3 MR. JUSTICE BELL: On some of these, we have seen a time, we
4 have seen the date, which is the day after the shifts which
5 are on the printout, and then we see a time, 0041 or
6 something.
7 A. The clock card reports?

9 Q. That is when you, or whoever the person running the close
10 is, is closing it down, is it?
11 A. Yes, on the adjustment audit reports.

13 Q. Yes.
14 A. Yes. The time at the end at the side will show what
15 time it was made. They were mostly made at night.

17 Q. But that is because the person doing it is sitting there
18 doing "paperwork", while the rest of the shift are getting
19 on with cleaning up, is it?
20 A. Yes. You tend to have to do the cashing up, and then
21 the inventory, and then you would close down the system.
22 But, you know, the closing of the system will probably be
23 the last thing you did. You would have to input the
24 inventory, I think, before you could close it down.

26 That might have changed when we got a -- we had what was
27 called an ISP. I think that came in in late 1993 or 1994,
28 and then you could do the inventory afterwards. But before
29 that point, everything had to be done before you closed the
30 system down, I think.

32 But you could not get in the system without a code and you
33 could not leave the store without closing it, so I needed
34 somebody else's code to do it; and I did ask -- I asked
35 Alan Charlesworth when he was there if I could have my own
36 code, and he said he would sort it out, because there was
37 supposedly something in the pipeline to give shift running
38 Floor Managers a code, but it never materialised. Until
39 I left, I still did not have a code of my own.

41 MR. MORRIS: Moving on, reading out from the notes:
42 "4. 'Freezer' stickers were on occasion put on
43 out-of-date buns to be able to use them and avoid the 'use
44 by' deadline, especially in 1991/1992."
45 A. Yes. I would say that is when the store was at its
46 most dodgy -- if the word can be used. If the Manager who
47 was on the day shift noticed that buns were going out of
48 date, if he had not done the order and they were not going
49 to run out, perhaps he would throw them away. But if he
50 done the order, it was more than likely he was going to try
51 and cover it up. I would not say it happened all the time,
52 or not even half the time, but it did happen a few times.
53 I have seen it happen before -- knowing full well that
54 there had not been any buns in the freezer, because I had
55 done the inventory the night before, and there were freezer
56 buns the next day.

59 two occasions in 1991-ish and 1993-ish sewage came up
60 through the drain in the back room."
