Day 166 - 28 Sep 95 - Page 67

Q. Both, total?
A. Two or three. They would leave at various times. For
instance, I said earlier, you have got the breakfast
Manager might go at 2 o'clock.

Q. Right, but on average it was two or three that would be on
duty at any given hour?
A. I had 17, I recall about 17, people to schedule on what
I call the management schedule. Whether or not they were,
like, all salaried managers or all floor managers, there
would be a lot of us at times, a lot when necessary.

Q. But, generally, it was two or three; is that what you are
saying?

MR. JUSTICE BELL: Was there a "generally"?
A. There is no written thing for me to follow or anything.

Q. It seems to me that at the moment the picture I get is
that, entirely consistently with McDonald's policy (with a
very small P) with regard to scheduling, you try to match
the number of crew working at any given time with the
amount of custom you expected?
A. That is right.

Q. Presumably, the number of managers and floor managers was
related to some extent to the number of crew who were
working. I suppose you have a minimum because you have a
minimum number of areas, whether they are busy or not,
where you may only need a floor manager at least. But did
the number of managers vary with the number of crew to some
extent?
A. At weekends, on Sundays and Saturdays, you would have
many more working than during the week. I would probably
have two or three working on the nights as well. Having
like 17 people available to schedule, days off included
courses to go on, holidays, you know. You are able to put
the right -- the managers in to manage the restaurant.

MS. STEEL: So at weekends and holiday there might be five or
six on at a time?
A. Yes.

Q. Yes?
A. Maybe have part-time managers, floor managers working
for me as well.

Q. On top of that?
A. They also made up -- you know, during the summer
holidays they would be doing more hours.

Q. I was not clear what you said actually. You said, yes, to
there might be five or six at a time, weekends and
holiday. Then you said: "Part-time floor managers working
for me as well". So what I am asking was, when you said
the part-time floor managers working for you as well, was
that on top of the five or six?
A. No.
