Day 112 - 31 Mar 95 - Page 33

       A. One of the requirements definitely was the boot wash at
the entrance of the, as discussed yesterday, at the
entrance to the abattoir. I did not -- I say, I did not,
       well, I made a request ------

MR. MORRIS: I am sorry, that came out as "food wash", it is
       "boot wash".

THE WITNESS: Boot wash. I stated that that was definitely one
area where we could start. I also made requirements to
separating the dirty side of the abattoir by preparing the
doors that were uncloseable at the time I started working
there. Those are the main requirements that I made at the
       time.

All the other requirements, as far as I am concerned, we
negotiated in good co-operation with Bob and Stuart
Jarrett, and they actually, just before I finished working
at Jarretts, they submitted a plan for improvements in the
plant but in the near future, and that was very much
       involved.

MR. RAMPTON: Anything else, any other improvements, that you
demanded or required apart from the boot wash and the
       mending of a door?
       A. Well, there was a long list of -----

  Q. There was, was there?
       A. Yes, there was a long list which was discussed with the
Jarretts in good co-operation and they submitted to me a
plan for improvements. They told me that they had -- this
plan had been in the workings already before I even came to
the plant and had, particularly according to the words of
Bob Jarrett, it had nothing to do with the requirements
I had stated, but it very much followed the line of what
I saw was wrong at the plant. I was very satisfied with it
and I communicated this satisfaction to Bob Jarrett.

  Q. The letter goes on -- it may be you can explain why what
you have just said is inconsistent with what appears here
-- "... problems have been caused by both the time-scale
you have demanded and the manner in which the demands have
been made". I will take those separately, Ms. Hovi. Were
you laying down the law about how long they should take to
       make your improvements?
       A. No, I did not. The only improvement where I was laying
down the law was the BSE certification of animals. I said
very clearly the day before I was dismissed that I cannot
carry on signing export certificates if I do not get the
relevant documents. That was the only issue where I put
       down any time-scales.

  Q. What do you mean "time scale"? What has that got to do
with time-scales? It is not an improvement which has a
time-scale, is it? It is a practice you thought ought to
       cease?
       A. Yes, exactly.

  Q. That is not the same thing at all. Did you lay down
time-scales for the various improvements to the premises
