     2        aspects of this audit, it is a time to record it and bring
     3        it to people's attention at a point in time.

     5   Q.   So the Manager would know that; they would get that message
     6        because it is on the front sheet, that they are expected to
     7        keep their labour turnover down?
     8        A.  They would get this written down, yes.  They know that
     9        because they are trained in it on courses and so on, so
    10        they know about the importance of retention.

    12   Q.   But you are reinforcing that here?
    13        A.  Yes, that is right.

    15   Q.   It is like the main thing on the front page that you see?
    16        A.  Yes.

    18   MR. JUSTICE BELL:  It is not the main thing on the front page;
    19        it is important enough to warrant a place on the front
    20        page, but above it is a summary of the conclusions to be
    21        drawn from all the rest of the report.  I am assuming that
    22        a high turnover might be a sign of something unhealthy in
    23        the restaurant.
    24        A.  Yes.

    26   Q.   So it is a very quick way of just checking whether things
    27        appear to be par or even better than par, or whether
    28        something may be a bit wrong in the house of McDonald, as
    29        it were; is that right?
    30        A.  Yes, because if as part of the discussion that you
    31        would have about the sections and how people had scored,
    32        you would also discuss the turnover, and if that had gone
    33        either up or significantly down you would praise the
    34        Manager and things like that.  So that, yes, it is another
    35        indicator that forms part of it.

    37   MR. MORRIS:  If we move to another document which is -----

    39   MS. STEEL:   There is something else I want to ask about that.
    40        Were these figures that you would get from the front of
    41        here about people joining and leaving used to compile
    42        statistics about turnover?
    43        A.  I think this will answer the question.  This was a
    44        previous format.  This was the only information we used to
    45        be able to get.  So, I do not know if that answers your
    46        question, but that was how it appeared on the report we
    47        used to get before that one.

    49   Q.   Before the computerised ones with the green bits across
    50        them? 
    51        A.  Yes.

    53   Q.   Is that information still on the personnel audit or not?
    54        A.  It is in a different form, I believe, and I cannot
    55        exactly recollect how it is presented now.

    57   MR. MORRIS:  When they fill that kind of information in, if
    58        managers keep people on their books many weeks longer or
    59        possibly many months longer than the last date they
    60        actually worked, especially if they have not actually
