Day 079 - 27 Jan 95 - Page 52
A. Yes.

Q. Ireland, Scotland and England only account for something
like 69 per cent, so 31 per cent of the meat used for
McDonald's is bought from sources outside of Ireland and
Britain, so it is not "very occasionally", is it?
A. That statement was written a year ago. Out of courtesy
to this court, I submitted an analysis of last year's
purchases, so it has changed.

Q. You said that was last year?
A. Oh dear.

MR. RAMPTON: The statement, my Lord, was signed on 22nd
February 1994.

MR. MORRIS: So, on 2nd February 1994, are you saying that the
percentage that comes from outside of Britain and Ireland
fluctuates wildly?
A. It depends entirely on commercial points and fact the
meat may be high priced in England and low priced in
Ireland, or high priced in Ireland and low priced from
England. It may be that the price in France is such that
the opportunity arises to increase purchases from France,
but the majority constantly comes from the British Isles.

MR. JUSTICE BELL: We come back to these percentages again. Is
this back on policy or soya in Germany or what is it on
now, these percentages?

MR. MORRIS: If you want to know, I think the phrase "very
occasionally" described 20 or 30 per cent something.

MR. RAMPTON: No, my Lord, that is not fair. That is a year
ago. Mr. Morris must grasp what happened. My chart
relates to 1994. This statement was signed in February
1994.

MR. MORRIS: Yes, I did ask -----

MR. JUSTICE BELL: All this is comment, you see.

MR. MORRIS: I know, yes.

MR. JUSTICE BELL: One way or the other.

MR. MORRIS: Yes. In paragraphs 13 and 14 you said you agree
with the conditions and standards that have been described
by Dr. Gregory as the Plaintiffs' expert witness, and they
are consistent in all the abattoirs. Is that true?
A. Yes.

Q. You said on paragraph 15 about traces of the stomach
contents of animals or faeces on meat which arrives at
McKey's the meat will be rejected. When the spray,
I cannot remember the word, the tepid spray is used in the
lairage, does that help to -- you said something about
preventing dust, so that helps, does it, partially to do
deal with that problem?
A. No, it has nothing to do with it. The hide is still on
