     3   MR. JUSTICE BELL: What do they mean by "manufactured meat
     4        dishes"?
     5        A.   Anything other than carcass meat.

     7   Q.   Give me an example of a manufactured meat dish which might
     8        incorporate less meat and more vegetables, pulses or
     9        potatoes, because that is what it appears to say?
    10        A.   I do not know if the proposal is it should be
    11        incorporated in the same dish or not. I think the proposal
    12        is that we do not eat enough pulses, serials, potatoes and
    13        vegetables and that we should simply eat more of these and
    14        less of carcass meat.  Manufactured meat would be something
    15        like a meat pattie, a sausage or a meat pie.

    17   MS. STEEL:   We were on sodium.  On page 136 ----
    18        A.  On that last question, my Lord, I suspect that if the
    19        Members of the Committee who made this proposal were asked
    20        to produce an example of such a dish, they would find it
    21        very difficult to do so.  I mean, this is something that
    22        the food industry would have to grapple with.

    24   MR. JUSTICE BELL:   Yes.  It may be they are suggesting pork
    25        pies with less pork and some vegetables in instead.

    30   MS. STEEL:   At paragraph 6.6 is Dietary Sodium and Potassium.

    34   MS. STEEL:  It is page 136.  The first paragraph, the first
    35        couple of sentences is basically what you have said in your
    36        statement, I think.

    38        Then in 6.6.2:

    40        "Numerous studies have shown that people with blood
    41        pressure in the range labelled mild to moderate
    42        hypertension, restriction of common salt in the diet
    43        reduced blood pressure, in some cases removing the need for
    44        anti-hypertensive medication."  Would you with that?
    45        A.   Yes.  That seems to work particularly with older
    46        people who are likely to be on hypertensive medication.

    48   Q.   In 6.6.3 this is talking about the Insalt Study in 1988, I
    49        think.  Five lines up from the bottom, it says:

    51        "An age related rise in blood pressure is usually in 
    52        populations such as the UK with moderately high sodium 
    53        intakes, but virtually absent amongst those with very low
    54        sodium diets."

    56        You would with that, would you?
    57        A.   Yes as long as one appreciates the sort of populations
    58        sort or the diet that people would be consuming and the
    59        sort of lifestyle that people would have who have extremely
    60        low sodium diets.
