     2        find your second statement at tab 41 and the third sheet is
     3        a letter to Mrs. Barnes from Colchester Borough Council.

     5   MR. MORRIS:  You would recognise, would you not, that McDonald's
     6        specifications for each operation are very detailed?
     7        A.  Yes.

     9   Q.   And in many cases there are strict timings, strict
    10        movements expected?
    11        A.  The timings are about timing the product, about cooking
    12        the product.  That is what you are talking.

    14   Q.   Yes, but some of the movements are timed as well.  You
    15        have, for example, serving the customer within a minute?
    16        A.  Yes, serving the customer within a minute and cooking
    17        is specified.  That is absolutely so.  I do not know timing
    18        of any other tasks.

    20   Q.   If we look at this Colchester document -- have you looked
    21        into the timings of McDonald's specifications for each job
    22        to see if they are being timed?
    23        A.  No, I have not.

    26        A.  Not particularly.  It depends what they are trying to
    27        achieve.  You time work throughout industry.

    33        paragraph, last sentence, that the crew were expected to
    34        take not more than 10 seconds to complete a cleaning
