              A.  I would accept that -- the numbers I gave you a few
     2        seconds ago, if a milk shake is ten and three-quarter
              ounces by volume, syrup makes up one ounce of that, if
     3        that is ten per cent, yes, fair enough.  I do not know the
              relative densities.  I am not a chemist, but I would have
     4        said to your question:  Do we add a lot of sugar?  I would
              say absolutely not; it makes up a very small part of the
     5        entire product.  The bulk of it is milk.
 
     6   Q.   Ten per cent?
              A.  And 90 per cent is milk.

         Q.   To get back to what we were saying.  The end result of you
     8        taking those basic household commodities, as you describe
              them, and adding in the preparation either as a cooking
     9        medium or as an ingredient, fat, sugar and salt means that
              you end up with a less healthy version of the original
    10        product?
              A.  Well, we, No. 1, I said a few moments ago, we do not
    11        add fats.
 
    12   Q.   No, I said as a cooking medium?
              A.  Actually in the cooking process of a pattie of beef,
    13        we remove fats.
 
    14   MR. JUSTICE BELL:  Is that cooked on a dry plate?
              A.  On a dry plate, Sir, yes.  There is no added fat.  The
    15        product starts out containing fat (some); it is cooked, it
              comes off the grill with less than it started with; the
    16        same as it would in your household if you cooked it in
              that manner.  We, in the cooking process in doing french
    17        fried potatoes, cook them currently  in a vegetable oil.
              And they do absorb fat in the cooking process; the same as
    18        would happen if you cook them in your kitchen.
 
    19   MISS STEEL:  You mentioned vegetable oil.  How long have you
              cooked your chips in vegetable oil?
    20        A.  A couple of years.
 
    21   Q.   Sing this action began?
              A.  It has always been a combination of animal vegetable.
    22        It has never been totally animal.  It has always been a
              combination of animal/vegetable from the first day
    23        McDonald's started in the United States in 1955.
 
    24   Q.   But it is now vegetable?
              A.  It is all vegetable currently, yes -- has been for a
    25        couple of years.
  
    26   Q.   Why is that? 
              A.  We did it in an effort to reduce saturated fats from 
    27        our menu; simple as that, with no loss of flavour.
 
    28   Q.   That was in the last couple of years?
              A.  It has been a couple of years.  It has been worked on
    29        for a long time, but we finally felt comfortable that
              which customers tell us they want, flavour, taste, value
    30        for money and improving nutrition as part of their way of
              life, are capable of being delivered today when they were
