     2        A.  Yes, many things about this have changed since, in
     3        terms of this audit.  This is not the current one, but that
     4        is how it was done and it is broadly how it is done now.

     6   Q.   On the third page of this under Communications, section 5,
     7        "memos filed correctly", is that a particular type of memo
     8        or does that refer to all memos that the store receives?
     9        A.  It is really a discretionary thing because I think if
    10        you try to file all the memos they received that would be a
    11        very large number.  So, it is really ones that are likely
    12        to be needed for reference, not ones that are just
    13        temporary, so -- and what "correctly" means it means really
    14        according to their system, so if it is by subject or by
    15        date or whatever.

    17   Q.   So there is no set method?
    18        A.  Not for filing memos, no, there is not.  Normally, that
    19        is something you can leave management to deal with.

    21   Q.   The rap sessions and crew meetings, how long are the stores
    22        expected to keep the records of rap sessions and crew
    23        meetings?
    24        A.  I do not think we have ever actually said how long they
    25        must keep them.  Certainly, you would normally expect them
    26        to keep at least two back so that you would expect to be
    27        able to look back over at least a year.  Sometimes you find
    28        them further back but again that varies.

    30   Q.   Can I just ask, you said that this audit, at least I think
    31        you said, could be of use in finding out about complaints
    32        made by crew?
    33        A.  I have not said that.

    35   Q.   OK.  In that case I misunderstood what you were saying.  If
    36        you did say that, you did not mean that then?
    37        A.  No.

    42   MR. MORRIS:  On the front page of that document it has about the
    43        labour turnover at the store.  Why is that on the front
    44        page?
    45        A.  Do you mean as opposed to the back page or what do you
    46        mean?

    48   Q.   Why is it so prominent?  It seems to be something separate
    49        from all the other information.
    50        A.  I think it is just some background information about 
    51        the restaurant saying what their current turnover was at 
    52        the time when the audit was done to bring it to people's 
    53        attention.

    56        turnover down; is that the position?
    57        A.  To keep the turnover down?
