company and the importance of good communication in the
organisation. Its application had resulted in a conflict
between operational requirements and safety where the need
to get the product to the customer and to maximise sales in
competition with other stores had taken precedence." How
       does hustle ---
       A. What reference is that, please, Mr. Morris? What page
       is it?

  Q. -- precedence over safety, over employees' safety.
       A. I am sorry.

MR. JUSTICE BELL: All you are being asked for is the page so
that Mr. Purslow can look at it himself.

MR. MORRIS: 829, I am sorry.
       A. Sorry.

  Q. There is a whole section on hustle. We will not go into
       detail.

MR. JUSTICE BELL: What I would like you to put is again a
specific example. You may be coming to it because it may
be in the middle of that page, but if I might suggest to
you, I can see what Mr. Purslow means by "pouring", by his
answer so far as pouring is concerned. If a grill top is
made to take, let us just say, 12 patties at a time, unless
you are positively suggesting that someone is put to
operate two grills at the same time because of
under-staffing, I can understand Mr. Purslow's answer to
       that.

So, if you have any other examples, and you may be coming
to one with hustle, looking at the middle of the page you
are referring to, I think you should put them so that I can
understand what you are getting at, so that if you put an
argument to me after all the evidence, that if you do such
and such more quickly there is a greater risk, we will have
actually had some evidence on it.

MR. MORRIS: Just to clarify what the question is on the pouring
of the oil, for example, if you pour it at speed so that it
comes out at a greater amount at any one time, there is a
possibility it is going to slop over the edge of the bin
and splash on to people's shoes. So that is an occasion
where if you are working under pressure you may be more
careless than if you have plenty of time?
       A. I say again -----

  Q. You would accept that, would you?
       A. No, no. I say again that it takes no longer to pour
oil in a proper method than to pry to pour it quickly by
your words because it does not work like that. You have a
container and you empty it. Now, unless you are actually
going to tip it upside-down on the floor, you are not going
to empty it any quicker. You have to pour it at a rate
into a bin. I am sorry.

  Q. And splashes over the side is because you are under
pressure to get the job ------
