     1        is never a smell problem in our plant but that is part of
     2        all organoleptic testing -- and also to look at the
     3        texture, to look at the fatness, and then finally one cooks
     4        it as well and sees what the eating quality is, the
     5        tenderness, the succulence etc. etc.  On the other hand, we
     6        also use it for a means of testing of strains of pigs, you
     7        know, so that we can actually do research work in
     8        establishing which is the best commercial pig for us to get
     9        on to the retailer shelf.

    11   Q.   These people in the white hats sitting on the plastic
    12        chairs, are they your people?
    13        A.  The testing is done in two forms: Every day we
    14        organoleptic test with management, trained management, but
    15        three days a week, mostly sometimes two, but mostly three
    16        days a week, we have people who come in from the town, our
    17        local town, with commercial age range of 18 or whatever up
    18        to old age pensioners also to test the meat and they are
    19        fully trained taste panelists, and our managers are, that
    20        have actually been trained by the Meat Research Institute
    21        and MLC, the Meat and Livestock Commission.

    23   Q.   Is that raw meat as well as cooked?
    24        A.  Yes.

    26   Q.   Now, if you can turn on a bit and come to these tables
    27        which we got to before lunch, to do with -- I will not say
    28        what they are to do with.
    29             First of all, we see the turnover of the companies
    30        between them that they were apparently faxed down from your
    31        company this morning, 13th February, at quarter to 10.  Are
    32        these your documents, are these are your company's
    33        documents?
    34        A.  Yes, these are our own documents.  Also they are shared
    35        with MLC.  They also have the documentation because we
    36        worked together on this project.

    38   Q.   One notices that the species said to be concerned in this
    39        exercise was sheep?
    40        A.  Yes.

    42   Q.   How long is it since you have had any sheep in your
    43        factory?
    44        A.  We last killed a sheep on -- I can tell you
    45        exactly -- November 23rd, 1984.

    47   Q.   Yes.  We notice that the date on these documents is 2nd
    48        January 1993.  So, why does it say "Sheep"?
    49        A.  It is, I apologise for the computer at Milton Keynes,
    50        also part of work so that it should be anonymous as well in 
    51        describing pigs as sheep also.

    53   Q.   So that from that answer, do we assume that in fact this
    54        species concerned was pigs?
    55        A.  It is pigs.

    58        result of?
    59        A.  These documents are the work of what, as I have
