14 A. I do not recall asking them that, no.

17 A. No. Unless, if I can refer to the notes I made at the
18 time, I might have made a note of it?

21 A. I just made a note that the checks were done hourly but
22 not when they were first started.

24 Q. OK. In the third paragraph on page 3 of the statement, you
25 have said: "Quality control procedures were in place
26 throughout the process operation to ensure a quality
27 product free from contamination". What do you mean by
28 "free from contamination"?
29 A. Well, this is to try to ensure there is no unnecessary
30 contamination from the gut contents of the bird.

32 Q. But is it actually possible to have a situation where it is
33 completely free of contamination?
34 A. No, not that I know of.

36 Q. It is not? On page 4 of the statement in the final
37 paragraph under "overall impression", I do not know whether
38 you just want to read that again? You have made mention of
39 records being maintained at every stage of the process, and
40 I wanted to know whether you saw those records and what
41 those records were of.
42 A. There were records from the time that the birds came in
43 and at the HACCP stages throughout. I did see the HACCP
44 records.

47 all, did you actually see the records or was this what you
48 were told?
49 A. No, I did see the HACCP records, sir.

53 A. Yes, these were A4 sheets with columns which were
54 filled in. I cannot remember the details on the sheets, to
55 be honest. I did not make a note on that.
