Day 269 - 25 Jun 96 - Page 75
Q. I mean, the most striking one, you will agree, and these
are mortality rates?
A. Yes.

Q. Is between France and the UK which is in the penultimate--
A. Or Greece and the UK?

Q. But I am interested in France and the UK for reasons which
will be apparent in a moment?
A. Or Denmark and the UK.

Q. But also the West Germans?
A. Yes.

Q. Were doing rather better than us too were they not?
A. Yes, they were indeed.

Q. Right. Now then, if you would not mind looking at the
middle table, C1 and this is "percentage of food energy
from fat", and that is all fat?
A. Yes.

Q. In various, and I can tell you the rest of that word is
'countries'?
A. Yes.

Q. And we see the Greeks have a higher energy intake from fat
than the Germans do, and the Germans higher than the
French?
A. Yes.

Q. And all of those, I would say, over 40 per cent?
A. Yes.

Q. Whereas we score just about on 40 per cent?
A. That is right.

Q. Do you see that?
A. Yes.

Q. Now, would you agree if you compare that central column
with the blocks on the left you would be disposed to say,
Oh, well, it must be that the French and the Germans, like
the Greeks, get most of their fat from relatively benign
vegetable oils. You would be inclined to say that, would
you not?
A. I might be, yes. I would be careful about this
because I have a suspicion to where you are going.

Q. I will tell you exactly.

MR. JUSTICE BELL: Do not be suspicious, but if you have a
reservation about what might be the obvious conclusion then
please express it.
A. I mean, I do have reservations, not reservations but I
do have an explanation for this figure which would appear
to be at odds with some of the things we have been talking
about.

MR. RAMPTON: Would you--
