quite a few restaurants to have the purchasing power, and
we can bring products from several parts of the world. At
this particular time, we are bringing product, raw
materials, from worldwide which were processed in Malaysia
and sent to Hong Kong. So, that would explain their
answer.

Q. Yes, I see. But the Australians would not use that method
of stunning?
A. No.

Q. You notice at the bottom of the page, it says: "Australian
livestock practices follow the directives of the Australian
meat and livestock corporation". Are you familiar with
those directives?
A. Yes, I am.

Q. Are they much different from what you have in the United
States?
A. No, they are not.

Q. Then Z is Austria. The only comment one might make about
this is that for the beef they appear to stun with
something called a "zolt" but I expect that is a misprint?
A. It is a bolt.

Q. Thank you. Can you put that file away now, please?
I would like to go back to this plan which I was hoping to
show you earlier. (Handed). Assume, if you will, that this
is a plan of a slaughtering facility for cattle in the
southwest of England, and notice that the process starts,
seems to start, on the left-hand side of the plan with
something called a "cattle race". What would you call a
"cattle race" in America?
A. A "cattle shoot".

Q. The cattle go up that race into a cattle stun pen. Can you
just look over the plan as a whole? Take a minute to do
so, then tell me when you have digested it.
A. You can ask your question now.

Q. Yes. Is there anything about this plan, looked at from
your experience worldwide, that strikes you as unusual or
unfamiliar or strange or anomalous?
A. The only thing that I see is that it is not only a beef
plant but it is also a chicken plant as well as a sheep
plant, so that there is a combined facility for several
species.

Q. Do you see any difficulties about that from the food
hygiene point of view?
A. No, no. They are separated, well separated. No, it is
just unusual to have a facility that have all those three
processing capabilities.

Q. I cannot find the chickens.
A. Oh, sorry, it says "boiler", I thought it said
"broiler" on top. You are right. It is only sheep.

Q. We can ignore the sheep then because McDonald's for the
