Day 089 - 15 Feb 95 - Page 70
A. It is not a Sun Valley document but, essentially, it is
showing raw meat inspection. Then the laboratory analysis
is in the second bit where they are showing light meat,
dark meat, skin, and then I think the third table is
unfinished product showing the microbiological results.

Q. Perhaps we can get more help, if you turn on -----

MR. JUSTICE BELL: The next one -----

MR. RAMPTON: The next one is jolly nearly as bad.

MR. JUSTICE BELL: It is slightly better on mine.

MR. RAMPTON: Can I ask you to turn on to what is page 73 in the
file? These all have different dates. The one we first
looked at was '89 and there is one from 1990. There are
some columnar tables. Then we come to another chart. This
I can read. This is dated 27th May 1993 or something like
that -- no, sorry, the 20th I think it is: "Further
processing operations division Corbit Block". What is
Corbit Block?
A. Corbit Block was the factory that produced chicken
products for McDonald's that was subsequently burnt down.

Q. So this does relate to McDonald's?
A. That is correct.

Q. It seems to contain -- well, you tell us what it contains?
Ignore the first part of it because that does not seem to
have -- what about the temperatures?
A. The first table is raw meat inspection. It shows the
number of bins received, whether there was any bone
contamination or foreign bodies, and the temperatures high
and low and average. We work to a maximum temperature of 4
degrees centigrade.

Q. I see. None of those on that chart anyway that is over the
maximum so far as I can tell. Is this a Sun Valley
document?
A. Yes, it is. Yes, that is correct.

Q. We key see from the fax at the top that it seems to come
from McDonald's Purchasing Department. Is this the sort of
document McDonald's would have?
A. Yes, they would keep these results on file and I think
they complete them as a result of data that is sent from
Sun Valley.

Q. Then the next table tells us that there is a laboratory
analysis of raw materials. What does it mean "supplier"
and then we have something like "skin sandwich"?
A. The GR refers to Grandstand Road which is the slaughter
plant. "Light" is light meat which is breast meat. "Skin"
is skin. Blaenavon is the other deboning plant that we
have and "incoming" just means the meat as it comes into
the factory.

Q. The table is headed "Bacteria Per Gramme" is it?
A. That is correct.
