Day 031 - 05 Oct 94 - Page 48

  Q. Underneath it says: "The evidence is clear that the risk
of certain types of cancer is directly associated with the
level of total fat in the diet".
       A. Yes.

  Q. So, in that respect do they accord with your view?
       A. Yes.

  Q. If we now move on to page 157 under Conclusions, may I
just read out the first sentence: "Dietary factors are
now known to influence the development of a wide range of
chronic diseases, eg. coronary heart disease, various
       cancers, hypertension, cerebrovascular disease, and
diabetes." Does their view accord with yours?
       A. Yes.

  Q. As regards cancer anyway and heart disease which you are a
       specialist in?
       A. Yes, it does.

  Q. I think Helen has one further point to put to you.

MS. STEEL: I had one question which I missed out by mistake
and I have just realised. When you were talking about the
Scottish Health, that the Chief Medical Officer for
Scotland on Scotland's Health commented that the adoption
of a prudent diet should reduce the cancer burden. Could
you just explain what a "prudent diet" is?
       A. It would be in chapter 5 of that book, but the prudent
       diet -----

MR. JUSTICE BELL: I think you actually told us, did you not?
       A. Yes, I did. I said something about it being a diet
that is low in fat. I did not put any numbers on it
because I do not recollect them from precisely what they
are trying to get at, but it is generally in accordance
with these recommendations, that it is a diet which is low
in fat, particularly saturated fat, and that it is rich in
fibre and things associated with fibre. But, if I
remember correctly, the American prudent diet, if that is
what they are meaning, also said that there should be a
certain amount of polyunsaturated fats in the diet, up to
about 10 per cent of the energy.

MS. STEEL: I may have asked that before and, if I have, I am
       sorry.
       A. Yes. The details will be given in chapter 5 in that
       document anyway.

  Q. The final question is -- I do not know whether you have a
       copy of the -----

MR. JUSTICE BELL: Can we just make a note that when that
complete report is looked at, if there is a paragraph
which describes what the "prudent diet" is, I would like a
       photocopy of that page. Yes?

MS. STEEL: The last question: I do not know whether you have
a copy of the London Greenpeace fact sheet that is the
subject of the action up there?
