     1   Q.   Yes, that is what I am asking about.  You said that many
     2        would stay.  So, presumably, when you took all these people
     3        on that you hired for the summer you did not say to them,
     4        "This will only be for the summer period".  Some of them
     5        may have said to you, "I only want to work for the summer",
     6        but to the people who were joining, in general, you did not
     7        say to them, "We are only taking you on for the summer
     8        period"?

    10   MR. JUSTICE BELL:  Ask the question whether it was so or not
    11        because if you make a suggestion the witness may think that
    12        follows from what he has already said.
    13        (To the witness) What is being put to you is that you took
    14        people on for the summer period where the need was
    15        greatest, but did not tell them that it is just for July
    16        and August, or whatever.
    17        A.  I mean, I would always tell people what I am employing
    18        them for.  Ads in job centres would describe it or if I am
    19        hiring, I am always going to say what the needs of the
    20        restaurant are.

    22   MS. STEEL:   When you were going through these 50 people that
    23        you were interviewing at a time, if it was during the
    24        summer you would always say to them, "This is a temporary
    25        job; it is just until the end of the summer"?
    26        A.  If that was the case, yes.  The number of people just
    27        -- you might get a lot of people turn up; sometimes you
    28        might get very few turn up sometimes either through our own
    29        adverts or through assistance with the job centres.

    31   Q.   However many people it was, when you were interviewing them
    32        you always said -- are you saying that you always said to
    33        them, "This is just a temporary job until the end of the
    34        summer"?
    35        A.  If I was hiring in the summer I would have done.

    37   Q.   Right.  So the ones that stayed on, then, were they
    38        specifically invited to stay on?
    39        A.  You are going to get people staying on.  That means
    40        that you can give -- they will work for you a couple of
    41        night shifts or the weekend days.

    43   Q.   Yes, but what I am getting at is they would have been -- if
    44        you had told everyone "This was a temporary job" they would
    45        be expecting to leave at the end of the summer.  So, until
    46        all those people who then did stay on, did you say to them
    47        -- did you actually invite them to stay on?
    48        A.  Quite possibly I would invite -- I would like to -- if
    49        you are going to have from one year to the next the same
    50        people working for you it is terrific.

    52   MR. JUSTICE BELL:  The first thing I want to know is whether you 
    53        can actually remember or not.  I wish I could remember just
    54        what I have been doing eight years ago.  You may well be
    55        able to because you worked at Marble Arch for about 14 or
    56        15 months.  Can you remember whether you took people on for
    57        the summer, any particular person or people, and then asked
    58        them to stay when it got to the end of August or September
    59        and the tourist trade had calmed down and the nights
    60        started closing in?
