Day 266 - 20 Jun 96 - Page 08

       A. These were the recommendations when I did my dietetics
training. These were the recommendations we worked with in
order to promote healthy eating at every level. You would
find that anybody promoting dietary advice at the time
would have looked at the NACNE guidelines to implement
       healthy diet.

  Q. So that was the standard text -- well, it was the standard
       reference point?
       A. For the United Kingdom it was the standard reference
point people looked at in all sorts of ways in terms of
looking at, sort of, healthy meals for restaurants, you
know, if they could achieve them within the hospital diet,
although that is another issue really, but this was the
standard that everyone looked to at this particular time
before it was superseded by other reports.

  Q. Right.
       A. I should like to add that the actual advice has not
changed very much. Merely just the context and some of the
ways of measuring it have changed, but the actual advice
that was in this NACNE Report is still relevant today.

  Q. Right. OK. If I read on from your statement, we might
come back to the NACNE Report. You can put that one on the
       table at the side?
       A. OK.

  Q. You said: "The McDonald's data does not specify the amount
of saturated fat which is generally high in animal products
such as meat burgers. Saturated fat is related to high
cholesterol levels which are directly related to the
incidence of heart disease." Where you are talking about
the McDonald's data not specifying the amount of saturated
fat you are referring to the document which I sent to you?
       A. Yes. Actually the page that we were looking at
       before, yes. That is correct.

  Q. Right. You are aware that now some of their publications
do have the saturated fat intake in them?
       A. I have recently been given that information, yes.

  Q. Right. If I carry on:

"The sodium content of McDonald's meal combination 1
(1,488 milligrams) is close to the maximum recommended by
the Government of 1,600 milligrams and is above that
recommended for a ten year old child of 1,200 milligrams."
That is in a day, is it?
       A. That would be a day's consumption, yes.

  Q. Right. "Consumption of a cheese sandwich in addition to a
McDonald's meal would easily push the sodium content above
       the adult daily recommended amount."
       A. Yes, I added that to illustrate how high the sodium
content of a McDonald's meal is by introducing a cheese
sandwich which anybody might eat at a different time in the
same day as a McDonald's meal.

  Q. Right. Similar calculations can be made which show that--
