Day 161 - 24 Jul 95 - Page 41

fluctuate, one week they worked an extra 15 hours or
something, they do not get paid an extra 15 hours; they
have basically get a standard rate that they get paid; is
       that the situation?
       A. Yes, that is correct.

  Q. (Pause) We are just checking something. Well, I will ask
it before we see the final result of it. Michael checking
the 53 missing buns, that is the kind of job that a Manager
would have to do at the end of a shift, to account for
       discrepancies in the waste?
       A. That is correct.

  Q. Are there other examples of -- the bun situation is not
particularly unusual, is it, that there will be some buns
       missing?
       A. No, not that I know of.

(Video film continued to be played)

MR. MORRIS: Can I ask another question: what does a Manager
do if they cannot account for -- say he cannot find where
those missing buns come from; what kind of inquiries does
he have to make to find out where it went wrong, kind of
       thing?
       A. Normally, if a Manager cannot find the missing bun,
they leave a message for the morning manager, or breakfast
Manager, on the diary, to double check for the breakfast
       Manager.

  Q. So someone else would have to double check?
       A. Just to double check, yes.

  Q. What happens if they cannot find out what happened to these
       missing buns, for example?
       A. It happens; that is normal.

  Q. It is normal that ---
       A. It is ------

  Q. -- the discrepancy -----
       A. It is a discrepancy, maybe it is not counted in the
waste properly or delivery has been missed out and counted,
it has not been delivered. We take some of these things
into consideration. So, that is normal. We do not find
anything that is (inaudible). We just learn from it for
the future, to check the delivery properly or to count the
       waste accurately.

  MR. MORRIS: Thank you.

(Video film continued to be played)

MR. MORRIS: Can you stop it? Mr. Preston says: "People want
to be part of a winner, want to be part of something
successful. Hard work does not frighten youth today, not
at all. They want to be part of something that is
victorious, something they can see as the shining light."

In your experience, do you agree with what he says?
