2 Q. When you say "very infrequently", what, once for a crew
3 member in a year or how frequent?
4 A. Most crew members would never do double shifts. There
5 were odd crew members who either request to do double
6 shifts or wanted to do double shifts.

8 Q. Is there any value to the restaurant in having people doing
9 double shifts?
10 A. Not really. The main problem with it is that once you
11 get to, say, you started at 12.00 and finished at 2.00 in
12 the morning, once you get towards the end of that shift,
13 then you are very unproductive and it is not an ideal shift
14 to give anyone or to have anyone do within your restaurant.

16 Q. Do you think there is any safety risk in having people
17 working maybe 16 or 17 hours on the trot?
18 A. There possibly could be, yes -- not necessarily, but
19 possibly.

21 Q. While we are on safety, Mr. Davis: Colchester, do you
22 think it was a dangerous place to work?
23 A. Certainly not.

25 Q. We have got the Accident Book. I am not going to ask you
26 to look at it. There was a girl called Vicky Golding --
27 I cannot remember the year, but she is in the Accident Book
28 -- who burnt her arms rather badly when I think she fell
29 on a grill?
30 A. Yes, I cannot remember that particular incident
31 although, given the severity of the accident, I really --
32 I probably should remember it but I cannot remember it.

34 Q. During your time at Colchester do you recall any other
35 incident of similar severity?
36 A. No.

38 Q. Have you ever been injured in a restaurant?
39 A. I banged my head quite severely on a safe, coming out
40 of a safe once and cut the top of my head. That is the
41 only time.

43 Q. Have you worked on the fry station, the grills and so on
44 and so forth yourself?
45 A. Frequently.

47 Q. What about hustle, Mr. Davis, what do you understand by

49 A. Moving efficiently with co-ordination.
