Day 131 - 06 Jun 95 - Page 73
hustle should to be redefined because, as he rightly says,
it is not meant to include sliding or whatever it may be,
and it seems that there was a breakdown in communications.
If that is what he found, I am sure that is absolutely so.

MR. MORRIS: There is no breakdown in communications, is there,
at McDonald's? What is absolutely clear is that people are
expected to work as fast as they possible can, that if
workers can do the job at speed then they can lay off other
workers to keep the labour costs down? That is the culture
in McDonald's, is it not, Mr. Purslow?
A. No, that is nonsense. That is nonsense. You do not
prepare an efficient product like that. Do you know
anything about the way industry works? That is nonsense.
You staff your store and you staff any industry to produce
an efficient product and you use the number of people to
produce that efficient product. If you are cutting
corners, if you are burning hands all the time, you are not
serving your customers. There is no point in it. It is
going to cost you a damn sight more in the long term. Any
company is set up to be efficient and to be efficient you
want the right product and you want it produced safely.
Any company that is successful achieves that.

MR. JUSTICE BELL: What I was inviting you to do a moment ago
is when you finished with hustle and slipping, sliding,
dodging around, take a moment or two to think if there is
some other particular operation you have in mind.

MR. MORRIS: Bearing in mind the so-called misinterpretation of
hustle which I would say, of course, is the correct
interpretation of hustle, to work as fast as
possible -----

MR. RAMPTON: My Lord, does Mr. Morris mean to ask a question by
making that speech or not? We will get along faster if he
stops making speeches.

MR. MORRIS: Have you recommended the Company drop the whole
concept of hustle in order to protect the safety of
employees?
A. No. We suggested it be redefined which is exactly what
happened and what was recommended in this particular
instance.

Q. So you have redefined hustle to work carefully, yes?
A. No. We have redefined to hustle to say speed and
efficiency and specifically to say that it does not mean
running.

Q. So you hustle carefully?
A. If you like, yes.

Q. It is a contradiction in terms, is it not?
A. No, I do not see that, I am sorry.

MR. JUSTICE BELL: Not necessarily.

MR. MORRIS: If you are a safety consultant, you claim to be an
independent safety consultant?
