         Q.   We are just trying to establish what they are saying in
     2        the grey book.  Are they saying they are not ideal
              figures, they are just ones they can reasonably try and
     3        move the population towards?
              A.  Yes, that is right, bearing in mind the current
     4        situation in this country and the current state of
              knowledge and our understanding of the relationship
     5        between diet and health.  They are making the best
              judgment they can.

         Q.   But the impression given from that is they would like the
     7        figures to be lower on health grounds, is that correct?
              A.  No, I do not think so.  I think what they are saying
     8        is that when you are considering something like vitamin C,
              it is probably possible to get near to what they would
     9        term the ideal.  Once you start looking at total fat,
              saturated fat and sugar, you cannot actually do that,
    10        largely because of the fact that there is not this
              specific requirement for these individual nutrients.  Are
    11        you with me?  With something like vitamin C we have to
              have that.

         Q.   Yes, but with saturated fatty acids you do not have to
    13        have them at all?
              A.  No, we do not have to have them but we have to have
    14        the energy.  Energy is the prime requirement we need and
              that has to come from somewhere, so bearing that in mind
    15        they are saying these would be reasonable figures.
 
    16   Q.   You can get energy from carbohydrates, for example?
              A.  Yes.

         MR. JUSTICE BELL:  Let me interrupt you a moment.  How much of
    18        the grey book are you proposing to put to the witness?
 
    19   MR. MORRIS:  This is quite important because it underlines all
              the chart.

         MR. JUSTICE BELL:  I am just asking you how much of the grey
    21        book you are going to put to the witness.
 
    22   MR. MORRIS:  There is about -- well, it is a substantial -- not
              the whole book; I am talking about five or six quotes from
    23        it, to establish whether the limits that were originally
              touted at the beginning ----

         MR. JUSTICE BELL:  I do not think we will get through that this
    25        evening and I think we have to decide what the plan is.
              We cannot just sit on indefinitely.  How long do you think 
    26        it will take you?  I am not sure. 
  
    27   MR. MORRIS:  It is not the final part of our ----
 
    28   MR. JUSTICE BELL:  What else do you have to ask about then?
 
    29   MR. MORRIS:  It relates to the evidence also on the health
              implications themselves, cancer and heart disease.  Then
    30        there is not much else after that.  I think realistically
              we should be completed within two hours.
