Day 297 - 08 Nov 96 - Page 27
whether I have a reference for that actually. Also that
there is a risk from daily meat consumption. That was day
33, page 30. That study did not find a statistical
association between fat and breast cancer, but, as Dr.
Barnard pointed out, the range of fat intake was very
narrow so it might not be expected to find an association,
and also because of the length of time that breast cancer
took to develop. That was day 33, page 31.

Dr. Barnard said it was widely accepted that a high fat
diet encourages obesity and that obesity encourages breast
cancer. Day 33, page 32.

And he said that there was a causal link between a high fat
and sodium diet and heart disease and between a high fat
diet and obesity and hypertension. Actually I am not sure,
I think that is supposed to be sodium and hypertension.
Day 33, page 33.

MR. JUSTICE BELL: You think it should be sodium, do you?

MS. STEEL: I think that the ----

MR. JUSTICE BELL: Well, I will have a look at it.

MS. STEEL: The former -- well, the high fat and obesity and
sodium and hypertension. I mean, I don't know whether it
was specifically with Dr. Barnard, but I do remember that
sodium and hypertension were -----

MR. JUSTICE BELL: You mentioned that earlier.

MS. STEEL: Yes. In any event, we have an admission about that
from McDonald's.

MR. JUSTICE BELL: You mentioned that in relation to Professor
Keene.

MS. STEEL: Right. There was other evidence as well, I think.
Dr. Barnard also identified the link between fat leading to
obesity, leading to diabetes, which would be a causative
role. Day 33, page 40.

He said that there was also a body of evidence which
suggests that fat intake alone can aggravate diabetes.
That was day 33, page 41.

Although Dr. Barnard accepted that there was a minority who
were sceptical of the association between fat intake and
cancer, he considered that it would be dangerous and
irresponsible to ignore the overwhelming information about
the subject and that virtually every American research
organisation had already issued recommendations based on
the evidence. That was day 33, page 48.

Dr. Barnard agreed that the age of menarche played a role
in breast cancer and that in turn the age of menarche was
influenced by the preceding diet. That was day 33, page
58.
