Day 252 - 20 May 96 - Page 31
composition, in other words, a high saturated fat content,
this leads to an elevated level of one of the constituents
in the fats, which is the cholesterol.

MS. STEEL: 30 and 40 percent of calories from fat are both
quite high really are they not?
A. Well, if you look at the diet and cardiovascular
disease report you will see in countries like Ireland and
Denmark mean consumption is as high as 50, 55, percent of
the calories.

Q. Right, but in other countries there is less than 20
percent?
A. Yes, that is very uncommon. One is talking about
impoverished countries, I think, not a westernised society.

MR. MORRIS: Like China, for example?
A. Rural China, I don't know.

Q. With a billion people living there. So it is not uncommon
for people in the world to have a low fat diet is it?
A. Well, a million people in a predominantly rural
population. I do not know what the position is in the
urban population but the Chinese diet is lowish in fat as
is the Japanese diet, yes.

MS. STEEL: Can I just ask you as well, when you were talking
about the milkshake cannot be animal fat, do you not
include in animal fat things like the fats in creams and
butter, and things like that?
A. Oh yes, yes.

Q. You do include?
A. Yes, if you thought about something like double cream,
for example, which still contain a lot of water, it is not
100 per cent fat, I think you would have for this
milkshake, if it was made from double cream, or something
like that, you would have consume about two pints of it to
get that level of fat intake of 120 grammes, which is a
huge amount. When they talk about a milkshake there is no
indication that it is made from milk at all, certainly not
in the paper, and I think the term milkshake is used
loosely to describe a creamy sort of drink. In other
words, emulsified fat. The point I was making was you
could not make a milkshake from dripping or lard or chicken
fat, and I think you would have even more difficulty in
getting somebody to drink it.

MS. STEEL: I do not whether it would be convenient to break
now?

MR. JUSTICE BELL: Yes.

MS. STEEL: I am moving on to something that is going take
longer than 5 minutes.

MR. JUSTICE BELL: Yes. Two o'clock.
