, but the basic sections and the
    32        basic areas that we look at are still the same.

    35        document?  I think the end document, the last page, is a
    36        table ---
