Day 032 - 06 Oct 94 - Page 43

in between those two figures would be the appropriate
       amount?
       A. Well, the World Health Organisation had a temerity to
put forward a figure which it saw as a ceiling.

MR. MORRIS: Sorry, would that figure by the World Health
Organisation be something that would be a fairly
       responsible figure?

MR. JUSTICE BELL: You do not need to keeping asking that
       question.

THE WITNESS: Yes. All I wish to show is that this quantity of
sodium reaches -- gets towards more than half and perhaps
two-thirds of the sorts of levels of salt that would be
recommended as a maximum at least by the World Health
       Organisation. So again -----

MR. RAMPTON: I am sorry, my Lord. I am not understanding.
Could the witness say now -- it would help in the future
-- whether he means salt or whether he means sodium?

  MR. JUSTICE BELL: Yes.
       A. I am using the two interchangeably in a sense as a
proportion both are true. For sodium it reaches, if it is
       1488 -----

MR. JUSTICE BELL: Stick to sodium because that is what we have
got given to us on the meal plan.
       A. In which case the World Health Organisation figure for
sodium would be 2,400. This, therefore, reaches
       approximately two-thirds of that level.

MS. STEEL: You said you have done this exercise for all eight
of the meals, did you; is that right?
       A. Yes.

  Q. Were they by and large the same? I do not know whether we
need to go into them all or not.
       A. I would say that the generality of the statement that
they are high in fat compared with several of their
       essential nutrients would apply.

MR. JUSTICE BELL: If I might suggest, you do not need to go
into them all with the witness. He has given the
structure of his point. When you come to make submissions
at the end of the case, if you want to point at another
meal plan, you can ask me to look at it and deal with sums
       on that.

MS. STEEL: OK. (To the witness): Would it be fair to say
that the more unbalanced your meal, the harder it is to
       balance your diet?
       A. It is an awkward to answer that in a direct sense but
       I would say -----

MR. JUSTICE BELL: That is bound to follow as night follows
       day, is it not?

MS. STEEL: It is only .....
