you would have the counter and dining area and that would
       make up the whole award.

  Q. So it would be two different ones?
       A. Each is subdivided. You need two OCLs completed on the
same area, passed on the same area. There will be maybe
two or three sections to that class.

  Q. There is not an OCL in health and safety, is there?
       A. There is not, no.

  Q. There is one in hygiene though?
       A. There is a hygiene OCL, yes.

  Q. How long has there been a hygiene OCL? It is a more recent
       one, is it not?
       A. I think it is probably more recent than the grill one.
It has been around for a while.

  Q. A couple of years?
       A. Possibly a bit longer.

  Q. A bit longer?
       A. Yes.

  Q. Why is there not one in health and safety?
       A. I think the health and safety ones are covered on the
back of each test. I currently have scrambled eggs still
open which is sheet 11. Flip over the page you will see on
every OCL you get two health and safety questions. In this
instance what safety equipment must be worn when filtering
shortening and what three things must be used to wash your
hands thoroughly. Our feeling on this is that health and
safety should be part of everything you do and is not
separate or away from it. I think on hygiene we would
probably go the same way. We do not have the specific
hygiene OCL, but we incorporate it into everything we do.
We incorporate it into the OCL. We do not suddenly stop
talking hygiene. We are talking about the procedures of
hygiene, health and safety altogether. Be by law we have
to do the fire health and safety test when people start in
the company. I think that covers the test part of that
area, and why the hygiene OCL came out for.

MR. JUSTICE BELL: My soft-centred omelettes would fail
       hopelessly, would they?
       A. I am afraid so, yes. We would probably go out of
business very quickly if we were selling your soft-centred
       omelettes.

MS. STEEL: Most of the health and safety ones appear to be
       about fires?
       A. I am just going through what you would do if one of the
compactor guards was missing. Filtering, lift shaft,
I think from the ones I can see there does not seem to be a
particular direction towards fire. Obviously, fire is a
hazard and people can get burnt by fire happening just as
they can get burnt from filtering or any other incident.
It is important that our crew members and everyone in the
restaurant is equally aware of fire hazards as they are of
