     3   Q.   So, if an inspector sees problems, they normally inform the
     4        slaughterhouse what the problems are and they are given
     5        time to improve matters, yes?
     6        A.  Well, you understand, I am not a practising EHO.  I am
     7        talking about a hypothetical situation but because in most
     8        cases and, particularly, in larger places there will be
     9        staff on duty all the time.  In the case of the premises
    10        I went around, there is an abundance of meat inspectors and
    11        veterinary surgeons who will be looking at these on a
    12        day-to-day basis and, no doubt, they will be picking things
    13        up and requesting that they be done immediately rather than
    14        by reference to a licence.  So, it is an on-going process;
    15        it is not a once a year or once every six months occasion.

    17   Q.   Can I refer you to a document?  It is in the Jarret's
    18        documents.  I do not know if the witness has copies of the
    19        Jarret's documents?

    22        files.  It is not a yellow spine.  It has a yellow label

    36        A.  Not in this precise form, but this is just a report of
    37         -- just a microbiological examination.
