2 Q. Right. The next one above that is "good"; is that right?
3 A. Gosh, "satisfactory" maybe, then "good", "excellent",
4 "outstanding" were the different bands when I was the
5 supervisor, but I mean I am going from memory, so I could
6 be corrected certainly.

8 Q. In the performance guidelines in the handbook, it says
9 "unsatisfactory", "needs improvement", "good",
10 "excellent", "outstanding", so the next one up from "needs
11 improvement" is "good". At that level, would they be
12 likely to be promoted to training squad?
13 A. As I have mentioned, some of these prerequisites would
14 be their job performance, so I would say that that would
15 maybe pass first base. Subsequent to that, I think, as we
16 are dealing with anybody who is training an individual, as
17 a manager, I would be looking for someone who is good in
18 the personal skills, putting people at their ease, being
19 able to explain the job in a clear concise manner to
20 someone who is brand new to it. I would certainly say
21 first base is at least being good and proficient in their
22 own area.

24 Q. On training, when crew pass an OCL on a particular station,
25 does that mean they can be left without -- there is a kind
26 of what is called a "buddy system" or something like that,
27 is that right, where you have a buddy when you first get
28 taken on; is that correct?

30 MR. JUSTICE BELL: I do not know what they call it. That is what
31 they call it in America apparently?
32 A. In terms of their initial training?

34 MS. STEEL: Yes?
35 A. One of the things we look to do, especially in Clacton,
36 I think as I mentioned earlier, was to hire one or two and
37 then put them with somebody from the crew at least more
38 experienced. I do not think it would necessarily be with
39 the training squad, but certainly with someone who would
40 have some experience in that job, who had certainly passed
41 the OCL perhaps themselves.

43 Q. Who had certainly past it, sorry?
44 A. Yes, meaning if you were starting today and working
45 with me, then certainly length of experience and working in
46 the restaurant would help, but certainly I think the bare
47 minimum would be that I had at least passed the OCL myself
48 so that there was comfort from my manager that I could at
49 least explain it properly.

51 Q. When someone passes the OCL, that means they are competent
52 to carry out whatever it is that has to be done on that
53 particular station?
54 A. I think again the system we had when I was a supervisor
55 and a manager was I think we required two OCLs on the same
56 station and part of a unit test, so that, for example, on
57 the sort of buns and dressings and the preparation, there
58 would be an OCL on buns and on dressings, and I think you
59 would require two of those in conjunction with a unit test.
