Day 105 - 16 Mar 95 - Page 43
weights, whether it be a note to talk to the cleaners, they
will put it on a scrap piece of paper, perhaps, or they may
fill the form in in some circumstances.

MR. MORRIS: So if we look at page 16?
A. Yes.

Q. This is one of the ones where every box has been ticked,
even ones that had a heading?
A. Yes.

Q. In fact, the first heading had not been ticked but the rest
had, and then on page 21 the whole thing. Is this
something that might be filled in at the end of the day as
well?
A. In fact, this has been slightly altered since to add
some more information but, in the case of boning room, the
supervisor does keep the forms in his department wrapped in
a piece of plastic. He is saying there that during the day
he has checked his product for those things. There is no
specific time limit because he checks everything. It is up
to him to make sure that the quarters that he receives are
free of the contaminants and other non-specification items
on that list. So, it would be quite feasible for him to
complete that at the end of the day.

Q. Just to say he has checked those?
A. Yes.

Q. The fact that he has found them, or has not found them is
not relevant; the question is whether he has checked?
A. Yes, if he has found defects which he considers need
action, for example, a constant succession of badly dressed
quarters which have a lot of blood clots, or there is
significant faecal contamination, he would note that fact.
I must say that would be very unusual, but he is saying
that he has checked all his intake and verifying that.

Q. So it is not an indication there were not any blood clots,
or faecal contamination, or rust specks?
A. No, it is an indication he has checked and found
nothing untoward.

MR. JUSTICE BELL: There is a box for defects noted underneath
the table of visible contaminants. What you are saying is
the tick shows he has checked?
A. Yes.

Q. There is obviously more room than for just a tick in the
box where the tick appears?
A. Yes.

Q. There is space there if one wanted to write something in
and there is a defects noted space as well?
A. Yes.

Q. An action taken notice?
A. Indeed.

MR. MORRIS: They would only do that if it was above the normal
