Day 106 - 23 Mar 95 - Page 50

  Q. You do not know what they were specifically testing whilst
       you were there?
       A. While I was there specifically they were doing fat
content as I recall. There was nobody -- there are two
sections: there is the physical testing with physical
parameters and then there is a microbiological section at
the back. As I recall, there was not a lot of activity. I
do not think there was anybody in there at that specific
       time.

  Q. You do not remember anybody in the microbiological testing
       area?
       A. As I recall there was not a great deal of activity
there, but that does not necessarily mean anything. You do
not need people around to have tests once they are in the
       incubators.

MR. MORRIS: When the finished product came off the line, the
patties, did you see any patties being taken for testing or
       being tested?
       A. Not that I recall.

  Q. How long were you there watching that area?
       A. We were there, it is difficult to say, but it was a
while, tens of minutes. We spent sometime dallying over
the magnetic screening and played around with the rings
       going through the metal detector.

MR. JUSTICE BELL: Were you taken on a guided tour or did you
say what you wanted to see?
       A. My Lord, it was very much a guided tour.

  Q. Did you ask to see anything which you had not been shown?
       A. Yes, and was shown. Basically I saw the whole
       operational area.

  Q. You saw what you wanted to see then?
       A. Yes, indeed. No problems there at all. Although, if
I may add, that is not the way to do an inspection.
I would much rather do inspections solo, but when you are
in a new building and you do not know the way -----

  Q. All I am trying to find out, it was not just following the
person who was taking you around; you did on occasions ask
to see something and your request was granted?
       A. Indeed it was, yes. That applies -- there was one area
where they actually assembled boxes, the box erection area,
       which they took me to.

  Q. I have borne in mind that you were told you would not be
shown documents beforehand, but if you wanted to see a
particular process or a particular part of the factory, you
could have asked; when you did ask you were shown?
       A. Indeed. They could not have been more helpful.

MR. MORRIS: Just one subject. Did you ask about the fat
content that they were seeking for finished products?
       A. In the context of asking how the burgers were made,
yes. I recall being told the fat was 10 per cent. I see
