2 A. That is right, and we have to put a reason into the
3 computer for anyone who did not work at all for that pay
4 period, whether they were on leave of absence, or whether
5 they were on holiday, or sort of thing, sickness.

7 Q. That is something that goes to Head Office, is it?
8 A. We keep it in the store.

10 Q. Right. How far have you got those going back?
11 A. I have no idea. We have reports, but how far they go
12 back, I do not know.

14 MR. JUSTICE BELL: What form does that document take? Is this
15 part of the 18 or 20 pages?
16 A. No, that will be in addition to that. That will come
17 out extra. So you will get maybe 30 pages altogether out
18 at the end of the paper, how much people have worked, where
19 the people have zero hours, where the people have any
20 statutory sick pays put on, everything that they are paid
21 or the restaurant has paid anyone over that entire two week
22 period.

24 Q. What is the sheet which tells you how many people have
25 worked no hours or over 39 hours?
26 A. There are two or three different sheets. There is one
27 which is called the zero hours report, "Crew with Zero
28 Hours" is the title. That will tell you who has not worked
29 at all. There is another one, I forgot the title of it,
30 I think it is excessive hours/something else, or long
31 hours, and that will come out and that will tell you.

33 Q. But how many sheets are those? Would it be one sheet for a
34 two week period which is just pinned to -----
35 A. No. It will go down each crew member and it will
36 basically have a report at the end of it, so perhaps again
37 two or three pages but not as many as the 18.

39 Q. For a fortnight?
40 A. For a fortnight because there will be very few people
41 obviously that had no hours.

43 Q. That is why I could not understand why it should be two or
44 three pages. I mean, if there were very few, I would have
45 thought it would be half or quarter of a page of that green
46 lined -----
47 A. What it does, it just has every individual crew
48 member's name and just a little totalled on the side,
49 whether they have worked over the hours, so it is broken
50 down.

52 Q. I see. So there is a token for if they have done zero
53 hours or if they have done more than 39, for instance?
54 A. That is right. You will have entered a code, like "L"
55 for leave of absence or "S" for sickness next to them if
56 they have done zero hours.

58 Q. So on the sheets concerned, there would be all the crew but
59 some of them on the crew zero hours would have a zero total
60 against it?
