9 the 53 missing buns, that is the kind of job that a Manager
10 would have to do at the end of a shift, to account for
11 discrepancies in the waste?
12 A. That is correct.

14 Q. Are there other examples of -- the bun situation is not
15 particularly unusual, is it, that there will be some buns
16 missing?
17 A. No, not that I know of.

21 MR. MORRIS: Can I ask another question: what does a Manager
22 do if they cannot account for -- say he cannot find where
23 those missing buns come from; what kind of inquiries does
24 he have to make to find out where it went wrong, kind of
25 thing?
26 A. Normally, if a Manager cannot find the missing bun,
27 they leave a message for the morning manager, or breakfast
28 Manager, on the diary, to double check for the breakfast
29 Manager.

31 Q. So someone else would have to double check?
32 A. Just to double check, yes.

34 Q. What happens if they cannot find out what happened to these
35 missing buns, for example?
36 A. It happens; that is normal.

42 A. It is a discrepancy, maybe it is not counted in the
43 waste properly or delivery has been missed out and counted,
44 it has not been delivered. We take some of these things
45 into consideration. So, that is normal. We do not find
46 anything that is (inaudible). We just learn from it for
47 the future, to check the delivery properly or to count the
48 waste accurately.
