Day 204 - 15 Jan 96 - Page 30
I think, also, those comments, if you read to the next
paragraph, are also shortly before the Clacton restaurant
was opening, so it may have been it was under-crewed in so
far as we were also expected to hire some crew for a new
restaurant opening, or at least be more than amply crewed
in order we would have enough people to crew the new
restaurant.

Q. It does not say that, does it?
A. It does in the second paragraph.

Q. It does not say that your under crewing was due to having
to provide people for the Clacton store?
A. No. All I am saying is that it may have been
Martin Holloway thinking ahead.

Q. Well, it says "you are under-crewed", not "you will be
under-crewed".

If we move on to page 19, there is an Annual Review in
September 1987; and on the third page of that, which is
page 21 of the bundle, it says: "Get more crew on board.
Do not run short." Do you accept that is another
indication that ---
A. Sorry, which page?

Q. -- you did not have enough crew?

MR. JUSTICE BELL: Page 19.

MS. STEEL: It is on page 21. The review starts on page 19,
but the part I am referring to is on page 21.
A. It does not necessarily mean I was short at the time,
no. It says "do not run short"; it does not say that I was
short.

Q. Yes, but it says get more crew on board. So you are saying
you do not accept that that was an indication?
A. No, I do not, no. That could mean, you know, due to
natural turnover you need to replace the crew that are
already leaving. So it does not actually stipulate that we
were short of crew. It says "do not run short". If we
were short, it would have said something along the lines of
"do something about the situation you are in".

Q. If you look at the objectives on the same page, number 2
is: "Increase crew levels so as not to run tight"?
A. Yes.

Q. So, basically, you were running along, cutting it as fine
as you could, and you could not have -----
A. No, it says -----

Q. You know, if there had been any emergencies -----

MR. RAMPTON: My Lord, I have to intervene. Those are
objectives as a supervisor, I think, because Mr. Mark Davis
had become a supervisor on 1st August. The final quarter
cannot relate to his time as a Manager, with respect.
