    13        livestock practices follow the directives of the Australian
    14        meat and livestock corporation".  Are you familiar with
    15        those directives?

    19        States?

    23        this is that for the beef they appear to stun with
    24        something called a "zolt" but I expect that is a misprint?

    28        I would like to go back to this plan which I was hoping to
    29        show you earlier. (Handed).  Assume, if you will, that this
    30        is a plan of a slaughtering facility for cattle in the
    31        southwest of England, and notice that the process starts,
    32        seems to start, on the left-hand side of the plan with
    33        something called a "cattle race".  What would you call a
    34        "cattle race" in America?
    35        A.  A "cattle shoot".

    37   Q.   The cattle go up that race into a cattle stun pen.  Can you
    38        just look over the plan as a whole?  Take a minute to do
    39        so, then tell me when you have digested it.

    42   Q.   Yes.  Is there anything about this plan, looked at from
    43        your experience worldwide, that strikes you as unusual or
    44        unfamiliar or strange or anomalous?
    45        A.  The only thing that I see is that it is not only a beef
    46        plant but it is also a chicken plant as well as a sheep
    47        plant, so that there is a combined facility for several
    48        species.

    50   Q.   Do you see any difficulties about that from the food 
    51        hygiene point of view? 
    52        A.  No, no.  They are separated, well separated.  No, it is 
    53        just unusual to have a facility that have all those three
    54        processing capabilities.

    57        A.  Oh, sorry, it says "boiler", I thought it said
    58        "broiler" on top.  You are right.  It is only sheep.
