5 they are not below ground.

11 Q. You see all the way along here that there are facilities
12 for washing of various kinds: hands, aprons, so on and so
13 forth. Do you have those?
14 A. Yes.

16 Q. If you could use this in your imagination, and it may be
17 difficult I appreciate, as a rough model with what you have
18 got at Midland Meat, where would the meat inspectors mostly
19 be? Would you have one at dehiding, for example?
20 A. Not necessarily. They would be further along the line
21 from that. I cannot quite see on here where the offal
22 goes.

25 has "Inspection" written on it?
26 A. Yes. It would be around that sort of area of the
27 slaughter hall, yes.

30 condemned and detained rooms. What about at Midland Meat

32 A. Yes, it is the same, except the condemned room is below
33 the detained room.

39 A. The detained room is chilled, yes.

50 is a branch one to condemned room and one to detained room?

54 A. One line will go straight to the chiller. If a carcass
55 is detained for any reason it will go into the detained
56 room and from there, if condemned, it will go down a hoist
57 to the room below it which is the condemned room.
