14 it 1 per cent, 2 per cent and then no per cent some weeks?

17 MR. MORRIS: If we look down the plus 96 hours column -----

19 MR. JUSTICE BELL: How much do I have to add to the 5 per cent
20 to get the people who are clearly working some overtime?

22 MR. MORRIS: It is difficult to say. I mean, it goes up as high
23 as 5 per cent over 96 hours in the page 4 Boreham
24 interchange -- sorry, 4.590 per cent. The next page is
25 between 1 and 2.5 per cent. There are quite a few 0s as
26 well. I would say something around 1 per cent.

41 restaurants; it would not take him long to check. So that

46 have this particular document open, that, Mr. Nicholson,
47 would you accept on the left-hand side as far as age groups
48 are concerned, that a substantial number of employees are
49 under 18? If you just cast your eye? If I said something
50 like a quarter of all staff were under 18, would you accept
51 that as a fairly reasonable rule of thumb?
52 A. I do not know. I have not analysed -- but it looks as
53 though you have got at Romford 12 out of 42, at Harlow 19
54 out of 56, at Upminster 7 out of 34. There is a good
55 number under 18, most certainly.
