3 would not be across a walk way.

5 Q. So, if a fat filtering machine was not plugged in right
6 where it was standing, that would present a hazard?
7 A. As I said before, if an electrical cable was across a
8 walk way that would be a hazard and be of concern.

10 Q. In the wash-up area in stores, high powered jet sprays are
11 sometimes used, is that correct, or they are always used
12 for cleaning certain items?
13 A. If you are referring to the -- there is a spray
14 attached above the sink, rather similar to the arrangement
15 you have with the microphone that is dangling there, with a
16 spray on, and then you have a handle you can squeeze and
17 that will spray directly into the sink beneath you.

19 Q. All right. Some of the trays which have to be cleaned are
20 too large to fit inside the sinks, are they not, complete?
21 They have to be sort of put in at an angle?
22 A. I think all trays can fit inside the sink. I think
23 they were designed so they can. The largest object that
24 used to be cleaned in the sink was a smog hob. That fitted
25 adequately. I believe all equipment that I am familiar
26 with can fit in the sink, all portable equipment.

28 Q. But sinks are different sizes, are they, in that washing
29 area or are they always standard sizes?
30 A. I believe they are always standard sizes. It is a
31 standard kitchen, standard size, to fit the equipment you
32 have to wash in there.

34 Q. Are there sinks in the wash-up area? I mean, for example,
35 there are some sinks that are smaller than others -- it is
36 a daft question -- I cannot quote you directly from the
37 statement but -----

39 MR. JUSTICE BELL: What it seems to me you need to put was that
40 if the situation was that crew members were told to use the
41 high powered jet spray to clean the utensils and trays, and
42 told to use a sink which was the smallest sink and which
43 the trays, or some of them, did not fit right into, first
44 of all, would that concern you?
45 A. Not particularly concern, no. The situation of the
46 spray is above the larger sink. Adjacent to that is a sink
47 about half the size of that. The way that we wash things
48 at night is that you spray it in the big sink, then put it
49 in the next sink to rinse, and then the next one is the
50 sanitized solution. So, it goes through all three. The
51 washing takes place in the major, the first one.

53 MR. MORRIS: Would it concern you if water ended up on the floor
54 because of this operation?
55 A. Yes, water ending up on the floor could create a
56 hazard.

59 A. I think the hazard is the same, no matter how often it
