5 MR. MORRIS: Yes. Regarding the store, 194, in Clacton referred
6 to by John Atherton, your superior, just concentrating on
7 that store, he said: "There does not seem to be a will to
8 serve top quality product. The basics, such as time cards,
9 holding time usage, care of raw products, and enough
10 lettuce on Macs or not in place. Both stores have been
11 caught abusing shelf life." What action did you take
12 against Clacton store to bring back the recognition of the
13 importance of time cards, holding time usage and care of
14 raw products?
15 A. Well, I mean, this was not a call to take a specific
16 one-off piece of action. Mike Buckley had his goals and
17 objectives and we would have conducted full fields, our own
18 internal full fields, not -- just to sort of for us to
19 evaluate the restaurant and to get the standards in place
20 pretty much as we would have in Colchester. It is not
21 saying, you know, I need to take specific action against an
22 individual. You need to build a culture in the restaurants
23 where they understand and appreciate what is required and
24 why it is required, so I was taking the same action there
25 as I was in Colchester in relation to quality and .....

28 performance review on 1st June 1990. Is this something
29 that you found in your -- it is about five pages on,
