Day 098 - 07 Mar 95 - Page 54

  Q. If Mr. Morris was right in what he put to you, that a
normal day would be seven-and-a-half, would finish about 3,
       half past 3?
       A. Yes.

  Q. Some days (and you say it happens quite a lot) you go on
for another two or two-and-a-half hours?
       A. Yes.

  Q. I suppose, does that account for the difference between the
       600 and the 800?
       A. Certainly, yes.

  Q. On the 800 days you are slaughtering for more than
       seven-and-a-half hours?
       A. That would be right, yes.

  Q. But the seven-and-a-half hours is not the time you clock up
if you take out the breaks; it is the slaughtering day
       subject to carrying on?
       A. It is a person's normal working day. During that time
they will have two half hour breaks, OK, so
seven-and-a-half hours -- the person will be working from
7.00 in the morning until 3.30 on normal time. Afterwards
he will be working on over-time.

  Q. Jolly good. So that is eight-and-a-half hours out of which
two half hour breaks are taken?
       A. That is right.

  Q. Does the line stop for those half hours or do people take
       time off as and when?
       A. The line actually does not stop but different processes
along the line do, so the people doing the stunning,
sticking, etc. will go for a half an hour break, thus
leaving a gap in the line. When that gap reaches somebody
else, they will go for their break.

  Q. But that is how you get to your seven-and-half hours?
       A. Yes.

  Q. If you work on from 3.30 to 5.30 or 6.00, that is
       over-time, it is a nine-and-a-half or 10 hour day?
       A. That is right.

  Q. And you slaughter 800 cattle rather than 600, is that,
       essentially, it?
       A. That is about right, sir, yes.

MS. STEEL: But sometimes there might be breaks apart from those
two half hour ones, if say -----
       A. Yes, if they are working over, yes.

MR. MORRIS: What is the staff turnover rate approximately, do
you know, or how long do people usually on average
       stay -----

MR. RAMPTON: My Lord, I am not sure about this at all. I would
need to know the relevance of staff turnover rate at
