     2        A.  Yes.

     4   Q.   What written documents do you supply to McKey's in terms
     5        of, say, certification or something like that?
     6        A.  We supply obviously delivery documentation.

     8   Q.   Delivery documents?
     9        A.  Yes.

    11   Q.   Is that it?
    12        A.  Yes.  We supply them with a certificate for E.coli
    13        testing as well.

    15   Q.   E.coli testing?
    16        A.  Yes.

    18   Q.   Anything else?
    19        A.  Yes.  Actually I think there is a document McKey's
    20        require which used to be called an EC 1304 certificate
    21        which was basically a vet's certificate we were talking
    22        about earlier.  Since the harmonization of Europe this has
    23        sort of been replaced by what we call a commercial
    24        document.  I believe we supply McKey's with that.

    26   Q.   Just the vet's certificate.  What information would that
    27        contain?
    28        A.  It is just a document which states -- I cannot tell you
    29        exactly what it states, but words to the effect that the
    30        meat in that consignment has been slaughtered in accordance
    31        with the EC regulations we have been talking about and has
    32        been done from our plant.

    34   MR. JUSTICE BELL:  Is there nothing since 1964?
    35        A.  Yes, sorry there are lots of different regulations.

    37   Q.   But they are brought up-to-date all the time?
    38        A.  Yes.  Unfortunately, as often is the case, no one
    39        supersedes the other, so there are numerous documents and
    40        regulations, both domestic and European.

    42   MS. STEEL:   From when the cows are put into the stunning pen
    43        how long is it before they are stunned?
    44        A.  Before they are stunned?

    46   Q.   Yes.
    47        A.  Well, it is immediate in that it is as soon as the
    48        gentleman doing the stunning can actually get a clear shot.

    50   Q.   How long is that usually? 
    51        A.  It can be sort of straightaway or it can be he will 
    52        wait until he can get a good stun.

    54   Q.   So, if their head is on this ledge it is not automatic then
    55        that you can get a good stun from that?
    56        A.  No, obviously the animal moves its head and naturally
    57        moves its head, and he will wait until he can stun it
    58        effectively, until he can hit the required place.
