11 criticisms of the temperature in the boning room? This is

13 A. Well, I would not want to modify my judgment on the
14 temperatures in the boning room because those were based on
15 measurements that I personally made. So there is no way
16 I can modify that. They stand as they are. I measured
17 them. That is what they were.

44 first bullet point under 7, you have written (and this is
45 supposed to be a breach of the regulations): "The
46 slaughterhouse and the cutting premises operated with a
47 considerable overcapacity causing the meat to be cut and
48 dispatched at temperatures higher than required, that is to
49 say, at 7 degrees centigrade", and I will leave the last
50 bit for a moment because I am coming back to that. You
51 have no evidence at all to suggest that the meat was being
52 dispatched at temperatures higher than 7 degrees, had you?
53 A. Yes, I do have. I measured carcasses temperatures.
54 I am referring to the carcasses that were being loaded from
55 there.

58 nothing to do with carcasses being dispatched, had it?
59 When you made this statement you made it for this case, did
