1 A. One of the requirements definitely was the boot wash at
2 the entrance of the, as discussed yesterday, at the
3 entrance to the abattoir. I did not -- I say, I did not,
4 well, I made a request ------

6 MR. MORRIS: I am sorry, that came out as "food wash", it is
7 "boot wash".

9 THE WITNESS: Boot wash. I stated that that was definitely one
10 area where we could start. I also made requirements to
11 separating the dirty side of the abattoir by preparing the
12 doors that were uncloseable at the time I started working
13 there. Those are the main requirements that I made at the
14 time.

16 All the other requirements, as far as I am concerned, we
17 negotiated in good co-operation with Bob and Stuart
18 Jarrett, and they actually, just before I finished working
19 at Jarretts, they submitted a plan for improvements in the
20 plant but in the near future, and that was very much
21 involved.

23 MR. RAMPTON: Anything else, any other improvements, that you
24 demanded or required apart from the boot wash and the
25 mending of a door?
26 A. Well, there was a long list of -----

28 Q. There was, was there?
29 A. Yes, there was a long list which was discussed with the
30 Jarretts in good co-operation and they submitted to me a
31 plan for improvements. They told me that they had -- this
32 plan had been in the workings already before I even came to
33 the plant and had, particularly according to the words of
34 Bob Jarrett, it had nothing to do with the requirements
35 I had stated, but it very much followed the line of what
36 I saw was wrong at the plant. I was very satisfied with it
37 and I communicated this satisfaction to Bob Jarrett.

39 Q. The letter goes on -- it may be you can explain why what
40 you have just said is inconsistent with what appears here
41 -- "... problems have been caused by both the time-scale
42 you have demanded and the manner in which the demands have
43 been made". I will take those separately, Ms. Hovi. Were
44 you laying down the law about how long they should take to
45 make your improvements?
46 A. No, I did not. The only improvement where I was laying
47 down the law was the BSE certification of animals. I said
48 very clearly the day before I was dismissed that I cannot
49 carry on signing export certificates if I do not get the
50 relevant documents. That was the only issue where I put
51 down any time-scales.

53 Q. What do you mean "time scale"? What has that got to do
54 with time-scales? It is not an improvement which has a
55 time-scale, is it? It is a practice you thought ought to
56 cease?
