     1   Q.   "Because their effect in humans is likely to occur early
              in life, it is difficult to determine this
     2        epidemiologically, particularly in populations where most
              people tend to consume such meats.  We examined the
     3        possible effect of meat preparation on the risk of colon
              cancer and, unlike an earlier report, our data do not show
     4        a positive association between the extent of meat
              preparation (rare, medium, or well done) and large bowel
     5        cancer. ...  The meat preparation question seems to be one
              that almost everyone can answer accurately as to their
     6        current preferences, but it is more difficult to answer
              for the first 25 years of one's life.  It has been
     7        suggested that the real problem may not be the meat itself
              but rather the gravy prepared from the meat processing
     8        because this substance would contain most of the
              heterocyclic amines.  We are not certain how this could be
     9        studied epidemiologically with current questionnaires".
 
    10        The question I have about that is, again it is a similar
              one to many I have asked before, do we deduce from that
    11        that if we eat our meat dry, having cooked it so that
              much, as it were, emanated from it in the process of
    12        cooking and did not eat the gravy, we could be sure we
              would not get large bowel cancer?
    13        A.  No, one cannot draw any such conclusion from this
              particular article.

         Q.   Now I think, as far as I am concerned, unless there is any
    15        particular part of these references that his Lordship
              would like to ask you about, you can put this file away,
    16        Dr. Arnott.  I want to turn to another document very
              briefly, which is this thing what I call the grey book.
    17        (Handed).  Do you have it?
              A.  Yes.

         Q.   Can you turn to chapter 3 on page 39, which is about fat.
    19        This is the product of a consideration by -- I expect you
              are familiar with it?

         MR. JUSTICE BELL:  Are you familiar with it?
    21        A.  Yes, I am.
 
    22   MR. RAMPTON:  I am sorry.  I should have asked that -- by
              panels appointed by the government to look at what are
    23        called dietary reference values for the sake of the health
              of the nation.  Is that how you understand it?
    24        A.  Indeed, yes.
 
    25   Q.   Chapter 3 on page 39 is called "Fat" and section 3 -- five
              of that chapter is headed "Cancer" on page 49.  Do you 
    26        have that? 
              A.  Yes.

         Q.   I do not want to read out the whole of this thing because
    28        it is going to be repetitive.  I would like you to read to
              yourself, please, the whole of that section down to and
    29        stopping at 3.5.5., the end of it, on page 52.  Please
              tell me when you have done it.
