3 Q. So if a grill was not reaching the minimum standards, that
4 would have to be immediately -- if it was not reaching
5 minimum temperature, for example, set by -----

7 MR. JUSTICE BELL: Mr. Morris, let me put it to him.
8 (To the witness): What is being suggested is that it is
9 safer -- however safe it was before leave to one side -- to
10 test the internal temperature, quite apart from visual
11 checking for pink meat, to test the internal temperature a
12 certain time after it has come off the grill, because that
13 way, by doing your spot checks every now and again, you
14 know that the grill is working to get it up to a certain
15 minimum temperature over a certain period of time; whereas
16 before, if you just had X degrees for Y seconds, if your
17 grill for any reason was not working just as it should, you
18 might not have been reaching the required number of degrees
19 for the required number of seconds.
20 A. I cannot guarantee that it is safer. We have been
21 doing research. Sometimes we find the new piece of
22 equipment is safer, sometimes we find the other piece of
23 equipment is safer. It is, however, a more accurate way of
24 measuring that. I can guarantee that.

26 MR. MORRIS: So the internal temperature which you are now
27 testing, the 155 degrees Fahrenheit minimum, has that
28 increased from the previous times? Is that temperature you
29 are setting as a minimum standard greater than it was in
30 the past?
31 A. I do not know. I have not been -- I am not aware of
32 any changes in temperatures. Since I have been with the
33 company it has been 155 degrees to 160.
