inspector in question, the inspector in change of
2 establishment 146, says this:
3 "This is to advise you that according to our records of
import inspection reports HA 135 L, there has not been any
4 importation of boneless beef, fresh or frozen, from the
countries of central America. Further, I would also
5 advise to the best of my knowledge that all boneless beef,
fresh or frozen as inspected by the inspection staff, has
6 originated from Canadian registered establishments
operating under Canadian Meat Inspection Act and
7 Regulation."
8 Then, my Lord, document 56, this is from one of McDonald's
suppliers in California, 27th April 1993. It is again to
9 Mr. Cohen in Canada:
10 "Dear George, after reviewing the correspondence received
I can state that you are correct. We at Golden State
11 Foods have not, do not and have no intention of using
anything but US domestic beef. I have personally been
12 involved with the processing of McDonald's beef patties
for over 22 years (this is in 1983) and at not time have
13 we used imported beef. The next time you see Phil" --
that is a reference to His Royal Highness the Duke of
14 Edinburgh -- "tell him from me that we are not the
culprit".

My Lord, 58, again a short document. This is another
16 Canadian Government document, this time apparently from a
different inspector whose name might be "Shaltarnos" but
17 I cannot be sure because it is difficult to read. The
date is 4th May, 1993.

"Dear sir, in answer to your request whether Caravel
19 Foods imports meats from foreign countries, I can assure
you Caravel Foods does not use imported meats from the
20 USA, central or South America, New Zealand or Australia.
Caravel Foods uses only fresh or frozen boneless beef or
21 pork originating from Canadian meat packing plants
operating under the Federal Meat Inspection Act and
22 Regulation."
23 Finally, my Lord, 5, a very short document, this time from
Caravel Foods. They had been getting the information and
24 now they supply it to McDonald's in person of Mr. Jack
Petigrue, May 9th 1993:

"Dear Jack, this is the stamp that we insist for the
26 company on every shipment of fresh and frozen meat that
enters this plant". Signed by Mr. Greenspan. One sees
27 the certificate or stamp that these suppliers insist on
from their suppliers which reads as follows:

"I do hereby certify that the described shipment covered
29 by this invoice consists of boneless beef slaughtered",
that is the important word, my Lord, "slaughtered and
30 processed in Canada".
