2 are, perhaps we can move on to something else.

4 MR. MORRIS: I do not see it makes a lot of difference whether
5 it is gas or electric. The important thing is the
6 temperature and the cooking of the patty. Just to refer to
7 yellow volume VII, page 193, which is I think Mr. Wignall's
8 tab D, it has the temperatures recommended for the snap
9 action and the electric. The electric temperature
10 recommended is 340 degrees Fahrenheit and the snap action
11 is 350.

13 MR. RAMPTON: My Lord, if one looks at Mr. Clark's statement and
14 his report of his visits to the restaurants, we find that
15 every single one of the grills which he had inspected had a
16 temperature at or above the recommended temperature limit.
17 So what is the basis for this cross-examination, I ask?

19 MR. MORRIS: Thanks for Mr. Rampton to raise it. If you look at
20 page 14 of Mr. Clark's statement, the Glasgow Fries Fryer
21 is under the recommended temperature, and the East Kilbride
22 McNuggets and Filet Fryer are both under the recommended
23 temperatures.

26 I am concentrating on at the moment is appendix 2.

31 appendix 2 because it is completely different equipment.
32 If the suggestion is that they may have had gas fired
33 plates at Friargate, Preston, I understand that. If the
34 suggestion is then that Preston might not have happened if
35 the minimum, the front of the plate had been 345 rather
36 than 325, I understand that. But I would like it put, so
37 I can understand what it is about.

39 MS. STEEL: All my questions were directed at was trying to
40 understand what this represents. It has been put in
41 evidence and I feel that we have a right to understand what
42 is the evidence being put in front of court because
43 otherwise how can we test it?

46 that stage so far as the grill area plates were concerned
47 some time ago.
