Day 097 - 06 Mar 95 - Page 76

       A. It is manual.

  Q. Take that chap, does he use a knife?
       A. Yes.

  Q. If he is not cleaning his knife between one animal and the
       next, does that matter?
       A. It would certainly be important if it split the gut of
       the animal.

  Q. If he split the gut. Anatomically speaking, at what point
does he sever the viscera from the rest of the carcass?
       A. At that stage.

  Q. Sorry, what part of the animal?
       A. Right. Well, either end of the elementary canal.

  Q. So there are two cuts?
       A. It is obviously joined at the rear end.

  Q. We have a rough idea of the anatomy of mammals, but there
is one up here, is there?
       A. Yes.

  Q. And one down here?
       A. Yes. Largely that falls out because do not forget the
       animal has been decapitated before.

  Q. Falls out by force of gravity?
       A. Yes.

  Q. Is it not disconnected?
       A. Yes, it is disconnected from the animal.

  Q. Does it have to be disconnected at both ends?
       A. Yes.

  Q. It does. You told us about the rubber ring round the
oesophagus. That is just a straight cut at the top, is it?
       A. Yes.

  Q. Then at the bottom, how is it disconnected from the anus or
how is the anus disconnected from the body or whatever the
       operation?
       A. OK. As it comes through the process somebody will make
a cut around the anal sphincter and actually loosen that
off inside, if you like, and then a bag, a polythene bag
which is actually a large glove, is placed over that with
an elastic band at the bottom so it is sealed at that end.
So when they then eviscerate that free that off and it
       comes out.

MR. JUSTICE BELL: The head end is hanging lowest of all?
       A. Yes.

  Q. So you can use your rod and band. What do you? Stick the
rod in and roll the band up the rod and on to something or
       other?
       A. Yes, the rings are loaded on to the rod. It is kind of
mechanical, there is something like a trigger on it that
