     1   Q.   I see.  I understand that.  It may not matter one bit, but
     2        all I am saying is you have plus or minus, a variation of
     3        plus or minus five Fahrenheit?
     4        A.  Yes.

     6   Q.   There is a similar plus or minus three Centigrade?
     7        A.  There is a similar -- there is a similar one.  We set
     8        Centigrade and Fahrenheit guides which the oil fryer is set
     9        on.

    11   MR. MORRIS:  With the freezers, the chillers, that you have --
    12        forget that page now -- do you have guidelines,
    13        specifications, about what temperature they should be?
    14        A.  That is correct.

    16   Q.   Does that also have a plus or minus or is that much more
    17        strict?
    18        A.  We have a range of minus 18 to minus 23 on freezers.

    20   Q.   What about, say, the main chiller, what temperature should
    21        that be?
    22        A.  The refrigerator?

    24   Q.   Yes.
    25        A.  Beneath four degrees, I believe.

    27   Q.   That would be a maximum, would it not?  Would that be a
    28        maximum?
    29        A.  Yes, we would like it to be beneath four degrees.

    31   Q.   If you look at the page before page 13, we have about 12 --
    32        I have not counted them exactly -- different freezers,
    33        whatever, in three different stores.  Again, if three of
    34        the temperatures of the freezers were above the recommended
    35        temperature out of those stores would that concern you?
    36        A.  It would concern me if those temperatures were taken
    37        from within the freezer; it would not concern me if they
    38        were taken from the dial on the outside of the freezer.

    40   MR. JUSTICE BELL:  Just so I can follow -- I know we have rules
    41        about it -- which lines are you looking at there?

    43   MR. MORRIS:  I am looking at East Kilbride counter refrigerator.

    45   MR. JUSTICE BELL:  That has different -- that is not the minus
    46        18 to minus -----

    48   MR. MORRIS:  No, these are maximum temperatures.

    52   MR. MORRIS:  The "Milk/Soft Serve Chill" above that for Glasgow 
    53        and the "Main Chill" which is five degrees at Glasgow.

    55   MR. JUSTICE BELL:  If you were to find that tests are being made
    56        and the figures on that table had been found, would it
    57        concern you?  That is what Mr. Morris is asking you.
    58        A.  These figures on this table, if they had been taken
    59        from the external temperature guides would not concern me
    60        at all.
