     2        unsatisfactory and next time make sure it is better.  But
     3        it is not dangerous.  It is just unsatisfactory.

     5   Q.   Well, if it is not dangerous why is it unsatisfactory?
     6        A.  Because McDonald's want the best standard available.

     8   Q.   But they are prepared to take meat that is below the best
     9        standard?
    10        A.  I am trying very hard -----

    12   MR. JUSTICE BELL:  I think you should take that up with someone
    13        from McDonald's.  That is a comment to make in due course.
    14        Mr. Walker has given his understanding of it.  I know he
    15        has got ketchup in his veins, but he is still McKey when it
    16        comes down to it.  He has a particularly big customer in
    17        the form of McDonald's and that is what they set out.

    19   MS. STEEL:  Are McDonald's aware that you are supplying beef to
    20        them that sometimes is of what they would consider to be an
    21        unsatisfactory standard?
    22        A.  McDonald's are aware of the bacteriological
    23        specifications in our specification because they emanated
    24        from McDonald's.

    26   Q.   Yes, and are they aware that they are supplied with beef
    27        that is what they would classify as "unsatisfactory" from
    28        time to time?
    29        A.  They would be aware that occasionally there would be
    30        samples of beef which had a bacteriological gramme count
    31        which was not grade 1.  Think of it that you can pass any
    32        test ----

    34   Q.   But it is grade 3?
    35        A.  --- you can pass any test or any exam and you can have
    36        grade 1, grade 2, grade 3, but you can still pass the exam.

    38   Q.   But this is grade 3?
    39        A.  Grade 3, but it still passes the exam.  It has taken me
    40        a long time to think that one out to explain it to you.

    42   MR. JUSTICE BELL:  I wonder if we have gone as far as we can.
    43        The one thing which might might be unsatisfactory on your
    44        account of things is to call it "unsatisfactory"?
