Day 095 - 02 Mar 95 - Page 63
to be used, No. 8 imported beef (fresh or frozen)."
I would like you to look at the document. Can you show his
Lordship first. Have you seen anything like that before?
A. Yes, I have.

Q. You have seen that before. Would you agree with me
perhaps, and everybody else in court I am sure will agree,
that looking at those two documents, whatever the date may
be, that they are not similar to the up-to-date modern
specifications?
A. Oh absolutely.

Q. Thank you. You still have pink IX there. Will you turn
backwards in the file, in other words towards the front,
please, to tab 2 where you should find a lot of McDonald's
food specifications?
A. Yes.

Q. This time, please, turn to page 17 which is numbered with a
stamp on the bottom.
A. Yes.

Q. The first thing I would like to draw your attention to is
this. Under the 75 per cent 95 per cent lean boneless beef
item No. 2 of the specification it says: "Must be
slaughtered and processed under USDA inspection." I think
I asked you earlier whether the inspector has an animal
welfare responsibility at the slaughterhouse?
A. That is correct.

Q. Turning over the page, please, and we are now on page 18,
notice that the original date of the specification was
November 1973 and that this is a July 1986 update or
revision. We get the same provision in respect of two
under "B" in respect of the minimum 50 per cent lean
boneless beef and the necessity to slaughter and process
under USDA inspection. Then under 5 it says: "Ingredients
absolutely not to be used, any foreign material" we do not
mean French or German material by that, do we? Then it
says "Imported beef" do you see that?
A. Yes, I do.

Q. Does that apply simply to the 50 per cent lean or does it
apply also to the 75/95 per cent?
A. It applies to beef. Beef is muscle meat that comes
from beef cattle, so it applies to both, to any type of
beef that we use.

Q. Thank you. Finally, Dr. Gomez Gonzalez, which means that
you can go home tomorrow, yellow 12, please.
A. Yes.

Q. Can you turn, please, to tab 16 in this file? You will
remember that these documents you told us represented the
results of enquiries you had employed throughout the world
about the different slaughtering practices or the
slaughtering practices in different countries throughout
the world?
A. That is correct.
