of the page has copyright "McDonald's System Inc. 1978",
has these words in the middle of the page "Ingredients
absolutely not to be used, number 8 imported beef", do you
see that?
A. Yes.

Q. When this document came to you from, you think, Keystone
Foods, how did you cope with that paragraph 8?
A. Well, I knew this was a document written for the United
States of America, not for England.

Q. At this date 1978 or indeed 1979, were you conscious
whether or not there was any issue about McDonald's use of
or not use of beef from rainforest land or recently
deforested rainforest land?
A. No.

Q. Does that mean that you did not ----
A. I did not know.

Q. You were not aware of it?
A. I was not aware of it.

Q. Can you turn back, please, to the previous tab which should
be 4. It should start with a letter dated 11th March 1983
from McDonald's, the previous tab of the same file. Have
you got, Mr. Walker, a letter dated 11th March 1987?
A. To Mr. Mayes.

Q. Is it signed by you?
A. Yes, it is.

Q. At that date can you remember, roughly speaking, what

Q. Yes, with 28 per cent in the hands of yourself?
A. Yes.

Q. This is a letter, and you will be relieved to hear I am not
going to ask you to go all through these letters by any
means, I refer you to them so one can get an idea of the
chronology. Do you understand?
A. Yes.

Q. Before I do that, can you tell us in just in a very few
sentences what the balance sheet beef is or was?
A. The Commission in Brussels looks at the availability of
meat throughout the whole community for the next year, they
calculate requirements, and if the calculation shows that
they are short of meat in the forthcoming year they allow a
tonnage of meat to balance. They will allow a tonnage of
meat to come in from outside the community, and it is
referred to as "balance sheet meat".

Q. How is balance sheet beef distinguished from what is
