Day 298 - 11 Nov 96 - Page 33
her view, the actual target that would benefit people's
health would be nearer the 15 to 30 percent maximum as
recommended by the World Health Organisation.

She went on to say that she would recommend going towards
the lower limit of 15 percent if you wanted to prevent
people dying from preventable diseases, including heart
disease and stroke and some types of cancer, which she
included in that bowel, breast and other cancers. Page 5,
line 55.

She went on to refer to the NACNE report, and actually
there are two references in the transcript on page 7, lines
26 and 29, where it says it was published in September
1993, and it should actually be September 1983. You may
remember that, anyway.

MR. JUSTICE BELL: Thank you.

MS. STEEL: The NACNE report had a summary of long-term
proposals derived from expert committees, which was 30
percent for total fat intake or fat intake... I think
these were proposals that they were aiming for. The fat
intake should be on average 30 percent of the total energy
intake, that saturated fatty acid intake should be on
average 10 percent of the total energy intake and that
average sucrose intake should be reduced to 20 kilograms
per head per year, and in calculating the sucrose content
of snacks it should be taken as distinct from total sucrose
in the diet and there should be a lower value of 10
kilograms per head per year for that. Fibre intake should
be increased on average to 30 grams from 20 grams per head
per day and that the increase should come mainly from
increased consumption of whole grain cereals, and an
increase in vegetable and fruit consumption should also be
advocated, and that it would be desirable if salt intake on
average fell by three grams per head per day. Protein
intake should not be altered but a greater proportion of
vegetable protein was appropriate.

The point about these recommendations is that this report
was published in 1983, so these were recommendations in
force throughout the 1980s, and so McDonald's, if they were
remotely interested, should have known about these
recommendations and could have done something a long time
before to improve their food. The NACNE report is all on
page 7 from about line 36 onwards.

In fact, Miss Brophy actually said these were the
recommendations throughout the '80s, that they were worked
with in order to promote healthy eating at every level,
that anybody promoting dietary advice at the time would
have looked at the NACNE guidelines to implement a healthy
diet. Page 8, line 1.

Going back to the figures which Miss Brophy had calculated,
or obtained, from the McDonald's good food nutrition guide,
she said that the sodium content of the McDonald's meal
combination number one, which you may remember was 1,488
milligrams, that is close to the maximum recommended by the
