Day 253 - 21 May 96 - Page 10
influence on certain diseases but the major change,
certainly in developing countries, and in our own country,
is an ever increasing total in food intake and that is a
dietary pattern that I would certainly like to see changed.

Q. Only one other point from part of this document. If you
can go to page 4.

MR. JUSTICE BELL: Is that 4 in brackets or?

MR. MORRIS: It is a real 4. I do not know which one is Roman;
I thought the triple III was. This is Arabic 4.

If we look at the left-hand column, the paragraph just
under the middle of the left-hand column starting "as the
total fat content". Can you see that?
A. Yes.

Q. "As the total fat content in a population's diet goes up so
does the number of persons developing obesity, with all its
complications. Studies have not yet found any difference
between a capacity of saturated and unsaturated fatty acids
to promote obesity. It is, therefore, the total amount of
fat that needs to be restricted in the interests of
preventing obesity".

Do you accept that?
A. Yes. One is talking about affluence, and a very simple
index of affluence is total fat consumption, so countries
that have a high fat consumption tend to be very affluent.
One is not looking at a situation world wide. Even within
Europe, you can point your finger at the most affluent
country which is the one with the highest fat intake.

Q. Thank you.
A. This is, as you say, associated, we believe, with
increasing instance of obesity.

Q. Is it possible to give your document to the judge? Do you
want to have a look, my Lord?

MR. JUSTICE BELL: Yes, I would like to read it. (Handed).
Thank you.

MR. MORRIS: Just going back to the French paradox, where they
have something like 50 per cent levels of cardio-vascular
disease, is that correct, compared to, say, the UK, and yet
they consume -- what was the paradox, I thought you said
something ----
A. I did not know it was as low as that. It is
substantially lower, yes.

Q. But the paradox is that some... Maybe if it is in the
pamphlet, please refer to it.

MR. RAMPTON: My Lord.

MR. MORRIS: I think Mr. Rampton said "a quarter of the level"
and you said "50 per cent".
