3 Q. This statement is intended, so far as you can possibly
4 achieve it, to paint the blackest possible picture of
5 Jarrett that is imaginable, is it not? That is the whole
6 point of it?
7 A. No. Everything in this statement is correct, as far as
8 I am concerned.

10 Q. But you have included everything you thought you could
11 think of which would make Jarretts out to be a bunch of
12 dangerous cowboys, in effect; that is really what you are
13 trying to do, is it not?
14 A. Well, you said yourself yesterday that I had not
15 included everything, and I definitely told to the
16 Defendants that should I make a full statement, should
17 I include everything? And they advised me not to because
18 the statement would have been very long if I had included
19 all the evidence that I gave yesterday on the state of the
20 matters at Jarretts.

22 Q. They advised you not to make a supplementary statement
23 including all that material?
24 A. I was not advised on the possibility of making that.

27 Q. Were they trying to take us by surprise in court? Is that
28 what I they were trying to do, the Defendants?
29 A. I have no idea.

31 MR. MORRIS: Maybe you can ask the Defendants and we will tell
32 you.

34 MR. JUSTICE BELL: Yes, but do not worry about that.

36 MR. RAMPTON: We want to hear it from an independent witness,
37 I think.

39 MR. MORRIS: If it must be known, we do not ask our witnesses to
40 do any more than they can reasonably do unpaid in their own
41 spare time voluntarily for us. Basically, as far as we
42 could see, this was a substantial statement which put all
43 the allegations down that were relevant, as far as we could
44 see. The details of the allegations would obviously come
45 out under examination and cross-examination, as with every
46 single other witness that has appeared in this court since
47 this case started.

49 MR. RAMPTON (To the witness): Paragraph 8, Ms. Hovi, was,
50 therefore, intended, was it, as a criticism of Jarretts?
51 A. Yes, to a certain extent for my part.

53 Q. Why?
54 A. Because I find it, in my professional opinion, I think
55 that it is very important for the plant management and the
56 OVS to co-operate in their work. In the end, that is the
57 only way to assure that the work at the abattoir is carried
58 out in the manner that we wish it to be done to safeguard
59 public health.
