Day 102 - 13 Mar 95 - Page 55
approximately.

Q. Each line?
A. Yes.

MS. STEEL: If you could turn to page 108, this says: "Speed
yellow evisceration line to 6,000 birds an hour".

MR. MORRIS: .2.
A. Yes.

MS. STEEL: Is that, in fact, the speed that the line usually
goes at?
A. No, it is not.

Q. It is not? Can you explain what that is then?
A. Well, I think they are saying that if one line breaks
down, the other line can work to a maximum of 6,000 birds
per hour. But that is only for an emergency.

Q. The yellow and the blue, is that then one for cockerels and
one for pullets?
A. Yes, I am not sure which is which.

Q. So does that then mean if there was a breakdown cockerels
and pullets would be put on the same line?
A. I am not sure whether that can happen; I presume it
must do, if that is what they are saying. In theory, the
equipment can probably do both, but it would not be ideal
because it is adjusted to birds' size and everything has to
be adjusted. The stunning bath, the neck cutter, the
evisceration equipment, all has to be adjusted to birds'
size. So, there is not really very much flexibility
between the two lines. It would take quite a long time to
set it up.

Q. How often does it happen that one line does break down?
A. Well, I think it is very rare; I do not know how
often. I am not aware that it happens very often and, if
it does, it is only for a short time in which case this
kind of arrangement would not be necessary.

Q. Why would the company do out a job procedure for something
that was not necessary?
A. Well, I think they are only saying it is a procedure
for an emergency breakdown, and it would have to be an
emergency breakdown of some considerable length to make it
worth doing.

Q. Do the two lines go through the same stun bath or do they
have separate stun baths?
A. No, they have separate stun baths.

Q. On page 111 there is a chart about sterilizing knives?
A. Yes.

Q. How many knives are there, generally, in the -- there would
be one that the workers were using and then there would be
another that was in the sterilization tank, yes?
A. Yes, there would normally actually be three or four in
