13 Q. He then says over the page that there are a number of
14 checks to make sure that raw or under-cooked meat was not
15 sold. Any comments on the maintenance of the holding time
16 in the production bin?
17 A. Holding time in the production bin -- it was,
18 I believe, 10 minutes but it was never -- nobody actually
19 adhered to 10 minutes and they were basically in the
20 production bin until they were sold or, I mean, unless they
21 were well over something like half an hour and it was
22 obviously not edible any more.

24 Q. He says in paragraph 12, well, I will leave the first
25 part. Can I just say, I think it is clear that Mr. Davis
26 only remembered one incident with the blocking of the
27 drains and Mr. Alimi remembers more, so there is not much
28 point in asking about that really. Sorry, can I ask, is it
29 possible that Mr. Davis's incident was different from the
30 ones which you remember?
31 A. It is possible because when I was there when --
32 I remember at least two occasions when the drain was
33 blocked, the sewerage was coming up and covering the floor
34 of the back room area and the kitchen, and I do not
35 remember the store having been shut on those occasions.
36 So, that incident must have happened on another day when
37 they shut the store.

39 Q. OK. The last bit, he says about your allegations of out of
40 date lettuce and onions being sold is not true; do you have
41 any comment on that?
42 A. All I can say is that Mark himself, I remember one
43 occasion now when Mark himself was in the store and in
44 charge of the kitchen area when it happened, and he
45 instructed me himself to go ahead and use it because it was
46 only one or two days out of date.

49 statement anyway, about the top hot plate falling on
