     2   MR. JUSTICE BELL:  What about the storage?  Is that the storage
     3        chiller as well?  No, that is boned, is it not?
     4        A.  Yes, bone-in meats, where it is a lamb, most certainly
     5        that will go out as the lamb without any further
     6        processing, and the same would apply if it is a beef 4.
     7        I am looking at 25th March.

     9   Q.   I appreciate that the boned beef, which appears on the same
    10        sheet, might well have been on the trimtable in the
    11        previous day?
    12        A.  Yes.

    14   Q.   But if we got the trimtable in the boning hall consistently
    15        "E", let us say, it does not seem to mean that the boned
    16        meat ----
    17        A.  The reason for that would be that boned meat comes in
    18        to the boning room at a low temperature.  It does not
    19        remain there very long and then passes again into a low
    20        temperature chiller.  The temperature of the boning room is
    21        12 degrees Centigrade, 50 something Fahrenheit, quite cold,
    22        but not cold enough to stop all bacterial growth.  The
    23        bacterial growth is not rapid at boning room temperature,
    24        but a trimtable or a cutting block is there all day;
    25        whereas the meat passes in and out and that would explain,
    26        in general terms, why we do not necessarily get an "E"
    27        grade transferred from the table to the meat.

    29   MR. MORRIS:  I am still a bit confused.  I thought that the beef
    30        that goes in from the chiller on, say, the date of 25th
    31        March, chiller 10387 goes into the boning hall, yes?

    33   MR. RAMPTON:  No, Mr. Morris is not looking at the right part of
    34        the page.  He needs to look at the storage chiller.

    40   MR. JUSTICE BELL:  That is why I asked about them.  If there is
    41        a "C" report number something and not a classification,
    42        does that mean it has not even got an "E", or do you just
    43        not know, and I am looking at page 67?
    44        A.  Which are we looking at?

    46   Q.   At the very bottom of page 67.
    47        A.  It says "See report no. 10342".

    49   Q.   I do not suppose we have got it?
    50        A.  I cannot explain fully.  I can only assume that that 
    51        report is included on that page for some reason which 
    52        I cannot explain.

    56   MS. STEEL:  Can I just say that whilst there is some improvement
    57        in the June report on the trimtable and cutting block,
    58        certainly by September, and September through to November,
    59        they are all back down to the Es again.
