2 Q. You said yesterday that if there was a problem with the
3 grills tripping out, or whatever, then the food that was
4 being cooked on them would be thrown away; is that right?
5 A. That is correct.

7 Q. That is not what you say in your statement, is it, on page
8 11 of your statement, or is it different for the chicken
9 vats, or was that the same? Did you throw away all the
10 products from the chicken vats that -----
11 A. If you had been cooking on a grill and if come, for
12 instance, the meat had reached the end of its cooking
13 cycle, you are removing the meat from the grill and the
14 grill tripped out, you would still apply the same rules you
15 would do normally; you would ensure that that product had
16 reached the correct temperature by using the normal visual
17 checks and, if necessary, you would do on internal probe.
18 But if something was half through its cooking cycle or
19 even, like, 97 per cent of the way through its cooking
20 cycle, you would still discard it.

22 If you took a bag of chicken out of the vat and as you took
23 it out of the vat you noticed all the lights going off and
24 the HVAC failing, and the vat going down, you test that
25 chicken. You would ensure the chicken was fit to serve and
26 then you would serve it, but if you are still cooking it,
27 then you would discard it.

51 A. As they are all in the same basket and they are all
52 covered by the same shortening and the vat is at the same
53 temperature equally across, then yes.
