     2        A.  It will be even at 350.  Throughout the day, if you
     3        wanted to check the temperature of the grill surface,
     4        you would put it in a particular area and you would expect
     5        it at 350.

     7   Q.   Rightly or wrongly, if I give you an example, suppose the
     8        time was 10 minutes after turning it on -- just suppose --
     9        heat is set so the dial comes up to 350?
    10        A.  Yes.

    12   Q.   10 minutes after turn on, you test it; if you have got
    13        these temperatures in the appropriate positions then by the
    14        time you start cooking, whenever that is, later (because
    15        for all I know you have a provision to turn it on at least
    16        half an hour before you start cooking or whatever), then
    17        you can be confident, is this what you are saying ---
    18        A.  Yes.

    20   Q.   -- I am not asking whether it is right, but this is what
    21        you are saying, then it will be 350 throughout the day's
    22        cooking?
    23        A.  Yes, on this calibration, what you would alter if it
    24        was not would be the air shutter at the front, to change
    25        the flow of gas.  You would not change the 350 setting.

    27   Q.   No.  But you would change the air shutter so that your
    28        temperatures were the appropriate ones across the plate?
    29        A.  Yes.

    31   Q.   Is that right?  That is what you are saying?
    32        A.  Yes, that is my recollection of this procedure three
    33        years ago, yes.

    35   Q.   I mean, if you are not confident about any part of that you
    36        should say so.
    37        A.  I am confident about the procedure of setting the air
    38        flows and that that is why you have that variation.
    39        I believe there is a different procedure -- throughout the
    40        day you would just put the grill surface probe on to ensure
    41        that it was 350.

    43   MS. STEEL:  How long after switching it on would you do this
    44        test?
    45        A.  I think it is something like about 45 minutes that you
    46        would do this particular air flow test.

    49        A.  So the grill is getting up to temperature.  You switch
    50        it on, it is cold, and then at particular timing, it will 
    51        be fully functional.  This gas flow check had to be done at 
    52        a particular moment in time.

    54   Q.   How long after that would you start cooking the burgers?
    55        A.  Quite shortly after that.

    57   Q.   More or less straightaway, as long as the check was OK
    58        according to that?
    59        A.  Once a grill was up to temperature you could start
    60        cooking.
