Day 166 - 28 Sep 95 - Page 45

whatever or 200 people the majority are part-time.

  Q. Right. Do you know what percentage that was?
       A. No.

  Q. I think we have heard that the national average is about 80
per cent part-time to 20 per cent full-time; would you be
       ---
       A. I could not comment.

  Q. -- greater -- well, do you know whether you were typical of
the UK or whether you had a greater percentage of
       part-timers?
       A. Definitely in the summer period because of the nature
of that restaurant being a lot busier than other stores, it
would have a necessity for more part-time people.

  Q. There were not many people who stayed there for a long
       time?

MR. JUSTICE BELL: Do not look at your statement because that
does not help you about that. What is your recollection,
if you have one about that?
       A. In terms of, what, people leaving?

  Q. Yes, people staying or coming and going?
       A. We would lose a few people, yes, but there would also
be a lot of people there that had been there for quite some
time - one, two, three, four, five years.

MS. STEEL: What do you mean by -- how many people have been
there five years; do you know?
       A. Not off-hand, no.

  Q. What do you mean by, then, in your statement that you did
not have a large number of permanent staff?
       A. That is full-time staff. You have part-time people as
well in the -- that make up the payroll. You are going to
get people joining you for the seasons, especially, as
       I said earlier, the summer.

  Q. Right. A lot of people will just be taken on for the
summer period and then they would leave at the end of that?
       A. Yes.

  Q. Basically, you did not want them any more because it was
not -- the store was not busy any more?
       A. It is not a question of not wanting them any more.

  Q. There was not any work for them?
       A. That is, perhaps, one way of saying it, but, on the
other hand, it is -- they are hired for a summer period and
many would stay. It is for the benefit ----

  Q. So when they were taken on they were not necessarily told
then that this is just for the summer period?
       A. Yes, you are going to have people who are going to join
you for that specific reason, who want to come and work for
you for a short period of time.
