     2   MR. RAMPTON:  My Lord, I have finished with boning temperatures.

     4   MR. JUSTICE BELL:  Yes.  (To the witness):  What equipment did
     5        you use to take the temperature of the -----
     6        A.  Of the meat?

     8   Q.   Yes.
     9        A.  It is a standardised equipment that is used in meat
    10        industry very widely.  I cannot remember the exact name of
    11        the thermometer.

    13   Q.   But was it your or was it one -----
    14        A.  It belonged to the OVS's office.  It was there when
    15        I started working.

    17   Q.   Where was it kept, though?
    18        A.  It was kept in the OVS's office.

    20   Q.   So, if someone was taking temperatures, if a member of
    21        staff, a supervisor, whoever, was taking temperatures of
    22        meat going into the boning hall or actually in the boning
    23        hall, they would not use that thermometer?
    24        A.  No, they would not, they would use another one.

    26   Q.   Did you ever see anyone using a thermometer in the boning
    27        hall, apart from yourself?
    28        A.  No, I did not.  What surprised me is that nobody  --
    29        since I had discussed temperatures of the carcasses that
    30        were being cut up and did it sometimes together with the
    31        supervisor, so that he was there because he was also
    32        interested in the matter, I was surprised that he did not
    33        tell me:  "We do these temperature measurements as well.
    34        Come and see when I do it next time in half an hour's
    35        time".

    37   Q.   Can you remember the supervisor's name?
    38        A.  We were on first name terms at Jarretts.

    40   Q.   Yes, can you remember his first name now; if you cannot,
    41        say so.
    42        A.  There was an older man whose name was Gordon, first
    43        name is Gordon, I think, and then there was a younger man
    44        whose first name I cannot remember at the moment.

    46   MR. RAMPTON:  Are these supervisors in the boning hall?
    47        A.  They were supervisors in the boning hall and they also
    48        supervised the dispatch chill.

    50   MR. JUSTICE BELL:  When you say you took the temperatures twice 
    51        a day, sometimes more often, did you do that every day or 
    52        just some of the days you were working there? 
    53        A.  I did not start doing that until the second week I was
    54        working there.

    56   Q.   But then did you do it every day?
    57        A.  Then I did it every day.
