     1        A.  It is not a Sun Valley document but, essentially, it is
     2        showing raw meat inspection.  Then the laboratory analysis
     3        is in the second bit where they are showing light meat,
     4        dark meat, skin, and then I think the third table is
     5        unfinished product showing the microbiological results.

    15   MR. RAMPTON:  Can I ask you to turn on to what is page 73 in the
    16        file?  These all have different dates.  The one we first
    17        looked at was '89 and there is one from 1990.  There are
    18        some columnar tables.  Then we come to another chart.  This
    19        I can read.  This is dated 27th May 1993 or something like
    20        that -- no, sorry, the 20th I think it is: "Further
    21        processing operations division Corbit Block".  What is
    22        Corbit Block?
    23        A.  Corbit Block was the factory that produced chicken
    24        products for McDonald's that was subsequently burnt down.

    26   Q.   So this does relate to McDonald's?
    27        A.  That is correct.

    29   Q.   It seems to contain -- well, you tell us what it contains?
    30        Ignore the first part of it because that does not seem to
    31        have -- what about the temperatures?
    32        A.  The first table is raw meat inspection.  It shows the
    33        number of bins received, whether there was any bone
    34        contamination or foreign bodies, and the temperatures high
    35        and low and average.  We work to a maximum temperature of 4
    36        degrees centigrade.

    38   Q.   I see.  None of those on that chart anyway that is over the
    39        maximum so far as I can tell.  Is this a Sun Valley
    40        document?
    41        A.  Yes, it is.  Yes, that is correct.

    43   Q.   We key see from the fax at the top that it seems to come
    44        from McDonald's Purchasing Department.  Is this the sort of
    45        document McDonald's would have?
    46        A.  Yes, they would keep these results on file and I think
    47        they complete them as a result of data that is sent from
    48        Sun Valley.

    50   Q.   Then the next table tells us that there is a laboratory 
    51        analysis of raw materials.  What does it mean "supplier" 
    52        and then we have something like "skin sandwich"? 
    53        A.  The GR refers to Grandstand Road which is the slaughter
    54        plant.  "Light" is light meat which is breast meat.  "Skin"
    55        is skin.  Blaenavon is the other deboning plant that we
    56        have and "incoming" just means the meat as it comes into
    57        the factory.

    59   Q.   The table is headed "Bacteria Per Gramme" is it?
    60        A.  That is correct.
