     4        A.  They then go into holding chillers, the dispatch
     5        holding chillers, which, as we have seen, tend to be at a
     6        lower temperature.  They tend to be round about one, minus
     7        one, and that continues the process even, and certainly
     8        holds the prepared meat at the correct temperature.

    10   Q.   Just so as to finish off, I would like now, if I may, to
    11        deal with Ms. Hovi's allegations which she does not assert
    12        constitute breaches of the regulations, but which she
    13        asserts, as I have understood it, I think, constitute bad
    14        practice and a danger to human health.  My Lord, that is
    15        paragraph 6 of Ms. Hovi's statement.
    16        (To the witness):  Starting, Mr. Bennett, at the top of
    17        page 16 of your statement she says this:  "Alec Jarrett has
    18        no laboratory at the premises, neither does it use the
    19        services of any outside laboratory".  I do not any longer
    20        need your comment on that.  She says:  "There is no
    21        sampling programme for the detection of E.coli 0157: H2" --
    22        is it H2 or is it H7?

    26        statement.

    31        confused or does that just look like a typing error?
    32        A.  Not at this stage.  Microbiologists move so quickly in
    33        discovering new strains that I could not put my hand on my
    34        heart, but in the present context, no.

    37        than the confusion of another organism.

    42        outside laboratory in use, she says:  "There is no sampling

    44        further alleges is a breach of the McKey's specification.
