Day 103 - 14 Mar 95 - Page 62
MR. MORRIS: So those feathers would be removed, would they, at
some stage after they should have been removed?
A. Yes.

Q. I notice that on three of the batches -- these are out of
25 chickens, are they?
A. Yes.

Q. Three of them, there was a broken limb in one of the 25
birds, yes?
A. Right.

Q. If we move on, page 4 of the fax numbers at the top right
hand, again we have a critical fault box for 8th February
1995. Under "broken limbs" -----

MR. JUSTICE BELL: Page 4 of the fax?

MR. MORRIS: Yes. I cannot identify the page in any other way.
It is the fourth page in, in fact. It has page "004" in
the top right-hand corner. Do we have the same document?

MR. JUSTICE BELL: That is what I have.

THE WITNESS: No, it is not that one. It is one headed "Chicken
E Line".

MR. MORRIS: I think it is the one after that.

MR. JUSTICE BELL: Yes.

MR. MORRIS: So on the "broken limbs", in the critical fault box
down at the bottom under "broken limbs", we have basically
one out of every 25 on average have broken limbs, yes?
A. Yes.

Q. So is that something near about the usual rate, something
like -----
A. You have to remember that the processing equipment
itself can cause broken legs. That is not identifying
necessarily a leg that has been broken on the farm or in
catching.

MR. JUSTICE BELL: Is this after it has been through all those
rubber fingers?
A. Yes, you quite often get legs breaking in those.

MR. MORRIS: What is the problem with the lungs in that page
under "evisceration"?
A. It just means they have been left in.

Q. By mistake?
A. Yes.

Q. That is happening quite regularly there. What happens when
a chicken gets through with lungs still in then?
A. Well, they can either be removed -- the whole point of
this system is to measure how effective and how good we are
at doing various procedures. Adjustments can obviously be
made to the equipment to make sure that the lung removal is
