     5   MS. STEEL:   30 and 40 percent of calories from fat are both
     6        quite high really are they not?
     7        A.   Well, if you look at the diet and cardiovascular
     8        disease report you will see in countries like Ireland and
     9        Denmark mean consumption is as high as 50, 55, percent of
    10        the calories.

    12   Q.   Right, but in other countries there is less than 20
    13        percent?
    14        A.  Yes, that is very uncommon.  One is talking about
    15        impoverished countries, I think, not a westernised society.

    17   MR. MORRIS:  Like China, for example?
    18        A.   Rural China, I don't know.

    20   Q.   With a billion people living there.  So it is not uncommon
    21        for people in the world to have a low fat diet is it?
    22        A.   Well, a million people in a predominantly rural
    23        population.  I do not know what the position is in the
    24        urban population but the Chinese diet is lowish in fat as
    25        is the Japanese diet, yes.

    27   MS. STEEL:   Can I just ask you as well, when you were talking
    28        about the milkshake cannot be animal fat, do you not
    29        include in animal fat things like the fats in creams and
    30        butter, and things like that?
    31        A.   Oh yes, yes.

    33   Q.   You do include?
    34        A.   Yes, if you thought about something like double cream,
    35        for example, which still contain a lot of water, it is not
    36        100 per cent fat, I think you would have for this
    37        milkshake, if it was made from double cream, or something
    38        like that, you would have consume about two pints of it to
    39        get that level of fat intake of 120 grammes, which is a
    40        huge amount.  When they talk about a milkshake there is no
    41        indication that it is made from milk at all, certainly not
    42        in the paper, and I think the term milkshake is used
    43        loosely to describe a creamy sort of drink.  In other
    44        words, emulsified fat.  The point I was making was you
    45        could not make a milkshake from dripping or lard or chicken
    46        fat, and I think you would have even more difficulty in
    47        getting somebody to drink it.
