Day 099 - 08 Mar 95 - Page 33

MR. MORRIS: Sorry, which numbers are we on?

MR. RAMPTON: 1 and 2. "6. Microbiological analysis of meat on
arrival". Have you seen them doing that?
       A. Yes, I have.

  Q. Then there is a rather horrendous thing: "Random species
testing to confirm meat is of bovine origin". Is that a
       legal requirement, do you know?
       A. No, I do not think it is.

  Q. Is it in case there is a piece of sheep or something got
       mixed up with the beef?
       A. That is right, yes.

  Q. Then: "13. Batch temperature checks, grinding head,
stripping and cleaning", that is sort of comminuting the
       meat; is that right?
       A. Yes.

  Q. "Bone elimination systems fitted to all final grinding
plates". Have you seen all those three things in
       operation?
       A. Yes.

  Q. "18. Temperature of freezing tunnel. 19. Liquid nitrogen
control settings. 20. Liquid nitrogen pressure settings.
       21. Product temperature at tunnel exit". Do those four
       things go together?
       A. Yes, they are all relating to the freezing tunnel.

  Q. They are all to do with temperature control, are they?
       A. They are to do with actually freezing the burgers.

  Q. Then 26, at the bottom of the page, "Sealed carton
packaging checks", what does that mean?
       A. There are a number of checks that are done on the
sealed carton. You look at the code dates to ensure that
the correct date has been put on.

  Q. Is it important that the carton should be properly sealed
from a food contamination point of view?
       A. Yes, from food contamination it has to be sealed
properly and also to prevent dehydration of the product in
       the freezer.

  Q. What do they use to seal it?
       A. There is a polythene bag inside the case which is
turned over and the case is sealed with tape.

  Q. Sort of plastic tape?
       A. Yes.

  Q. Over the page: "28. Metal detector calibration checks",
have you seen their metal detectors?
       A. Yes, I have.

  Q. Have you seen them actually finding bits of this and that?
       A. Yes, I have seen them being tested.
