     4        A.  They are below the floor of the slaughter hall, but
     5        they are not below ground.

     7   Q.   On a different floor, anyway, a floor below.  What about
     8        the fat, is that also ----
     9        A.  The same.

    11   Q.   You see all the way along here that there are facilities
    12        for washing of various kinds: hands, aprons, so on and so
    13        forth.  Do you have those?
    14        A.  Yes.

    16   Q.   If you could use this in your imagination, and it may be
    17        difficult I appreciate, as a rough model with what you have
    18        got at Midland Meat, where would the meat inspectors mostly
    19        be?  Would you have one at dehiding, for example?
    20        A.  Not necessarily.  They would be further along the line
    21        from that.  I cannot quite see on here where the offal
    22        goes.

    24   Q.   There is a block or a section after the gut removal which
    25        has "Inspection" written on it?
    26        A.  Yes.  It would be around that sort of area of the
    27        slaughter hall, yes.

    29   Q.   We see here on this plan what appear to be separate
    30        condemned and detained rooms.  What about at Midland Meat
    31        Packers?
    32        A.  Yes, it is the same, except the condemned room is below
    33        the detained room.

    36        A.  Yes.

    38   Q.   Is the detained room chilled or not at Midland Meat?
    39        A.  The detained room is chilled, yes.

    41   Q.   What happens to meat that is -- first of all, why is meat
    42        detained, by whom?
    43        A.  It is detained by meat inspectors.

    46        A.  For any signs of disease or abnormality within the
    47        carcass.

    49   Q.   One sees here that the line appears to have split.  There
    50        is a branch one to condemned room and one to detained room? 
    51        A.  Yes.

    54        A.  One line will go straight to the chiller.  If a carcass
    55        is detained for any reason it will go into the detained
    56        room and from there, if condemned, it will go down a hoist
    57        to the room below it which is the condemned room.

    60        bits of carcass are condemned?
