     3   Q.   -- they still have worrying levels of turnover?
     4        A.  Yes.

     6   Q.   Right.
     7        A.  Grade A just assesses the paperwork side, so it says
     8        the performance review has been done or an LCL has been
     9        done; the administration of hiring people is correct.

    11   Q.   Right.  So people will be leaving for other reasons, apart
    12        from dissatisfaction with paperwork and performance reviews
    13        and pay reviews things like that?
    14        A.  Yes, there is a -- sorry, the training audit is simply
    15        a record of the five-star system we have which divides the
    16        various areas of the restaurant up into which people have
    17        basic training and then supplementary training.  New
    18        people, when they come in the restaurant, have fire
    19        training and hygiene training.  That is checking that is
    20        correct.  I think I misled you there when I said I was
    21        mentioning things under Human Resources Unit which go into
    22        further detail about rap sessions being held and other
    23        things for people to say.

    25   Q.   You say it is unfortunate that these have not influenced
    26        those 1991 crew turnover figures.  It seems here that the
    27        turnover figures showed, if you look in that paragraph, 141
    28        was 126.16 per cent and 200 (which is Ipswich) was 147.91
    29        per cent.  So, by your assessment, Ipswich had the highest
    30        turnover of the stores which you identified as being a
    31        problem with crew turnover figures; is that correct?
    32        A.  Could I just read it?  From here, the Ipswich target --
    33        Ipswich has got a higher turnover.  I am a little confused
    34        as to what these are, though I am referring to it because
    35        it says 1992 target of 100 per cent.

    37   Q.   It means they are starting off that much above the target?
    38        A.  Yes.  The confusion is, we have rolling turnover
    39        figures, so it is like the 12 months before, and I am not
    40        quite sure what this target would have been in 1992 target
    41        to get the rolling turnover down to a figure by the end of
    42        the year, or whether it is some measurement of -- I do not
    43        know when this review was done, whether it was done at the
    44        very beginning of February.

    46   Q.   It says the target 1992, target of 100 per cent.  Those
    47        stores are above that target by its amounts?
    48        A.  The only reason I have concern is (3) store -- 369 was
    49        16 and Colchester was 126.  To my recollection, those
    50        figures seem lower than I would have thought, you know. 
    51        The document we were referring to before had got figures of 
    52        280, and the length of time to reduce from one to the other 
    53        seems extremely short.  So I have some misunderstanding or
    54        a bit of apprehension about comparing those two figures
    55        together.  But I assume if you read that through, that on
    56        whatever measurement was at that moment in time, Ipswich
    57        turnover is higher.
