Day 098 - 07 Mar 95 - Page 53

       afternoon?
       A. It is seven-and-half hours working time, so it is half
past 3 is the actual standard stopping time. Very often
they work beyond that, 4.00 or 5 o'clock.

MR. JUSTICE BELL: You really want to know when the last ones go
       in, do you not?

MR. MORRIS: Yes, the last ones would go in round about half 3,
       4.00, 4.30, something like that.

MR. JUSTICE BELL: You say when they go?
       A. Yes, it varies very much, sir, depending on how busy we
are, if you like. Sometimes they will be slaughtering
until 6 o'clock in the evening. It would not be unusual to
       be slaughtering that late.

  Q. What, actually going into the race until 6 o'clock in the
       evening?
       A. OK, 5.30 to 6.00, yes. It is difficult to say.

MR. MORRIS: As you said, the general cut off time would be
generally about 3.30 with exceptions of longer ---
       A. Yes, but ---

  Q. -- extension?
       A. -- longer days do happen quite a lot when we are busy,
       yes.

  Q. So on the days, though, when you do stop in your set time
of 3.30, cattle arriving after that time would be kept
       overnight?
       A. Yes.

MS. STEEL: Sorry, I just wanted to clarify something. You said
that there they would be slaughter for about seven-and-half
hours a day or the actual slaughtering process would be
       about seven-and-a-half hours a day?
       A. Yes.

  Q. So, if they are running until 6 o'clock, are they having
breaks throughout the day, I do not know, if there are not
enough cows to slaughter, or something like that?
       A. Yes, they will have breaks throughout the day.

  Q. So it is seven-and-a-half hours working time or
       slaughtering time?
       A. No, sorry, seven-and-a-half hours is the basic working
hours for a basic working day. If they are busy and the
people are working over-time, then they will go beyond that
       seven-and-a-half hours.

  Q. But, generally speaking, are they working non-stop?
       A. Yes.

  Q. From 7 o'clock non-stop for seven-and-a-half hours?

MR. JUSTICE BELL: No, can we try it another way? Slaughtering
starts about the same time every day?
       A. Yes.
