Day 086 - 09 Feb 95 - Page 15

filtering machine would be in the front of the fryer and
the lead would go from the fryer to the machine, so it
would not be across a walk way.

  Q. So, if a fat filtering machine was not plugged in right
where it was standing, that would present a hazard?
       A. As I said before, if an electrical cable was across a
walk way that would be a hazard and be of concern.

  Q. In the wash-up area in stores, high powered jet sprays are
sometimes used, is that correct, or they are always used
       for cleaning certain items?
       A. If you are referring to the -- there is a spray
attached above the sink, rather similar to the arrangement
you have with the microphone that is dangling there, with a
spray on, and then you have a handle you can squeeze and
that will spray directly into the sink beneath you.

  Q. All right. Some of the trays which have to be cleaned are
too large to fit inside the sinks, are they not, complete?
They have to be sort of put in at an angle?
       A. I think all trays can fit inside the sink. I think
they were designed so they can. The largest object that
used to be cleaned in the sink was a smog hob. That fitted
adequately. I believe all equipment that I am familiar
with can fit in the sink, all portable equipment.

  Q. But sinks are different sizes, are they, in that washing
area or are they always standard sizes?
       A. I believe they are always standard sizes. It is a
standard kitchen, standard size, to fit the equipment you
       have to wash in there.

  Q. Are there sinks in the wash-up area? I mean, for example,
there are some sinks that are smaller than others -- it is
a daft question -- I cannot quote you directly from the
       statement but -----

MR. JUSTICE BELL: What it seems to me you need to put was that
if the situation was that crew members were told to use the
high powered jet spray to clean the utensils and trays, and
told to use a sink which was the smallest sink and which
the trays, or some of them, did not fit right into, first
of all, would that concern you?
       A. Not particularly concern, no. The situation of the
spray is above the larger sink. Adjacent to that is a sink
about half the size of that. The way that we wash things
at night is that you spray it in the big sink, then put it
in the next sink to rinse, and then the next one is the
sanitized solution. So, it goes through all three. The
washing takes place in the major, the first one.

MR. MORRIS: Would it concern you if water ended up on the floor
       because of this operation?
       A. Yes, water ending up on the floor could create a
       hazard.

MR. JUSTICE BELL: Even more so if it was a regular occurrence?
       A. I think the hazard is the same, no matter how often it
happens. So, it would have concerned me more if it
