     1   Q.   Is that to increase the range in their menus?
     2        A.  Yes, quite so; to include this group and fruit as
     3        well.

     5   Q.   When you say "emphasis", can that also mean in terms of
     6        promotion as well?
     7        A.  Quite so.  Time and time again one sees McDonald's
     8        promoting for, no doubt, good, economic reasons, but
     9        certainly not good health reasons, the sorts of food that
    10        are extremely high-in-fat.  I would like to see, if they
    11        are genuinely interested in healthy eating, I would like
    12        to see them promoting foods that are healthy and not so
    13        high in fat and high in all the important nutrients that
    14        we know are connected with the prevention of the plagues
    15        that we are currently afflicted with, namely cancer and
    16        coronary heart disease.

    18        I would like to see that.  I would also like to see
    19        McDonald's moving more towards offering more choice for
    20        vegetarians, which would mean an introduction of non-meat
    21        burgers.

    23   Q.   We will come on to that in a minute.  When you mention
    24        fresh vegetables, you do not mention fruit?
    25        A.  Yes.

    27   Q.   Is that part of that picture for you though?
    28        A.  Yes.

    30   Q.   You said about the salads, includes -- I am just reading
    31        from the leaflet that is now at the front of volume VI in
    32        the nutritional analysis guide -- it has four types of
    33        salad which, as far as we know, is only in a small
    34        minority of stores?
    35        A.  I have never seen it.

    37   Q.   The chef's salad contains 12 grammes of fat of which 6.7
    38        are unsaturated.
    39        A.  I have just referred to that.

    41   Q.   We do not have to do all the sums, but the point I was
    42        going to say was that, in the items which they do sell,
    43        you feel there is room for improvement, whatever the items
    44        are?
    45        A.  Yes, very much so.  Yes, absolutely.  If they intend
    46        to promote themselves as purveyors of healthy food, yes,
    47        of course.  There is a huge scope for improvement.  That
    48        is why I say this is an ever-broadening gulf between the
    49        reality of the food that is sold and the image they seek
    50        to create; hence my conclusion they indulge in unethical 
    51        marketing.

    53   Q.   Just on the subject of the chef's salad, 12 grammes of fat
    54        out of 198 calories, what would you calculate the
    55        percentage of grammes?
    56        A.  I do not have a calculator, but it is easy enough to
    57        do.
