Day 111 - 30 Mar 95 - Page 49
whichever it is, the counts are very high. If it was one
of those polyvinyl cutting boards, then one of the reasons
could be to the poor results could be the fact that they
were worn out and should have been changed earlier.

This would definitely be my guesses as to why these counts
are so bad.

Q. So, in the grading system they have used here, at what
grade would you start to take action? You said here you
would definitely take action?
A. Perhaps it would be helpful to mention that, for
example, when Local Authority's Environmental Health
Officers monitor food premises in restaurants, for example,
when they do, they usually do TVC monitoring only at
premises where they are worried -- which they consider high
risk premises, that have either had a bad record in the
past or had poor visible hygiene, then they would monitor
weekly.

They would accept good levels of hygiene would be
considered in premises where you get As. These would,
obviously, still be acceptable but they would definitely
prompt any Environmental Health Officer to give a note.

MR. JUSTICE BELL: Try to stick to -- if an illustration is
really useful, I do not want to deter you from it -- these
readings as they relate, assuming for the moment that they
are genuine, to Alec Jarrett, what they tell you.
A. As I said before, they -----

Q. You said they are very high and I have your point about the
trimtables.
A. I would definitely start monitoring the cleaning more.
I would think that acceptable levels at a raw material
outfit like Jarretts, A, B and C would be acceptable
levels. I would be quite happy, after first monitoring the
situation, finding out the background level there and then
if the background level continuously stayed at D and E,
I would want to push it up to C, definitely.

Q. Do A, B, C, D and E mean anything to you particularly or
are you looking next to, for instance, trimtable in the
boning hall, sample D? Are you looking at grade E or are
you looking at 7.4 x 10 to the power of 4? What are you
looking at when you -----
A. Well, I am basically looking at the figure, but it is
fairly easy to establish from these results, and this
grading is commonly used; it is not something that -----

Q. That is why I asked the question. You might ask Ms. Hovi
to tell us about the grading system, Mr. Morris, if it is
one (as she has just said) she is familiar with.

MR. MORRIS: Yes. So this grading system you have seen before
and it is one that is ---
A. As far as ---

Q. -- very common?
A. --- I can discern from these figures, it is common. It
