Day 037 - 14 Oct 94 - Page 39

MR. MORRIS: You have said in your statement: "I would
consider that spraying a sugar solution onto chips could
indeed result in a product which might be termed
       'synthetic'".
       A. Yes, in general terms I think it could be. In literal
terms, I do not imagine anybody else has devised a way of
synthesising a chip, apart from a computer chip perhaps.

  Q. Later down you quote from ----?
       A. Can I just clarify that? I would juxtapose that term
"synthetic" with the term "natural" as two opposites and
the quote from Mr. Kroc obviously makes it clear that the
chip is not a natural chip.

  Q. Do you want to refer us to this quote?
       A. I thought I had already done so.

  Q. You will have to refer us to where the quote comes from.
       A. It comes from the autobiography of the person who took
McDonald's from virtually nothing to the worldwide
       business it is today.

MR. JUSTICE BELL: Before we bother to look at it, what was
Mr. Kroc saying the french fry was made from if it was not
       made from a fresh potato?
       A. It was processed.

  Q. In what way?
       A. It had the sugar coating.

  Q. It was actually made from a potato which had come out of
       the ground at some stage?
       A. Oh, yes.

  Q. It was just relating to spraying on, was it?
       A. It was relating to the processing.

MR. MORRIS: I think we have to go to that quote if you are
going to rely on it because the context of it might be
       important.  I think it was to do with the freezing of it;
a completely different process was used from what had been
       traditionally used.
       A. I have not given a page reference, I am afraid, so it
may take some time to find that.

  Q. It is from his autobiography "Grinding It Out".

MR. JUSTICE BELL: If you want to produce it, then do, but
otherwise you might just say, "Read out to us the bit you
       say matters".

MR. MORRIS: It is page 144 from the autobiography of Ray Kroc,
the founder of McDonald's. I believe he was president or
whatever until he died, whenever that was, in the 80s,
1984 apparently. Do you have a copy of that?
       A. I do not in front of me, no.

  Q. Do you want to read out the bit you think is important?
(Handed). Read it to yourself first.
