2 Q. You do not know what they were specifically testing whilst
3 you were there?
4 A. While I was there specifically they were doing fat
5 content as I recall. There was nobody -- there are two
6 sections: there is the physical testing with physical
7 parameters and then there is a microbiological section at
8 the back. As I recall, there was not a lot of activity. I
9 do not think there was anybody in there at that specific
10 time.

12 Q. You do not remember anybody in the microbiological testing
13 area?
14 A. As I recall there was not a great deal of activity
15 there, but that does not necessarily mean anything. You do
16 not need people around to have tests once they are in the
17 incubators.

19 MR. MORRIS: When the finished product came off the line, the
20 patties, did you see any patties being taken for testing or
21 being tested?
22 A. Not that I recall.

24 Q. How long were you there watching that area?
25 A. We were there, it is difficult to say, but it was a
26 while, tens of minutes. We spent sometime dallying over
27 the magnetic screening and played around with the rings
28 going through the metal detector.

30 MR. JUSTICE BELL: Were you taken on a guided tour or did you
31 say what you wanted to see?
32 A. My Lord, it was very much a guided tour.

34 Q. Did you ask to see anything which you had not been shown?
35 A. Yes, and was shown. Basically I saw the whole
36 operational area.

38 Q. You saw what you wanted to see then?
39 A. Yes, indeed. No problems there at all. Although, if
40 I may add, that is not the way to do an inspection.
41 I would much rather do inspections solo, but when you are
42 in a new building and you do not know the way -----

44 Q. All I am trying to find out, it was not just following the
45 person who was taking you around; you did on occasions ask
46 to see something and your request was granted?
47 A. Indeed it was, yes. That applies -- there was one area
48 where they actually assembled boxes, the box erection area,
49 which they took me to.

51 Q. I have borne in mind that you were told you would not be
52 shown documents beforehand, but if you wanted to see a
53 particular process or a particular part of the factory, you
54 could have asked; when you did ask you were shown?
55 A. Indeed. They could not have been more helpful.

57 MR. MORRIS: Just one subject. Did you ask about the fat
58 content that they were seeking for finished products?
59 A. In the context of asking how the burgers were made,
60 yes. I recall being told the fat was 10 per cent. I see
