     2        A.  It is usually the shift Manager that carries out the
     3        travel path through the restaurant.  What we have done now
     4        is the managers, when they go through their one-day basic
     5        health and safety course, part of that is a video that we
     6        have had made, a hazard spotting video, to point out to
     7        them the sort of things they should be looking for to do
     8        with safety on their travel path.
     9
    10   Q.   Is it only managers that do it?
    11        A.  If somebody was running the kitchen they might sort of
    12        wander around the kitchen, but the kitchens are usually so
    13        small that you can see everything that is going on from
    14        there.  In my experience when I was a store manager, the
    15        word "travel path" was referred to when you did your tour
    16        of the whole store.  Now, obviously, having been out of
    17        Operations for quite a while, that terminology may have
    18        changed but that is my understanding of it.

    22        A.  Did you say 57 O?

    40        A.  They have not got numbers on them so if you tell me --

    45        A.  It is all right, yes, I have found it, sir.

    50   Q.   So management marked these type of OCLs as well? 
    51        A.  I have to admit, I have never seen the floor control 
    52        ones before.  It is obviously something that has been 
    53        developed since I came out of Operations.  In fact, it has
    54        "January '94" written on it, so it must be something
    55        recent.

    57   Q.   On floor control there is no marking done on whether
    58        whoever is doing the travel path is making checks on
    59        whether the crew are working in a safe way.  Do you know
    60        why they are not marked on that?
