              A.  I have seen information in the documents related to
     2        Perseco Europe.  I cannot say that I have seen documents
              in this case related to, for instance, Perseco Asia.

         Q.   If, overall, it worked out that that was the average
     4        amount for restaurants throughout the world, I mean, that
              is fairly likely because there are some restaurants in the
     5        world that do quite a lot more business than the USA?
              A.  I would not agree with that.  I cannot generalise and
     6        say that would be likely because, for instance, I would
              estimate the United States probably has the largest
     7        drive-through percentage as a general rule.  Therefore,
              I think a lot of our countries a greater percentage of the
     8        packaging would stay within the store.
 
     9   Q.   So it might well be more than 140 pounds of one premises
              waste?
    10        A.  It could be more, it could be less; there are
              different packaging practices.  Let me give you another
    11        example of that, how things vary from country to country:
              I spoke yesterday about how we have to wrap a lot of our
    12        cutlery, straws and coffee stirers because of public
              health restrictions within the USA, but if you go across
    13        the border into Canada, we at McDonald's wrap nothing,
              because for some inexplicable reason public health
    14        officials do not have those restrictions in Canada.  So,
              again, it really varies from country to country based on
    15        the laws, regulations and restrictions in the country.
 
    16   MR. JUSTICE BELL:  Could I ask one question?  We have had a
              number of references so far to restaurants having a staff
    17        of about 60 altogether.  That only leads me to ask this
              question:  Are all the restaurants pretty well the same
    18        size or do they vary quite considerably?
              A.  They vary quite considerably.  Today we have an effort
    19        to try to make our restaurants smaller, but if you were to
              take a mixture of all our restaurants historically, we
    20        have huge restaurants and we have very small restaurants.
              So I could not tell you where they all fit in.

         Q.   I am merely asking if this is leading to some arithmetic
    22        on total waste.  For instance, do you know how the average
              size of US restaurants compares, for instance, with the
    23        average size of a Phillipines restaurant or a British
              restaurant?
    24        A.  When you say "size", are you referring to physical
              size or sales?

         Q.   No, I am referring to turnover really. 
    26        A.  Turnover of the crew? 
  
    27   Q.   No, size in so far as it may affect waste.
              A.  OK.  So, really it is not the physical size because we
    28        can have small restaurants that generate a lot of
              business, that are very busy.  If you were to take a look
    29        at our report for 1993, stores outside United States have
              higher sales than the United States.  I think they have,
    30        as a rule, more transactions, but that is not my field.
              I get that from reading our annual report.
