     1   MR. MORRIS (To the witness):  Just one question I was going to
     2        ask you about the high pressure sprays used in the
     3        slaughter plants?
     4        A.  Yes.

     6   Q.   They are standard practice in the industry, yes?
     7        A.  There are quite a few people that are doing it.  To say
     8        it is a standard practice, I cannot say.

    10   Q.   In your suppliers anyway, so far as you have seen?
    11        A.  We used a lot of suppliers.

    13   Q.   From the ones that you have seen, they use?
    14        A.  No, not all of them.

    16   Q.   Some of them?
    17        A.  Yes, some of them.  In fact, we are pushing for that.
    18        It is one of a package of the recommendations that we have
    19        been discussing with the US DA, so that there is
    20        regulations on the minimum practices to ensure food safety.
    21          That is one of those.  There is not everybody that is
    22        doing it.

    24   Q.   But is there not a problem with the mist created because of
    25        the spray?
    26        A.  If it is -- if it is the mist, it could be a problem,
    27        it is not during when the animal is moving.  If there is a
    28        problem, it is when the spray hits the floor.  The spray
    29        then produces a fog that may contain bacteria.  There is
    30        another process that we are pushing for which is high
    31        pressure water with some acids and antimicrobials.  That is
    32        totally separate and it is a confined area.  That will not
    33        be a problem.

    35   Q.   So when the high pressure spray is sprayed upon the animal,
    36        the carcass, it will create a mist, though?
    37        A.  Very small.  When we say "the high pressure" it is
    38        really not that high, that high of pressure; it is only the
    39        pressure required for the hose, the distance from the water
    40        will go from the hose to the carcass.  I cannot estimate
    41        how many pounds per square inch of pressure, but it will
    42        not cause a big -- I will not be concerned with that to
    43        degrees.  It is not part of the critical control points
    44        that we identified for a plant.

    47        questions tomorrow about hygiene.  It is probably a good

    50   MS. STEEL:  Can I make an enquiry?  I do not know whether 
    51        Dr. Gomez Gonzalez has a list of the papers that he has had 
    52        published?

    54   MR. JUSTICE BELL:  Have you ever had to do a CV which includes
    55        lists of publications you have contributed to?
    56        A.  No, quite frankly, there is a lot of times where I have
    57        published, where I have not recommended where it is at,
    58        especially in the trade magazines.  I did it, the last
    59        time, probably, it was a long time ago, six years or so.
    60        No, I do not have a list.
