Day 104 - 15 Mar 95 - Page 58
strains of food poisoning?
A. Yes, I think are you extrapolating it too far. I think
we are talking about therapeutic antibiotics here; we are
not talking about growth promoters.

Q. Therapeutic, yes. Is it true there are about 30,000
reported cases of Salmonella infections each year of which
about 2 per cent require hospital admission?
A. If that is what the report says I would not dispute it.

Q. You do not know what the figures are roughly yourself?
A. I have to go on figures like that.

MR. JUSTICE BELL: If you do not know, say so. If do know, and
can add anything beyond your own knowledge, please let us
know, Dr. Pattison?
A. No.

MR. MORRIS: Is it true that for this Salmonella type
typhimurium DT04 the study concluded that most cases of
infection were linked with foods bought from take-aways,
restaurants and bakeries and may be caused by undercooked
meat?
A. If that is what the report says I can only accept its
findings.

Q. I am asking you because you have said you have seen this
report or you have heard about it, whatever. Are you aware
that that was their conclusion?
A. I can only accept that if that is their conclusion,
I have no personal, I cannot add any more to it.

Q. But are you aware that that is their conclusion?
A. Well if you say so, yes.

Q. I am asking you if you know.

MR. JUSTICE BELL: Before it was put to you: "Were you aware
that was their conclusion"?
A. I was not to be honest, no, of that particular.

MR. MORRIS: So Sun Valley is not monitoring these kinds of
reports in any kind of detail; you just hear about it
through rumour, do you not?
A. No. What I did say, and what I have said already in
court, is that Sun Valley is collaborating with the local
public health laboratory in a survey which it is conducting
into the presence or absence of Salmonella typhimurium type
104. We are collaborating in a full and open way and
providing any samples that they wish to take on a regular
basis and I do not think we could do more than that.

Q. It is true that some people have died from that Salmonella
food poisoning, have they not, that particular strain?
A. It is true, yes.

Q. When the Sun Valley process plant receives bins of chicken
meat, when it receives 50 bins or something of GR light or
something, and it has a high temperature and a low
temperature and an average temperature?
