     1   Q.   Yes, point 5, hustle is used, here we have an inappropriate

     3        A.  I am sorry -- oh, this is general.  This is a general
     4        term.

     6   Q.   Yes.  Hustle is used.  If you go over to page 2, "hustle is
     7        used" again as a point 5 for McChicken Sandwich and again
     8        on page 3.  Some of them have got "hustle" on them.
     9        A.  I can understand with sandwiches and so because you are
    10        actually having to build the product and, obviously, you
    11        want that to be done quickly and speedily.  It also
    12        includes things like "Uniform is neat and clean", if I may
    13        say so, which again has very little to do with the actual
    14        cooking.

    16   Q.   If we look at fries which are page 12, again another deep
    17        oil?
    18        A.  Yes.

    20   Q.   We have there "hustle is always used"?
    21        A.  Sure.  Fries are a constant thing that you have,
    22        presumably, got to keep turning over quickly and speedily.
    23        I do not see any problem with that.

    25   Q.   For scrambled eggs we also have "hustle is always used".
    26        A.  I say again that the only criticism of hustle, as far
    27        as the HSE people are concerned -- very right -- is that
    28        people were running and sliding in the delivery area, in
    29        the service area.

    31   Q.   The point is, is it not, Mr. Purslow, that hustle culture
    32        is what is being generated by McDonald's, whether they are
    33        on the fries or they are carrying something or whether they
    34        are on the till, it is the hustle culture that is being
    35        generated?
    36        A.  I would not argue with that.  It is the fast-food
    37        industry.  That is the whole intent that people come in.
    38        They are served quickly with what they want, and that is
    39        the whole ethos of what they do.

    41   Q.   The reality is that the hustle culture is something which,
    42        as the Health and Safety Executive has said, is
    43        compromising employees' safety in order to benefit customer
    44        service?
    45        A.  He has stated that, again it was misinterpreted in
    46        several stores that he looked at, and he quoted that
    47        particular instance of people sliding in the customer
    48        service area.

    50   Q.   OK, if we move on from that, you can put that file away 
    51        now.  Thank you very much.

    60        A.  Yes.
