Day 150 - 07 Jul 95 - Page 71

the Thursday night, there are still those who just work
Saturdays and did not work during the evenings.

MR. JUSTICE BELL: I thought there was some formal category you
       were -----
       A. Oh, no, sorry.

MR. MORRIS: You said the Leicester store had a payroll of about
       100 people ---
       A. Yes.

  Q. -- when you were Manager there?
       A. Yes.

  Q. Is that fairly typical for this country? That was a very
high volume restaurant, was it not, you said?
       A. It was one of the more higher volume restaurants that I
had worked in, and certainly my experience was only limited
to 12 months in McDonald's, so it was a very busy
       restaurant.

  Q. But that is a higher level of staffing than the average
       restaurant, is it not, 100?
       A. Well, certainly come -- a city centre restaurant coming
up to Christmas with late night trading then ---

  Q. Never mind -----
       A. -- it is certainly a busy -- it would need a
       restaurant -----

MR. JUSTICE BELL: Why do you not just put it in a positive way
because he may not be following. I think what Mr. Morris
is saying, Leicester city centre was a busy restaurant ---
       A. Right.

  Q. -- so it needed a payroll of about 100, some 70 per cent of
       which were part-timers.
       A. Right.

  Q. If you were in a smaller town where the restaurant was less
busy, something like 60 or 70 might be perfectly normal on
       the payroll?
       A. On the payroll, certainly, yes.

MR. MORRIS: I might be wrong but McDonald's has 600 stores in
the country with something like 30,000 staff?
       A. Right, I do not know the numbers.

  Q. Something like that. We are talking about something like
       50 to 60 -----

MR. JUSTICE BELL: The 600 includes the franchisees, does it
not, which are growing now? I think there are 123. So
there are about something like 480 owned Company
       stores ---
       A. Right.

  Q. -- it works out at about 60 per restaurant, something of
that kind, if you are taking a broad average. I am only
saying that so we have some figures to work with. Someone
