11 Mr. Kenny, is a number of different things that have been
12 observed or not observed. One of the columns says
13 "Combined bone chips/cartilage". Do you see?
14 A. Yes.

16 Q. Can you tell us a little about the manufacturing process?
17 Is the chicken McSandwich made in a different way from the
18 McNuggets?
19 A. Yes, it is. The raw meat -- the first table here
20 refers to the raw meat section. That is similar for both
21 the sandwich and the Nugget on the breast meat side.

23 Q. Is this after deboning that this inspection takes place?
24 A. That is right, yes.

26 Q. So that is why they have a column for finding bones and
27 cartilages?
28 A. Yes. The deboning is done in a discrete factory. When
29 it is passed across to the further processing factory, they
30 then inspect the meat.

32 Q. And they found -- "GR" is what?
33 A. "GR is" short for Grandstand Road which is the facility
34 at Hereford in Sun Valley.

36 Q. Then they have light, dark skin, and they found, it
37 appears, four bits of chipped bone or cartilage in the dark
38 meat --- which is the thigh meat, is it not?
39 A. That is right, yes.

41 Q. -- on this occasion. What would you expect them to do
42 about that?
43 A. They would reinspect the product. Under the category
44 of over half an inch bone, any bones over a half an inch,
45 there is an automatic rejection of that and that will then
46 go back to Grandstand Road.

48 Q. That is what "over half bone" and "under half bone" means,
49 is it?
50 A. Yes, so anything found in the over half bone column
51 would automatically mean that the meat is rejected back for
52 resorting.

54 Q. That particular system is out of order at the moment and it
55 has been replaced by the French facility, I think, has it
56 not?
57 A. That is right, yes.
