work out a system. Maybe we should go through the
       documents.

If you could get the Jarretts' file, we should get the
map. Before we go to specific documents, on the subject of
sterilisation, is it important that all the items used on
the line are sterilised that come in contact with the meat,
or are used to cut the meat?
       A. In answer to the second part of your question, any
knife which comes into contact with meat ought to be
sterlised within the meaning of the word "sterlised" that
       we discussed yesterday.

  Q. So that would include the equipment for the actual
slaughter as well, would it? For example, the pithing rod
       and the sticking?
       A. Yes, the pithing rod is sterlised and the knife that is
used to stick the animal, as it is described, also.

  Q. That is important?
       A. Needs to be sterlised.

  Q. That is important to happen?
       A. It is important to keep the knife clean and sterlised
in the context I have said, yes.

  Q. Do you have the map?
       A. Yes.

  Q. If we look along we have in the middle of the gut
       removal ----
       A. Yes.

  Q. -- and the inspection is some way past that?
       A. Yes, the inspection of the gut, are you referring to?

  Q. This is where the meat inspector will inspect the carcass,
       after the gut removal, yes?

MR. JUSTICE BELL: There is "inspection" written just to the
left as you look at the plan, just to the left of "sterile
       apron wash", do you see?
       A. Yes, there is an inspector.

  Q. Is that what you are referring to?

MR. MORRIS: You have seen the line working, have you not?
       A. Yes.

  Q. By the way, this is Ms. Hovi. After the gut is removed,
that is one of the places where the high pressure, or
so-called high pressure spray is used, yes?
       A. He will have a hose pipe there to wash off blood or
       stomach contents.

  MR. JUSTICE BELL: Where?
       A. At the gut removal point it says "chute to gut table
and gut removal on a platform".

MR. MORRIS: Then it moves along to the inspection after the
