Day 103 - 14 Mar 95 - Page 49

case, then the man who is the backup killer just would not
be able to cope and you would not be bleeding the birds
properly. To say that this stork cutter was designed to
cut the back of the neck, quite frankly, is just not
       accurate.

MR. JUSTICE BELL: It is no use just cutting a vein because the
blood is not under pressure there?
       A. No.

  Q. You have to cut an artery somewhere?
       A. Yes, otherwise the birds will not bleed.

  Q. Yes.
       A. This just cannot be right.

  Q. It may be absolute simplicity to you, but what are choice
of arteries in the neck of the bird, so that blood will be
       discharged under pressure?
       A. There are two -- there is a carotid artery on either
side. There is a jugular vein on either side.

  Q. The jugular vein is not under pressure either, it is a
       vein?
       A. No, the only other artery is the vertebral artery at
the back, but that is a very much smaller artery.

  Q. That is supplying oxygenated blood to the cord?
       A. Yes, that is right.

  Q. So if the bird is going to be bled, unless it is going to
take a very long time indeed, one of the carotid arteries
       has to be cut?
       A. Has to be cut.

  Q. That is what you say?
       A. Yes, that is correct.

MS. STEEL: You called in Dr. Gregory as an expert to give you
       advice on slaughter?
       A. Yes.

  Q. Do you really think that he does not know what he is
       talking about?
       A. I am just saying that this particular statement cannot
make sense because otherwise how could the birds possibly
bleed out if you have not cut the artery?

  Q. I think perhaps we should get the orange bundle out. It
should be down there at the bottom. The orange bundle with
Dr. Gregory's references on it. If you could turn to
tab B, please? What is the external carotid artery?
       A. That is the major vessel on the side of the neck.
There is an internal carotid artery but that is very deep
       to the actual neck muscle.

MR. JUSTICE BELL: So there is an external on each side, is
       there?
       A. Yes, and then there is an internal right inside.
